Be Charitable Without Spending MoneyMany people equate charity to � nancial dona-

tions. But individuals can be charitable with their time as well.

According to Charity Navigator, a nonpro� t organization that monitors charities, Americans gave more than $290 billion to charity in 2010. � irty-� ve percent of all donations went to reli-gious organizations. Much of these contributions can be attributed to people giving to their local place of worship. Donations toward educational services and programs were the second most common types of donations.

Although charitable giving through monetary donations are important, men and women can donate more than just money. Here are some ways to do just that.

* Donate hair. � ere are many di� erent charities that collect hair for individuals undergoing cancer treatments that resulted in hair loss. � ese chari-ties collect hair of lengths between 8 to 12 inches

and turn the locks into wigs for the needy. * Donate your stu� . Before tossing unused

items into the trash, assess these items and deter-mine if they’re still useful. � ere are many places that will accept noncash donations, be it cloth-ing, electronics, children’s toys, etc. For example, half-way homes that house abused women and children who have le� dangerous situations can typically make good use of noncash donations and accept them willingly.

* Donate blood. Blood banks are o� en in short supply. Blood supplies typically diminish during natural disasters or storms and need donors are needed to help replenish supplies. Type O blood is the universal blood type and can be transferred to anyone. � ose with Type O negative blood are really in demand because their blood donations are vital for accident victims and babies needing transfusions. Only about 7 percent of the popula-tion has Type O negative blood, according to the

American Red Cross.* Give your time. Many di� erent organizations

are understa� ed and can always use the helping hands of volunteers. Check with organizations in your area to see if any need some extra help. Also check with a son or daughter’s school. Some schools can use volunteers in the library or other special curriculum classrooms where sta� ng has been reduced because of budget cuts.

* O� er free services. Professionals, such as ac-countants, attorneys, teachers, and tutors can do-nate their services to others, especially those who are unable to a� ord them in an unstable economy.

* Raise awareness. You can be the mouthpiece for an organization or special agenda. Either spread the word door-to-door, dra� letters or make public speeches.

� ere are many bene� ts to making � nancial do-nations. But donating time, services or belongings are additional ways to make a di� erence.

love. Once the shopping rush is over, the time to wrap all of those great � nds and treasures has come.

Although some people are gi� -wrap gurus, there are many others who feel that their wrapping skills are lacking. Regardless, anyone can create delight-ful wrapped gi� s with a little know-how.

Prepare� e � rst step to wrapping is to have all of the

supplies in one place. � ere are some people who have actually dedicated small rooms as gi� -wrap stations. While you don’t have to go this far, � nd a large table and keep your tape, tags, paper, ribbon, scissor, pen, and other accessories nearby.

Also, sort out the gi� s according to recipient and have any gi� receipts handy to wrap up with the gi� .

Wrap at a time when there are no distractions

and you can devote your attention to the task at hand, like a� er children have gone to bed or dur-ing the day when no one is home.

Paper or Bags?When purchasing wrapping paper, it may be

tempting to skimp on the quality of the paper to save money. However, a thicker, higher qual-ity paper will make wrapping go more smoothly. � at’s because it will be less likely to tear on boxes or when you’re rolling out and cutting it.

� icker paper means you’ll also be able to achieve more intricate folds and better creas-ing around boxes. It also may be more forgivable around oddly shaped items.

Gi� bags are the go-to wrapping medium when you’re short on time or have items that are not easily wrapped with paper. Because they come in a variety of sizes -- and even giant plastic bags to contain large gi� s -- they are o� en moreconvenient.

Other Tips� ere are di� erent tips that can help with

wrapping.* Buy neutral-patterned wrapping paper that coor-

dinates with other papers. � is way if you run out of one type of paper you can stagger other pieces and make a collage of papers so there’s no waste.

* Use ribbon to dress up a gi� and direct the eye away from any imperfections.

* Keep a stack of paper scraps and use it instead of tissue paper to � ll in gi� bags.

*Keep scissors sharp for clean cuts.* Pack smaller items or oddly shaped things into a

di� erent container that is easier to wrap.* Roll up clothing and place into a paper towel

tube to turn the wrapping into a candy caneshaped gi� .

Practice o� en makes perfect when it comes to wrapping gi� s. Having the right paper, a few decora-tive supplies and some patience can ensure that gi� s look festive this year.

Impressive holiday entertaining with Atlantic salmon

With the holiday season approach-ing again, our thoughts turn to

entertaining friends and family over mouth-watering food and a bit of the bubbly. And while in hindsight we of-ten remember the best of the season -- the good cheer, relaxed atmosphere and delighted taste buds -- we too o� en forget the stress and prepara-tion that come before a holiday party at home.

Many hosts decide it’s just not worth it -- preparing for a party by shopping, cooking and decorating comes atop many other priorities this time of the year, like shopping for gi� s, attending holiday events and visiting with friends and family.

� e secret to success can be found in having a plan and serving impres-sive dishes that are deceptively simple to prepare. High-impact dishes fea-turing fresh local Atlantic salmon are a great way to limit your time in the kitchen yet still delight your guests with exciting dishes.

“What you really want is a dish that appears complex, but that you can put together quite quickly in the kitchen,” says Holly Clegg, author of the popular trim&TERRIFIC cook-book series. “� e less time you spend in the kitchen, the better, and using fresh Atlantic salmon from the Gulf of Maine is sure to be as visually ap-pealing as it is delightful to taste.”

Planning ahead can mean doing your cleaning and decorating in the days leading up to your event. You

can also purchase a lot of the neces-sary groceries ahead of time. True North salmon is known to be top-tier fresh, so you don’t need to wait to purchase it at the last minute.

“Atlantic salmon is really the simple choice,” says Clegg. “When you pur-chase fresh Atlantic salmon from the Gulf of Maine, you’re getting � sh that are up to a week fresher than those from Europe, and you can really taste the di� erence. One of the best ways to ensure an impressive meal when entertaining is to use only the fresh-est of ingredients.”

Clegg also suggests using recipes that can be prepared ahead of time. “For an appetizer, Cold Poached Salmon with Dill Dijon Sauce, is a make-ahead and simple recipe that will wow your company anytime. � e dill dijon sauce is so good you could eat it with a spoon.”

For another party appetizer, Clegg suggests using fresh Atlantic salmon to whip up wonderful miniature salmon cakes with horseradish caper sauce. “You can make patties ahead of time, refrigerate, and cook before using. It’s so good,” says Clegg. “For another twist, turn your salmon cakes in to salmon sliders by placing on a bun.”

While easy and impressive, you’ll also feel good about the nutritional quality of the salmon you serve. At-lantic salmon is high in omega-3 fatty acids, a source of antioxidants and an excellent source of proteins.

Cold Poached Salmon with Dill Dijon Sauce

Makes 10 servings

Ingredients2 cups water1 cup dry white wine1 carrot, diced1 stalk celery, chopped1 onion, sliced1/2 tablespoon black peppercorns1 (2-pound) fresh True North

Atlantic salmon � llet

Instructions1. In a large poacher or pan, combine water, wine, carrot, celery, onion, and peppercorns. Bring to boil. Lower heat, cover, and cook 15 minutes. Add salmon � llet. Cover and cook over low heat until salmon is done, approxi-mately 15-20 minutes. 2. Cool the salmon in its stock. When cool, remove salmon from stock and remove skin from salmon; chill for several hours or overnight. Serve with Dill Dijon Sauce (see recipe below).

Dill Dijon Sauce

Ingredients1 cup nonfat plain yogurt11/2 tablespoons white vinegar11/2 tablespoons Dijon mustard3 tablespoons light brown sugar2 teaspoons dried dill weed

leaves

Instructions1. In small bowl, mix together all in-gredients. Refrigerate before serving; it’s best if refrigerated overnight.

Miniature Salmon Cakes with Horseradish Caper Sauce

Makes about 1 dozen miniature patties

Ingredients11/4 pounds True North Atlantic salmon � llets, skinned1/3 cup � nely chopped onion3 tablespoons light mayonnaise1/2 teaspoon dried dill weed leaves1/2 cup Italian bread crumbs Salt and pepper to taste

Instructions1. Trim salmon, cut into 2-inch cubes; place in food processor or chop � nely by hand. Add onion, mayonnaise, dill weed, breadcrumbs, mixing well. Sea-son to taste will salt and pepper. 2. Shape salmon mixture into miniature patties. 3. Heat on-stick skillet, brown patties over high heat for 1 minute. Lower heat, continue cooking for a few minutes; turn over, continue cook-ing 3 more minutes, or until salmon is done. Do not overcook. Serve with Horseradish Caper Sauce.

Horseradish Caper Sauce

Ingredients1/4 cup light mayonnaise2 tablespoons prepared horseradish1 tablespoon lemon juice1 tablespoon � nely chopped onion1 teaspoon capers, drained

Instructions1. In small bowl, combine all ingredi-ents. Refrigerate until serving.
