Holiday Shortbread Cookies
Shirley’s Christmas TreeCoffee Cake
Christmas Tree Brownie Pops
1 pound (4 sticks)unsalted butter
28 ounces semisweet chocolatechips, divided
6 ounces unsweetenedchocolate, chopped(or Baker’s chocolate squares)
6 large eggs3 tbsps instant
coffee granules2 tbsps pure vanilla extract
2¼ cups sugar1¼ cups all-purpose flour, divided
1 tbsp baking powder1 tsp salt
Cream cheese frostingMini candy canes, the straightsides broken offAssorted sprinkles & minicandies, for decorating
1. Preheat oven to 350°F. Generouslybutter and flour a rimmed12x18x1-inch baking sheet.
2. In the top of a double broiler (orin a large, heat-safe bowl set overa pot of simmering water), melttogether the butter, 16 ounces ofchocolate chips, and unsweetenedchocolate, stirring until smooth. Setaside to slightly cool.
3. In a large bowl, blend togethereggs, instant coffee granules,vanilla, and sugar. Slowly andgradually stir the warm butter/chocolate mixture into the eggmixture.
4. In a medium bowl, whisk together1 cup flour, baking powder, andsalt. Blend into chocolate mixtureuntil just combined. In a smallbowl, toss remaining 12 ounceschocolate chips with remaining 1/4cup flour. Stir into chocolate batterand spread into prepared sheetpan.
5. Bake for 20 minutes, then rap thebaking sheet against the ovenshelf or counter to remove anytrapped air bubbles. Bake for 15more minutes or until a toothpickcomes out clean, taking carenot to overbake. Allow to coolcompletely.
6. Once brownies are cool, cut intoChristmas tree-shaped triangles.Use a thin metal spatula to removefrom cookie sheet onto a platter.
7. To decorate, insert a straight pieceof mini candy cane into the base ofeach tree.
8. Scoop cream cheese frosting (oryour favorite frosting) into a gallon-sized freezer baggie. Push frostinginto a corner of the bag and cutoff a 1/2-inch piece to create ahole. Use as a piping bag to pipefrosting onto each brownie. Placebrownie upside down, start atlong, flat side, and pipe frostingback and forth going down thebrownie, all the way to the tip(where the star would go).

1. Line a baking sheet withparchment paper. Combine alldry ingredients, add butter andblend with a pastry blender, fork(or electric mixer) until thoroughlymixed and a fine crumbly texture.
2. Turn onto a floured surface andknead for about 3 minutes. Rollout to a 9” circle, approximately1/2“ in thickness.
3. Cut shapes with a small upturnedglass or cookie cutter.
4. Poke top of cookies with a forkseveral times and sprinkle surfacelightly with granulated sugar.
5. Place cookie sheet in fridge for 25minutes then place in a preheated300 degree oven on middle rack.Bake until just beginning to turn apale, golden brown (approximately10-12 minutes).
6. Remove from oven andimmediately place cookies on arack to cool. If more than onebaking sheet is required, cook eachsheet separately to ensure evencooking. Cookies can be stored atroom temperature for up to1 month or frozen.

Speculaas Skillet Cookie
1½ cups flour¼ cup packed brown sugar1/3 cup + 1 tsp butter
Pinch of salt2 tbsps pumpkin spice (or
speculaas spices; see below)1-2 tbsps cold water (if needed)Optional: Vanilla ice cream
to serve.
1. Mix all of the ingredients togetherin a large bowl until you have adough. Add the water if necessaryif it seems to dry.
2. Wrap the dough in plastic film andleave to rest in the fridge for 1 hour.
3. Preheat oven to 350 F.4. Take the dough out of the fridge
and roll out slightly.5. Transfer to a lightly greased oven
proof skillet. And press to flattenso that it covers the bottom of theskillet.
6. Use the blunt side of a knife tomake a pattern.
7. Bake for 30-35 minutes.8. Cut into parts and serve. (Optional:
with a scoop of vanilla ice cream)

add 3 oz of vodka
Cream together:1 cup soft butter½ cup white sugar½ cup brown sugar1 egg yolk1 cup of unbleached white flour1 tsp almond extract
1. After well mixed together spreadthe batter evenly on a cookie sheetlined with parchment paper orgreased with butter.
2. Bake for 20 minutes at 325 F(watch to make sure corners orends are not burning, turn downtemp if that is happening).
3. Melt 12 oz of semi sweet bakerschocolate.
4. When the cake layer is done,remove from oven and pour thechocolate over the cake evenlywhile still warm.
5. Spread 1 cup of toasted slivered orsliced almonds then refrigerate foran hour or more.
6. After fully cooled, cut into squaresand take off cookie sheet and storein container in fridge.

Since 2008 the NSDRC Foundation has produced anannual benefit concert, named NSDRC Live! in 2015.Funds raised by the Foundation via the concert, silentauction and raffle go to support programs of
the NSDRC Association, currently the Information&Advocacy and SummerBursary Programs.

NSDRC’s Information and Advocacy (I&A)program provides information about usefulprograms and services to people withdisabilities, their families and caregivers, as wellas to professionals and members of the generalpublic. We provide advocacy and assist with thefilling out of forms like those for Persons withDisability Income Assistance, CPP Disability,and for reconsiderations and some appeals. Wehave an excellent working relationship withother agencies and government offices, so if wecannot help you, we will refer you to someonewho can.
We are the only agency on the North Shore thatprovides this assistance to people of any agewith any sort of disability, and to their familiesand caregivers. The program has run since 1998.
This last 2014-15 year saw a continued risein contacts to the Information & AdvocacyProgram. Both our advocates, Gillian Burnsand Brian Platts, are seeing more clients inincreasingly complex situations. It is notunusual to have someone call for help with oneproblem, and upon arrival find there are manyissues and barriers facing the client. Besidesassisting individual clients, both Brian andGillian share their knowledge and experienceby giving information sessions to groups ofparents, supports and professionals to ensurethe widest benefit to community membersneeding assistance.
The program is growing: In 2014 theInformation and Advocacy program wascontacted 1, 441 times including 889 contactswere from people with disabilities, 233 fromfamilies/caregivers and 208 professionalsseeking assistance for their clients. From lastyear, we saw a 54% increase in the number ofcontacts involving seniors– that’s now 30% oftotal contacts (up from 23% last year).
Besides our work with individual clients, theInformation & Advocacy program has beenactive in partnering with other programs andagencies to work on projects that improvecommunity accessibility, engage communitymembers, and help build“A Community for All”.Last year for instance we partnered on a pilotprogram with the North Shore CommunityResponse Network, North Shore RestorativeJustice and others that looked at conflict inadult housing. Through engagement withtenants and housing providers, we developed aworkshop aimed at giving people basic abilities
and confidence to deal moreeffectively with conflict.
We were also excited to hosta workshop from the BCPoverty Reduction Coalitionthat helped us envision the“Road to a Poverty Free BC”– which brought togethercommunity and faith groups tolook at an issue that affects somany people in our province,in particular those withdisabilities and their families.
This coming March we’relooking forward to workingwith the BC Centre for ElderAdvocacy and Support tohost an 8 session programcalled Breaking Isolation:Engaging and Empowering
Older Women Against Violenceand Abuse. The project offers
opportunities for women of colour,immigrant women and women with disabilitiesto increase awareness about violence againstwomen, know about community resources andgovernment benefits that will assist them asthey age in place, promote their independencethrough financial literacy and enhance theirsafety and security. John moved to the North Shore in 1970
and settled in North Vancouver.
But they brought with them the
Christmas traditions they enjoyed
growing up in Norway.
Hjordis explains that Christmas in
Norway starts on Christmas Eve and
lasts for a week, ending on New Year’s
Eve.
“Food was a very important part of
Christmas,” she notes.

The family didn’t decorate the
Christmas tree until Christmas Eve.
When they did, they adorned the tree
with special ornaments, including real
candles, and small, woven baskets made

candies, cookies and other goodies.
The baskets were all handmade by
family members and some were very
creative while others were more simple,
recalls Hjordis. Baskets were also kept
from year to year.

Scout groups enjoy a long tradition
in the area, having been on the North
Shore for more than 80 years.
One of those groups, the branch known
as 1st West Vancouver Scouts, was
organized in 1927 and held weekly
meetings at a local church. Eighty-
eight years later, that group is still
going strong. Chris Nemeth is a West
m¥������� �¥� x�� d��� ��� ��������
with the group when his son joined
Scouts. His son is now in his 30s and is
a Scout leader, and Nemeth continues
to be involved. He is now a member of
the Scout’s annual Christmas tree sale
committee.
The 1st West Vancouver group is one of
many local Scout groups participating
in the West Vancouver sale, which
Nemeth says involves about half of all
the groups on the North Shore.
The annual holiday tradition started
in the 1950s when individual Scout
groups held smaller sales in the parking
lots of the churches where they held
their weekly meetings. Then in the
late 1950s, it was decided to combine
the group sales into one big one. The
�¥�� ����� ¥����� �� ¥ ��x ��~�����
locations in its early years but has
¤��� �¥����� r¥�� q�v¥� ���� ��� d��
decades.

development over the years, Park Royal has continued
to maintain a space for the Scouts tree sale. Last year
it was held at the old White Spot location, but this
year has been moved to the corner of Clyde Avenue
and Taylor Way.
Putting together the annual fundraiser takes a lot
of work and a lot of volunteers. A team of about 15
adult volunteers starts working on planning and early
logistics for the sale in July. All the trees sold at the lot
are grown in B.C.
Scout leaders and parent volunteers then help set
up the lot, including the trees, fencing and a trailer.
�¤��� ee ������i ¤�v� ¥�� ����� ¥��� d�� �� £�i
participate in the sale.
Scheduling all those kids and parents can be quite a
task, admits Nemeth.
���� ��¥�� �� d����i ��� ����¥���� �� ¥ ��� �� x���i
he notes, but it’s worth it because the tree sale is the
Scout group’s largest fundraiser each year.
The money raised from the tree sale is used to support
various Scouting programs, including renting spaces
from page 31 for meetings, paying for campsites, and covering other
expenses, such as uniforms and equipment, as well
¥� ��¤������ ��� �¥������ x�� �¥�t� ¥~��� ���� ¥��
uniforms, and other costs associated with Scouting.
o�� �����¥����� ����� ���� p������� ¥~���¥¤�� ���
local kids, notes Nemeth.
“One thing I like is that we can support local tree
growers. We get to know them and they’re family
operations and they’re not making a lot of money but
they’re able to keep their land as agricultural. The
other thing is seeing so many people that used to be
in Scouts coming down to buy trees. That’s fun,” says
Nemeth, adding there are a couple of members of
their group helping out with the sale who are in their
�e� ��x ¥�� d��� ��¥���� ������� ��� ����� x��� ���v
were 10-year-old Scouts.
Nemeth says he has also noticed an increase in the
past couple of years of families who are new to Canada
¤�v��� ����� d��� �������¥� ���� ����g y����� �¥v�
it’s nice to see their excitement and to help explain the
tradition to them.
Although the Scouts who participate in the sale don’t
receive any special training for it, the experienced
ones show the newer ones the ropes, and Nemeth says
he thinks the Scouts learn about communication by
being a part of the sale.
“I think they learn how to deal with people a little bit,”
he adds.
The annual Scout traditional tree sale is on now until

8 oz cream cheese, light4 oz crumbled feta cheese¼ cup chives, chopped1/3 cup pomegranate seeds4 whole wheat tortillas
1. In a medium bowl, stir togethercream cheese, feta, chives andpomegranate seeds.
2. Divide mixture into quarters andspread evenly over each tortilla.
3. Roll each tortilla tightly in plasticwrap.
4. Refrigerate for 1 hr.
5. Slice each tortilla into 12 pinwheelsbefore serving.

1. Preheat the oven to 450 degrees Fand grab a large ungreased cookiesheet.
2. In a large bowl, whisk together theflour, baking powder, baking soda,and salt.
3. Cut the butter into the dryingredients using a pastry blenderuntil the mixture resembles coarsebreadcrumbs.
4. Pour in the buttermilk.5. Mix with a wooden spoon until
most of the dry ingredients havebecome moistened. You want the
batter to be moist and sticky, butnot too smooth.
6. Using a tsp, scoop up a heapingspoon full and use a second spoonto scrape the batter onto thecookie sheet.
7. Place the drop biscuits about 1-1/2inches apart.
8. Bake for about 12 minutes, untilthe biscuit bottoms are a golden-brown.Serve hot!

“This recipe was one my motherpassed down to me as a familytradition. It is a super easy one-step meal that we all enjoyed onthe eve of Christmas.”
500g ground beef1 medium onion, chopped
1-2 Tbsp olive oil3 Bavarian smokies, diced
1.5 cups frozen hash brownsor diced cooked potatoes(leftovers)
1 tin mushroom soup1 tin cream of celery soup
Pepper (generous)Grated cheese (or somethingcrunchy) for topping
1. Saute onions in olive oil then addground beef and cook until nolonger pink.
2. Add sausage, potatoes andpepper and cook 5 minutes,stirring often.
3. Add soups to pan and mixthoroughly; you may need to addmilk or water (your preference)to thin out but not too much, it’smeant to be eaten with a fork, nota spoon!). Heat through.
4. Ready to eat at this point, but isbetter if you pour mixture into acasserole dish, top with cheese orsomething crunchy and bake at350 F for ½ hour. Serves 4.
