Melt butter, mix in crumbs. Press into bottom of 8 or 9-inch pan.Layer coconut, chocolate chips and nuts over crumbs in pan. Pour 1 can of sweetened condensed milk over mixture in pan. Bake at 350 degrees for 30 minutes. Cool to room temperature, then refrigerate. Cut into squares to serve.

Heat the oven to 375 degrees. Butter a 3-quart casserole dish; set aside. Place bread pieces and parsley in a medium bowl. In a small saucepan over medium heat, melt 2 tbls. butter. Pour butter into bowl with bread, toss. Set breadcrumbs aside. In a medium saucepan set over medium heat, heat milk. Melt remaining 6 tbls. butter in a high-sided skillet over medium heat. When butter bubbles, add flour. Cook, stirring, 1 minute. Slowly pour hot milk into flour-butter mixture while whisking. Continue cooking, whisking constantly, until the mixture bubbles and becomes thick. Remove the pan from the heat. Stir in salt, nutmeg, black pepper, cayenne pepper, 3 cups cheddar, and 3/4 cup parmigiano reggiano. Set cheese sauce aside. Fill a large saucepan with water. Bring to a boil. Add ditalini; cook 2 to 3 fewer minutes than manufacturer's directions, until outside of pasta is cooked and inside is underdone. Transfer the pasta to a colander, rinse under cold running water, and drain well. Stir pasta into the reserved cheese sauce. Pour the mixture into the prepared casserole dish. Mix in fresh mozzarella. Sprinkle remaining 1-1/2 cups cheddar and ¼ cup parmigiano reggiano; scatter breadcrumbs over the top. Bake until browned on top, about 30 minutes. Transfer dish to a wire rack to cool for 5 minutes; serve.

Chop the artichokes into small pieces. Slice green onions into thin slices. Mix together in a oven proof dish with lid. Add 3/4 of the Parmesan cheese. Stir together.Add the crushed garlic. Stir until well blended.Add the mayonnaise and mix well.Pour remaining Parmesan cheese on top.

Cover with lid and place in a 350º degree oven for 40 minutes.Remove the lid and keep in the oven for an additional 10 minutes until crispy brown.

Cook on low for 8 hours.

use food processor. Mix in just enough

water to bring dough together, tossing with

a fork. Let rest 10 minutes. Roll out and fit

to 9” pie pan. Par bake crust at 350˚ for

Crust: Mix together oats, flour, butter or

margarine, salt, baking soda and

brown sugar. Cut through with

pastry-cutter until mixture is well

mixed and crumbly. Spread 1/2 of

mixture in a buttered 9” x 13”

baking dish, building up sides of pan

to form a shallow well. Set aside.

Filling: Bring canned cherries (including

liquid) and sugar to a boil in a

saucepan. Add flour or cornstarch

to thicken to the consistency of

pudding. Cool filling, then pour

over crust in pan. Top with

remaining crust mixture, press

down lightly.

Bake at 350º for 20 to 30 minutes,

until lightly browned. Cool and cut

into bars. Bars will cut easier if

completely cooled.

MELT 1/4 cup (1/2 stick) butter in medium

saucepan. Pour into prepared jelly-roll pan.

Arrange crackers over butter, breaking

crackers to fit empty spaces.

MELT remaining butter in same saucepan;

add sugar. Bring to a boil over medium heat.

Reduce heat to low; cook, stirring occasion-

ally, for 2 minutes. Remove from heat; stir in

sweetened condensed milk. Pour over

crackers.

BAKE for 10 to 12 minutes or until mixture

is bubbly and slightly darkened. Remove

from oven; cool for 1 minute.

SPRINKLE with morsels. Let stand for 5

minutes or until morsels are shiny; spread

evenly. Sprinkle with nuts; press into

chocolate. Cool in pan on wire rack for 30

minutes. Refrigerate for about 30 minutes or

until chocolate is set. Remove foil; cut into

pieces.

Mix all ingredients in a bowl, then pour into 9 x 9 square or 9 inch round pie pan prepared with PAM. Bake at 375 degrees for 45 minutes.

Slice the tortilla into strips ½” wide.  Pour ½” oil in a skillet and heat over medium-high heat.  Fry the tortilla strips in batches until crisp and just turning gold, 2-3 minutes per batch.  Drain on paper towels.Heat the butter in a large skillet over medium heat and add the scallions, garlic and chiles.  Cook 1-2 minutes, just until garlic is fragrant and the scallions and chiles are just softened.  Add the ancho chile powder and the flour, stir to combine.Add the stock and bring to a boil, stirring constantly.  Reduce the heat and cook about 5 minutes to thicken.  Add the Crema and let simmer for 2 minutes.  Add the seafood and cook just until the shrimp is pink, 1-2 minutes.  Remove from heat and season to taste with salt and pepper.Layer half of the fried tortilla strips in the bottom of the prepared casserole dish.  Pour half the seafood mixture over it.  Repeat with remaining tortilla strips and seafood.  Sprinkle with the Queso Fresco.  Bake at 350 just until the sauce is bubbling, about 15 minutes.  Serve immediately.

Heat olive oil in large skillet. Saute onion and celery in

oil until lightly browned. Add garlic, remove from heat

and set aside to cool.

Mix bread crumbs, salt and spices in large mixing bowl.

When onion mixture has cooled, mix into bread crumb

mixture. Mix in beef and sausage. Make a well in the

center and pour in egg whites, beat gently, then mix into

meat mixture. Chill for an hour or so.

Mix egg yolks, flour, mustard and water in a small bowl

to make a thin batter. Set aside in fridge.

Heat oven to 350˚. Put a 9” x 13” baking pan in the

oven to heat. Remove meat mixture from fridge. Shape

into 1-inch meatballs. ( Yields between 25-35 meatballs.)

Bring broth and bay leaves to a boil in a dutch oven.

Poach meatballs in batches, 5 minutes a batch. After

poaching, place in heated pan in oven. Bake 15-25

minutes, while making gravy.

Remove egg-yolk mixture from fridge. Remove bay

leaves from poaching liquid. Whisk 1 cup of hot

poaching liquid into egg-yolk mixture to temper, then

whisk egg yolk mixture into poaching liquid. When it

thickens into gravy, stir in meatballs with any drippings

from the pan. Serve with noodles or potatoes.

Rinse beans. Combine beans

and 9 cups water. Bring to

boiling; reduce heat. Cover and

let stand 1 hour. Do not drain.

Add carrots. Cover and

simmer 2 ½ to 3 hours.

Cook onion, celery and garlic

in olive oil until almost tender.

Stir into beans with undrained

tomatoes, cabbage, zucchini,

peas, basil, parsley, 2 teaspoons

salt and ½ teaspoon pepper.

Bring to boil, add noodles.

Reduce heat and simmer 25

minutes more. Serve with

Parmesan cheese.

Serves 8.

Cook pasta according to

package directions.

Meanwhile, in a large saucepan,

sauté garlic in butter until

tender. Stir in the flour, salt,

mustard, thyme and pepper.

Gradually stir in milk. Bring to

a boil; cook and stir for 2

minutes or until thickened.

Remove from the heat; stir in

cheese until melted. Drain

pasta; place in a large bowl.

Toss with turkey, vegetables

and cheese sauce.

Transfer to a greased 13-in. x

9-in. baking dish. Sprinkle with

almonds. Bake, uncovered, at

350° for 35-40 minutes or

until heated through. Serve

immediately.

4 cups uncooked spiral pasta

3 Tbl. all-purpose flour

Filling: Combine all filling ingredients.

Heat until just hot, do not boil! Keep

warm while preparing crepes

Crepes: Combine all ingredients using

wire whisk. Heat skillet or crepe pan

on medium heat and add teaspoon

of butter, wipe pan nearly dry after it

melts. While holding pan at an angle,

add crepe mixture and swirl to coat

center of pan. Use approximately 3

tablespoons per crepe. When crepe

is nearly dry on top, slide onto plate

and continue making crepes.

To serve, place crepe in center of

plate, with the inside up. Filling in a

line with 1/3 to 1/2 cup chicken. Roll

with seam ending on the bottom.

Garnish with a small amount of

filling on top.

Filling:

2 cups pre-cooked chicken, cubed

1 cup marinated artichoke hearts, split in quarters

1 pint sour cream

1 cup mayonnaise

1 tsp. lemon juice

1 tsp. white pepper

salt to taste

Crepes:

3 eggs

1 cup flour

1 Tbl. sugar

1 cup milk

1 Tbl. melted butter

Additional butter to cook crepes.

In a warm Irish coffee mug add liquors and top with hot coffee. Float fresh whipped cream on top.

Hot Toddy

juice of lemon¼ oz. honeyseveral drops Orgeat syrup1 oz. whiskey or brandy*lemon slice

In a warm Irish coffee mug add lemon, honey, Orgeat and liquor. Fill with hot water and float a slice of lemon on top.

*If an Herbal Hot Toddy is desired, substitute whiskey or brandy with 3/4 oz Green Chartreuse (a West 5 favorite).

spices together. Cream

butter and sugar; beat until

fluffy. Stir together creamed

and dry ingredients.

Fold in fruits and nuts.

Spread about 1” deep into

approx. 10” x 15” cookie

pan (with sides) – use extra

pan if necessary.

Bake at 325˚ for about

30-35 minutes.
