    Today I'm shar ing a new mix recipe

    for sticky buns! I'm so excited! I

    don 't kn ow if that's a blessing or a

    curse, having amazing buns ingr edients on -han d for whenever the urge to h ave sticky

    sweet potato buttermilk caramel pecan r ol ls overcomes your better judg ement...but I'm

    think ing it is a blessin g . You kn ow, like chocolate is a blessing ? Oh...and ch eesecake is a

    blessing . Oh ...co unt your blessing s! One sticky bun, two sticky bun, three...mrfllrh

    brrunnns (stop co untin g with your mouth ful l). If you wan t to mak e th e sticky buns with ou

    works mag nificently wel l.

    Sweet Potato Buttermilk Roll Dough Mix

    Ingredients:

    4 cup Honeyville Califor nia's Best Bread Flour

    1 1/2 cup Hon eyvill e freeze dried sweet potato, (pulverized* into 1/2 cup powder)

    1/3 cup sugar o r Honeyvill e granulated honey

    1/4 cup Honeyville powdered butter

    3T HoneyvilleWhole Egg po wder

    3T Honeyvillebuttermilk po wder

    1 tsp sal t

    1T active dry yeastTo Prepar e Dough You will Add:

    1 3/4 cups water (coo l to th e touch)

    Spiced Sugar Smear Mix:

    cuppowdered butter

    cup sugar

    1T Cheftessbakeresse Wise Woman of the East Spice blend

    To Pr epare Smear you will add:

    2T water to this mix and spread inside the cinnamon ro ll s

    Sticky Bun Cream Caramel Glaze mix:

    3/4 cup sugar

    1/2 cup Hon eyville powdered butter

    2T Honeyvill ebuttermilk po wder

    1 1/2 cup chopped toas ted pecans , waln uts or sunflower s eeds

    Directions:To pulverize the sweet potatoes in to powder, I use my spice mill (aka a co ffee grinder) . They

    are very han dy to h ave around for thing s like this.

    My practical side takes over because I usually

    use an empty can fro m one of my many

    Honeyville adventures as the con tainment unit

    (oh stars...I just so unded like a science g eek)

    for the kit.

    Decorate it however you like. Today I just tied a cute ruffly

    Chr istmas apron around the can and just added a no te inside

    with bak ing directions.

    Baking Directions:

    Combine everything in the dough mixin on e gal lon size bowl o r mixer with 1 3/4 cup cool

    water . Knead 5 min utes by han d o r 3 minutes in a mixer on medium settin g . Th is is a less

    developed doug h as far as g luten is concerned.

    Form into a ball an d place in a bowl coveredwith pl astic or a l id fo r 1 hour, or until

    doubled in size.

    On a l ightly floured counter top, ro ll into a

    rectang le, 2 feet long by on e foot wide. It will

    be about 1/2 in ch th ick. Mak e sure you lift the

    dough a couple times and dust underneath

    with more flour so it doesn't stick to the

    table.Prepare the smear mixby adding 2T

    water to th e smear mixture. Spread the smear

    over the dough in a lig ht coating . Leave about

    1 inch on the ends an d sides that doesn't have

    butter an d/or sugar mixture. It wil l help the rolls seal better.

    Now rol l th em up tigh tly. Pinch

    seam tigh tly. Slice the roll into 12

    sl iced pieces.

    Combine the caramel topping

    ingr edients and h eat in a saucepan

    with 3T hot water , just until the

    sugar is dissolved, do not boil longer

    than 2 minutes.

    Pour nut caramel mixture into a 9

    inch by 13 inch casserol e pan or

    divide among individual jumbo

    muffin pan.

    Place rol ls in the pan, 1 inches

    apart (or just in each muffincompartment).

    Now...lig htly mist the tops of the

    ro ll s with oil and cover with a lo ose

    fitting piece of plastic wrap (or

    lid).You are g oing to have to raise

    the rol ls completely, about 1 1/2

    hours.

    Preheat oven to 375 degr ees and

    bake 20-25 minutes. Remove from

    oven an d invert on to a serving dish

    immediately, using caution to n ot let

    the hot caramel coating burn your

    skin.
