HOW CHOCOLATE IS MADE
From the field to the factory.
In the field
HarvestingFirst, cocoa beans are picked.
FermentationThen, they are left to ferment.
Drying After that , they are left to dry
covered with banana leaves.
Finally, they are transported to the factory.
In the factory
RoastingFirst, the cocoa beans are
cooked in an oven.
WinnowingThen, they outer shell is
removed and the inner centre (hub) is broken into small pieces (cocoa nibs).
GrindingRoasted cocoa beans are
converted into a liquid, the ‘cocoa liquor’ or ‘cocoa mass’.
The cocoa liquor can be used for `cocoa butter’ or it can be mixed with cocoa butter and sugar to make chocolate.
In the factory
BlendingThe resulting blend is
refined to make different types o chocolates.
In the factory
Tempering and Moulding
After blending, the cocoa liquor is cooled and hardened into different shapes.
Finally the chocolate is packed and distributed.
