How many guests?The beauty of a picnic is that

you’re not restricted by space, so you can invite as many people as you like. Our picnic menu serves six, but the very nature of a picnic means everyone will pick and choose, so this could stretch to cater to 10-12 with the addition of a few extra bags of crisps and nibbles.

Finding a spotWhether you choose a scenic

beauty spot or fancy setting up near a big screen showing the Jubilee celebrations (check in your local press or on your local council’s website for locations), pick a place that’s easily accessible for your guests, with nearby parking or a train station – and plenty of open space to set up a cricket pitch! It’s also wise to have a plan B in case of rain. Do some research before you go to locate the nearest pub, park with a pavilion or National Trust property with a covered area or café you can dash into should the heavens open.

Lounging, laughing, sharing something delicious with friends – there are moments when time just seems to stand still. A picnic is a great way to spend a summer’s

day, so why not pack a special hamper to celebrate the Jubilee...

Planning your picnic party

don’t require keeping warm or heating and can be packed in a cool box with ice packs. It’s best to eat the food within two hours.

6 medium free-range British Woodland eggs

by Sainsbury’s

375g Sainsbury’s Butcher’s Choice pork

sausagemeat

1 tbsp chopped fresh flat-leaf parsley

1 medium British free-range Woodland egg

by Sainsbury’s, beaten

90g Sainsbury’s natural breadcrumbs

1 Place the 6 whole eggs in a pan with enough cold water to just cover them. Bring to a simmer and cook gently for 8 mins. Drain and cool quickly by running under cold tap water until cool enough to handle. Peel off the shells and set aside.

2 Preheat the oven to 190ºC, fan 170ºC, gas 5. Add the sausagemeat and chopped parsley to a bowl and mix well. Using wet hands, divide into 6 portions and shape into flat oval-shaped patties. Place an egg in the centre of each patty and carefully wrap the sausage meat around the eggs, making sure they are completely covered and smooth.

3 Put the beaten egg in a bowl and the breadcrumbs on plate. Dip the sausage-coated eggs into the beaten egg, then roll in the breadcrumbs to coat completely. Put on a baking tray and bake for 25 mins until lightly browned.

Use the stale ends of a loaf to make your own breadcrumbs. Put them under a medium grill for 1-2 mins before using them to coat the Scotch eggs.

Buy ready-made Sainsbury’s Scotch eggs.

If you like your egg yolk on the soft side, reduce the boiling time by 1 min. For extra flavour, add a little lemon zest and some washed and finely chopped fresh thyme leaves to the sausage mixture.

Boil the eggs the day before and cover with the

meat, ready to bake on the morning of the

picnic.

2 red peppers, halved and deseeded

2 yellow peppers, halved and deseeded

1 medium courgette, sliced

2 tbsp olive oil by Sainsbury’s

8 Milano salami slices by Sainsbury’s

125g pack Taste the difference

prosciutto cotto

70g bag wild rocket leaves

1 Preheat the oven to 200ºC, fan 180ºC, gas 6. Cut the pepper halves into quarters and place in a roasting tin with the courgette. Drizzle over the olive oil, season with black pepper and toss together. Roast for 15-20 mins until softened and golden. Stir in the sunblush tomatoes and set aside to cool.

2 With a serrated knife, horizontally slice the very top off the loaf, and set aside. Scoop out the middle of the loaf, leaving a 2cm edge all the way round. (Save the scooped-out bread for making breadcrumbs). Spoon 1⁄3 of the roasted vegetables into the base of the loaf, pressing them down firmly. Top with the Cheddar slices and then the salami slices. Top with half the rocket leaves, pressing down well. Add another 1⁄3 of the roasted vegetables followed by the prosciutto slices. Top with the remaining rocket and roasted vegetables. Place the top back on the loaf, wrap first in clingfilm and then in foil ready to transport.

3 Once at the picnic, keep the loaf together and cut into slices to serve.

Picnic loaf

Take a loaf of bread and stuff it with layers of ham and salami, cheese, peppers, roasted vegetables and rocket – it’ ll look so impressive perched on your picnic rug

Make it veggie

Leave out the ham and salami and stuff with

slices of griddled halloumi instead.

Fry-off a pack of frozen chargrilled Mediterranean vegetables by Sainsbury’s instead of fresh peppers and courgettes.

Instead of stuffing a loaf, use the ingredients to make doorstep sarnies with a Sainsbury’s sandwich loaf.

Before stuffing the loaf, spread the inside with a little Sainsbury’s red pesto, and add a few fresh washed basil leaves to the final veg layer.

When making the salsa, replace the fresh tomatoes with a 400g carton basics chopped tomatoes – they’re all red, but come in different shades.

Instead of making guacamole from scratch, buy ready-made guacamole by Sainsbury’s and stir through 100g washed and chopped Sainsbury’s vine-ripened tomatoes.

Turn the mint and cucumber dip into party canapés: buy ready-made Taste the difference pastry spoons, fill with 1 tsp of the dip and top with pieces of smoked salmon.

GuacamoleSERVES: 6

PREP TIME: 5 MINS

Mash the flesh of 2 ripe avocados in a bowl. Add the juice of 1 lime, 1 crushed clove of garlic, 1⁄2 tsp ground cumin and a drop of Tabasco sauce, and mix well. Season with freshly ground black pepper then add 1⁄2 chopped chilli, 1⁄2 finely chopped red onion and 1⁄2 x 250g pack Sainsbury’s British vine-ripened tomatoes. Transfer to a container ready to take to your picnic.

Spicy salsaSERVES 6

PREP TIME: 5 MINS

COOK TIME: 8 MINS

Heat 1 tbsp olive oil in a pan over a low heat. Add 1 chopped shallot and cook for 2 mins. Add 1 finely chopped clove garlic, 1 finely chopped red chilli and 1 finely chopped green chilli, then cook very gently for another minute. Tip in a 400g tin Taste the Difference Pomodorini cherry tomatoes and cook for a further 5 mins, then remove from the heat and leave to cool. When completely cool, stir through 1 tsp Sainsbury’s balsamic vinegar and a handful of washed and chopped fresh coriander leaves. Season with freshly ground black pepper, then transfer to a container ready to take to your picnic.

Mint and cucumber dipSERVES 6

PREP TIME: 5 MINS

Mix together 200g Sainsbury’s 10% fat Greek-style natural yogurt, 1⁄2 x 28g pack washed and finely chopped fresh mint, 1⁄2 washed and deseeded cucumber that’s been cut into crescents and the juice of 1⁄2 lemon. Season with freshly ground black pepper then transfer to a container ready to take your picnic.

Homemade tortilla chipsCut wholemeal tortilla wraps by Sainsbury’s into triangles, arrange on baking trays and bake at 180°C, fan 160°C, gas 4, for 5-6 mins until golden and crisp.

COOK TIME: 1 HOUR 10 MINS

500g shortcrust pastry block by Sainsbury’s

5 medium British free-range Woodland eggs

by Sainsbury’s, lightly beaten

125g Sainsbury’s fresh soured cream

125ml British semi-skimmed milk

by Sainsbury’s 1⁄4 x 25g pack fresh dill, washed and chopped,

plus extra sprigs to garnish

Zest of 1 unwaxed lemon

2 x 120g packs Scottish smoked

salmon by Sainsbury’s, chopped1⁄2 bunch spring onions, trimmed and sliced

1 Put the shortcrust pastry on a lightly floured surface and roll out until just slightly thinner than the thickness of a £1 coin. Carefully lift the pastry and lightly press it into a 32cm x 21cm tart tin. Place in the fridge to chill for 20 mins. Preheat the oven to 190ºC, fan 170ºC, gas 5.

2 Line the chilled tart case with baking parchment, then fill with baking beans (or rice). Bake for 25 mins, then remove the baking beans and parchment and continue baking for a further 5-10 mins, until the pastry is crisp and beginning to turn golden.

3 Meanwhile, lightly whisk together the eggs, soured cream, milk, dill and lemon zest. Season with freshly ground black pepper.

4 Evenly scatter the salmon trimmings and most of the spring onions into the bottom of the cooked pastry case then pour the cream mixture over the top. Scatter the remaining spring onions and dill sprigs over the top. Reduce the oven temperature to 180ºC, 160ºC fan, gas 4 and cook the tart for 30-35 mins, until set in the middle and beginning to turn golden on top. Let cool completely before transferring to a plate, covering with foil and keeping in the fridge overnight.

MAKES 6 INDIVIDUAL JELLIES

PREP TIME: 20 MINS,

PLUS 3 HOURS’ SETTING TIME

COOK TIME: 10 MINS

5 sheets gelatine

1 tsp lemon juice

110g Sainsbury’s Fairtrade white caster sugar

190ml be good to yourself cranberry and raspberry

juice, or medium-sweet rosé wine

225g Sainsbury’s fresh mixed berries (strawberries,

raspberries and blueberries), washed, strawberries

hulled and quartered

For the white chocolate layer

375ml Sainsbury’s British double cream

55g Fairtrade smooth white chocolate

by Sainsbury’s, broken up into chunks

2 sheets gelatine

1 Soak the 6 gelatine sheets in cold water for 5 mins to soften. In a pan, bring 300ml water and the lemon juice to the boil. Add the sugar, stirring until dissolved, then remove from the heat. Squeeze the water from the gelatine and add the sheets to the syrup. Stir until dissolved, then stir in the cranberry and raspberry juice or wine. Set aside to cool to room temperature.

2 Divide the mixed berries (reserve a few for decorating) between 8 x 200ml plastic tumblers, then pour over the jelly to half-fill the glasses. Chill for at least 2 hours until set.

3 Once set, make the white chocolate layer. Heat the cream in a pan over a medium heat. As it starts to boil, reduce the heat, then stir in the white chocolate until melted, then remove from the heat.

4 Soak the gelatine sheet in cold water for 5 mins to soften, then squeeze out the excess water. Add to the cream and chocolate mixture, stir, then allow to cool a little. Pour on top of the set jelly layer. Let set in the fridge for at least an hour (or overnight). Top with the remaining berries, then cover with clingfilm ready for your picnic.

Summer berry and white chocolate jellies

Packed with juicy British berries and covered with a layer of creamy white chocolate, these individual jellies can be made with fruit juice for the kids or rosé wine for the grown-ups

You could leave out the fruit in the jelly and use just a few pieces to decorate the tops instead

Buy ready-made jelly pots and top with the homemade white chocolate jelly.

Add a pretty finishing touch by decorating the jellies with a few Sainsbury’s Princess sprinkles.

resounding clink of glasses, it has to be the Jubilee. But what drinks should you choose to turn your picnic into an unforgettable day?

This isn’t just any picnic – it’s a celebratory affair! So make things just that little bit more special by treating your guests to a glass of bubbly. Whether you choose Champagne, cava or Prosecco, make sure it’s well-chilled before

you leave home and keep it in a chiller bag until you’re ready to make a toast. Add a few fresh washed raspberries or a strawberry to each glass for an extra taste of British summer. For children and non-drinkers, fill their glasses with something soft and sparkly, then add the fruit for them as well.

Kimberley’s top tips‘picnics call for simple, uncomplicated drinks, like white wines with good

acidity to refresh the palate, as well as some options for the non-drinkers,’ says Sainsbury’s wine expert Kimberley davenport. Try Kimberley’s drink ideas for a perfect picnic:

White wineHouse Pinot Grigio A light summery wine that boasts a lovely white-peach flavour and a crisp mineral finish. It goes really well with our picnic loaf (p5).

Rosé wineBanrock Station Pink Moscato A very light and sweet Australian wine with a slight sparkle and lower alcohol content (5.5%). It’s lovely with our summer berry jelly dessert (p8).

Choosing your cheeseNo picnic is complete without cheese, and taking a little time

to choose the perfect ones for your outdoor feast will pay off. Try before you buy at our deli counters, so you can be sure of getting something you like

Stuck for ideas on what to choose for your picnic? Why not ask at our instore counter for advice, and remember, you can try before you buy, so it’s easy to find something

you like. Don’t be afraid of packing an oozing, soft cheese (try to choose one in its own wooden box) as these are great for dipping chunks of bread or crudités into. A Cheddar is always a

good bet, especially if there are children to consider. And a Great British picnic calls for that classic Great British blue cheese – Stilton. Cheese is best enjoyed at room temperature, rather than chilled, so it works well as picnic food. But prevent it from getting too hot and sweating by packing it in greaseproof paper before you go.
