Subject – Management

Planning-planning includes setting of goals and objectives and identifying all ways to and methods to achieve the goals.

Organizing- It includes designing of jobs, ides, Structure and system to achieve the goals.

Directing- It includes leading and motivating people for the attainment of goals.

Controlling - It include maintaining the deviations from plan and then evaluating the levels of attainment of goals.

H.R. - A level HRM is seen as simply being another name for personal management and there is nothing distinct or principal about HRM.

A convenient should hand them that allows for the grouping together at a whole series of rule- disciplines that are broadly concerned with people management such as employs relations, industrial, labor relations, personal management and organizational behavior.

Marketing -The management process through which goods devices move from concept to the customers. It includes the co-ordination of four elements called 4 P’s of marketing.

Production - The process and methods used to transform tangible inputs and intangible inputs into goods and services. Resources are used in this process to create an output that is suitable for use or has exchange value.

Finance - By expect, finance is simple task of providing necessary funds required by business entities like company firm’s individual and other on the terms that are most favorable to achieve economy objectives.

Function of Production are as follow-

Selection of dish – The executive chef selects the least quality dish to prepare the food & serve with best quality food & taste.

Production capacity – The executive chef has to plan how much the food has to be preparing for a day to avoid wastage.

Maintenance & Replacement of machines – It is done regularly, quarterly and monthly. It is also depend upon the machine.

Quality & cost control – The chef of the hotel should properly to provide best quality of food to consumers & control the cost as well as wastage.

Finance function are as follow –

Budget preparation – The budget preparation is done on yearly bases.

Financial transaction – all the financial transaction are payable by check and cash only.

Employee salary – employee are paid every month as per the govt. rule & regulation.

Financial benefit – the employee of hotel get following benefits- Medical claim, Cash coupons

Fortune landmark hotel is managed by the ITC Hotels. ITC Limited entered the hotel business on 18 October 1975 with the opening of a hotel in Chennai. H.R. Functions - The H.R. functions are done by H.R. manager. The following are some basic functions of H.R. in the hotel.

Selection - Selection of the candidate for various department is quiet strict and they have to pass various rounds of the process of selection.

Employee satisfaction - The H.R. motivates the employee by communication and solves the problem of employee and it will help in development of the employee.

It is done by senior executive chef of the hotel-

Selection of product - The chef choose the best quality of raw material to

prepare the food.

To reduce the wastage of food - It is responsibility of executive chef to manage and to prepare according to requirement so there will be less wastage of food.

Selecting the production capacity - The chef prepare the estimate food for 250-300 people per day and it does not include the food prepare for banquet like marriages, parties, business meeting etc.

Managing wastage of food -There is wastage disposal in hotel for managing the wastage of food.

Production planning -The food is prepare and planned as per the function and event

Production control -The food is been made as per requirement as per planning except the banquet which will help us in reducing the wastage.

Inventory control - It is done by minimum past stock.

Maintenance and replacement of machine -The machine are maintain by AMC regularly. It is done quarterly or yearly depending upon type of machine

The finance management is done by finance manager to handle the financial affairs of the company the minister of finance is responsible of finance function and activity of the board and management of financial policy of the office.

Budget preparation -The budget preparation is done once in the year.

Budget administration -The budget administration is done every month in the hotel.

Shareholder of the hotel -There are no shareholder of the hotel.

Cost allocation- It is been done every month for each department in hotel.

Accounts payable -The accounts payable by customer is done through cheque, credit card and cash.

Number of employee and their payroll - There are 8 to 10 employees in hotel and they are paid every month.

To reduce cost -The finance manager preplan everything and its main aim is to reduce cost and maximum profit.

Conclusion -- after all the process done in day all the department managers submit their whole reports to the general manager (GM)

H.R. – the main aim of the HR manager is to provide the best candidate in the hotel. The main work of HR is “the right person at right place”.

Marketing – the main aim of marketing management is to satisfy the customers & sale the product with good image.

Production – the main aim of production management is to provide the best quality & quantity food to the customers & to reduce wastage.

Finance – the main aim of finance management is to reduce the cost of production, marketing and to maximize profit.
