FOREWORD

This Indian Standard (Second Revision) was adopted by the Bureau of Indian Standards, after the draft finalizedby the Drinks and Carbonated Beverages Sectional Committee had been approved by the Food and AgricultureDivision Council.

Table wine is a product obtained from alcoholic fermentation of fresh grape juice/must, possessing distinctivearoma and taste characteristics of grapes used.

The standard was originally issued in 1973 and subsequently revised in 1995.

This revision has been taken up in order to update the standard in the light of current industrial and tradepractices. The requirements of various characteristics have been modified.

In the formulation of this standard, due consideration has been given to the provisions of The Prevention ofFood Adulteration Act, 1954 and the Rules framed thereunder; Standar& of Weights and Measures (PackagedCommodities) Rules, 1977 and State Excise Duty Rules. However, this standard is subject to the restrictionsimposed under these Acts and Rules thereunder, wherever applicable.

For the purpose of deciding whether a particular requirement of this standard is compiled, with, the finalvalue, observed or calculated, expressing the result of a test or analysis, shall be rounded off in accordance with1S2:1960 ‘Rules for rounding off numerical values (revised)’. The number of significant places retained in therounded off value should be the same as that of specified value in this standard.

This standard prescribes the requirements and themethods of sampling and test for table wines.

2 REFERENCES

The standards listed in Annex A contain provisions,which through reference in this text, constituteprovision of this standard. At the time of publication,the editions indicated were valid. All standards aresubject to revision and parties to agreements based onthis standard are encouraged to investigate thepossibility of applying the most recent editions of thestandards indicated at Annex A.

3 TERMINOLOGY

For the purpose of this standard, definitions given in1S6749 shall apply.

4 TYPES

4.1 Table wines shall be the products obtained fromthe alcoholic fermentation of grape juice/must. Itshall possess the varietal character derived from thegrapes or the constituents formed during fermentation.

4.2 This standard covers the following types of tablewines:

a) Dry white,

b) Sweet white,

c) Dry red,

d) Sweet red, and

e) Sparkling wine.

4.2.1 Dq and Sweet White Table Wines

These wines shall be the products obtained from thealcoholic fermentation of grape juice/must. Theircolour shall be colorless to golden pale.

4.2.2 Dry and Sweet Red Table Wines

These wines shall be the products obtained from thealcoholic fermentation of red, purple, pink or blackgrapes or mixture thereof. The wine shall possessdistinct colour, which shall come from naturalpigments, mainly anthocyanines, present in thegrapes.

The table wines having light red to pink colour can bedesignated as ‘Rose table wines’. It can be acombination of red and white table wines; or producedby shorter maceration of red wines.

Revision)4.2.3 Sparkling Wine

These wines shall be the wines that have retained thecarbon dioxide, which naturally evolves from alcoholicfermentation; or the wines that are carbonatedexternally with carbon dioxide.

5 HYGIENIC CONDITIONS

Table wines shall be manufactured under hygienicconditions (see IS 14348).

6 WATER QUALITY

Water conforming to IS 14543 or IS 13428 or IS 10500with or without demineralization shall be used.

7 REQUIREMENTS

7.1 Ethyl Alcohol Content

The ethyl alcohol content in table wines shall be inthe range of 8 to 15.5 percent by volume (14° to 27.1°proof) at 20°/200C subject to approval by State ExciseAuthority, when determined according to the methodprescribed in 4 of IS 3752. The tolerance limits forethyl alcohol content shall be +5.0 percent of thedeclared strength. However, the ethyl alcohol content,its tolerance and method of measurement may varyaccording to the Rules and Regulations prescribed bythe State Excise Authority.

7.2 Table wines shall be free from any unpleasantaroma, unpleasant tmte, cloudiness, sediments orsuspended matters, mould and bacterial growth.

7.3 Freedom from Mould and Bacterial Growth

Table wines shall be free from mould, bacterial or hyother growth.

7.4 Freedom from Sedimentation and HarmfulIngredients

Table wines shall be free from sediments, suspendedmatter and any ingredients injurious to health.

7.5 Colour and Additives

Table wines may contain permitted food additives(except colour) as defined by PFA/CODEX/JECFA.The limits shall be in accordance with EU guidelines.

7.6 Taste and Aroma

Table wines shall have the characteristic taste andaroma of table wines. To enhance the characteristicflavour of the product, naturalhatural extracts/nature

identical/artificial flavour permitted under PFA/FEMA GRAS maybe used.

7.7 Carbonation

In case of sparkling wines externally carbonated, itshall be carbonated with carbon dioxide conformingto Grade 2 of IS 307 to a pressure in accordance withits character. However, the sparkling wines shall havea minimum of one volume of carbon dioxide. Arecommended method for the measurement of gasvolume is given in Annex B.

NOTE — The gas volume is the amount of carbon dioxide thewater will absorb at the normal atmosphericpressureat 15.56W

7.8 Table wines shall also comply with therequirements given in Table 1.

8 PACKING

8.1 Table wines may be filled in glass bottlesconforming to IS 1662 or plastic bottles made of PETconforming to IS 14537 or any other suitable neutralor non-reactive food grade containers which does notaffect its quality. The bottles or containers shall beproperly sealed,

8.1.1 All new containers shall be cleaned accordingto 5.6.1 of IS 14348.

8.2 Used bottles shall be permitted if cleaned in ahygienic way by the manufacturer as per 5.6.1.1 ofIS 14348.

8.3 Inspection of Empty and Filled Containers

Containers, both before and after filling, shall pass,forinspection before a brightly illuminated backgroundand be viewed, if necessary, under magnification.Automatic inspection by specially designed units mayalso be employed. Defective containers or productsshall be rejected.

8.4 In case of sparkling wines:

a) All containers shall be cleaned and sanitizedaccording to 4.1 of IS 5837.

b) The containers shall be filled under strictlysanitary conditions as per IS 5837. After filling,the containers shall be hermetically sealed withclean, new crown corks conforming to IS 1994.

9 MARKING

9.1 The following particulars shall be marked legiblyand indelibly on the label/crown/body of thecontainer:

Name and address of the manufacturer;

Any- other markings required under theStan&r& of Weights andA4easures (PackagedCommodities) Rules, 1977, and any otherstatutory requirement.

NOTE — Geographical designationhwanes may be used onthe label solely for products originating from that geographicalregion.

9.2 BIS Certification Markhg

The product may also be marked with the StandardMark.

9.2.1 The use of the Standard Mark is governed bythe provisions of Bureau oflndian Standards Act, 1986and the Rules and Regulations made thereunder. Thedetails of conditions under which the license for theuse of Standard Mark maybe granted to manufacturersor producers may be obtained from Bureau of IndianStandards.

10 SAMPLING

Representative samples shall be drawn and conformityof the material in the lot (to the requirements of thisspecification shall be determined in accordance withthe method prescribed in IS 3753.

METHOD OF MEASURING GAS VOLUME

B-1 APPARATUS

The apparatus consists of a pressure gauge having ahollow spike with holes in its side. The bottle is insertedfrom the side into the slot provided in the neck of thecarbon dioxide tester and is secured in place bytightening with a threaded system. The pressure gaugeis inserted until the needlepoint touches the crown cork.There is a sniff valve on the gauge stem, which is keptclosed until the needlepoint of the pressure gauge isforced through the crown cork. The reading is notedon the gauge.

B-2 PROCEDURE

Clamp the bottle in the frame of the gas volume tester.Pierce the crown cork but do not shake the bottle. Sniffoff the top gas quickly until the gauge reading dropsto zero. Make certain to close the valve the instant theneedle touches zero in the pressure gauge. Shake thebottle vigorously until the gauge gives a reading thatadditional shaking does n~t change. Record thepressure. Note the temperature and record it. Obtainthe volume of gas from Table 2 of IS 2346.
