Christmas / New Year break and are ready to take on
cake decora#ng in 2016! We have an exci#ng line up for
you this year including our planned workshops. Any
sugges#ons or input would be well received. Please
contact one of our Commi0ee if you can contribute.
Congratula#ons to Dorothy Apps, our 2015 Fay Gardner
Award recipient. A very worthy person for the award!
I’d like to thank Bev Smith for her dedica#on to the task
of managing the Guild Shop over the years. She has
done a magnificent job and I appreciate the #me she
has put in.
Our branch runs smoothly thanks to all the members,
both on the Commi0ee and those who “just help out”.
My hear:elt thanks goes to you all.
I hope you are all thinking of going to the new look
Challenge / Show#me in August this year. It will be an
excellent opportunity to par#cipate in both events the
State runs and it will be good to see how they combine
them. Easy to get to at Campbelltown so I hope to see
many of you there.
Facebook is a wonderful applica#on that really does
show how small the world of communica#on is now.
Not only did we catch up with Helen Wilkinson 18
months ago, I recently saw a “Happy 100th Birthday
Dorice”. Dorice is not a common name so I followed it
up and it turned out to be the person I knew many
years ago. Those of you have been in the Guild as long
as I have will remember Dorice Noy (or Lown) as a
talented decorator who shared her skills on many
occasions. She is currently residing at Wirreanda in
Cherrybrook.
A reminder that our State Commi�ee require that all
membership renewal forms are sent to them. If you
have not returned the pre-printed form, please post or
scan and email it to Dianne Cassim. Or complete one at
the February mee7ng.

Kitchen Policy
Jugs of water and a basin for rinsing mugs will be available on the table outside the kitchen. If you use one
of the mugs provided, please wash and put it away. It would be preferable to bring your own!
Pla9ers/containers and any le;over food can be collected from the tables outside the
kitchen at the end of the mee�ng.
We need volunteers for Kitchen Duty! If you are able to help, please go up to the kitchen
and let yourself be known. A big thank you to all the Commi9ee members and other
regulars who help out every mee�ng.

Fay Gardner Award
And the winner is …. Dorothy Apps!
Dorothy has been a member of the Guild
since 1990. She was a commi9ee
member for many of those years, only
re�ring a few years ago. Dorothy was the
#1 raffle �cket seller, always helping on
mee�ng days and on special projects. She
is s�ll involved with the juniors and helps
out in the kitchen.
Dorothy is always happy to help when
needed and is a very worthy recipient of the 2015 Fay
Gardner Award. Congratula�ons from all of us Dorothy!

Spotlight on a Cake Decorator - Fay Gardner
How long have you been
decora"ng cakes and
what got you started?
In 1958, I saw a beau�ful
thee-�ered cake with
piped roses made by a
neighbour. She was
a!ending cake decora�ng
classes at Liverpool
Evening College, so my
friend Bonnie and I
decided to give it a go. We
walked from Moorebank, where I lived at the �me, all
the way to Liverpool for our first class. I was young,
giggly and didn’t know one end of my piping bag from
the other! It was in�mida�ng being with the more
experienced girls but I was hooked
from that very first class!
How long have you been a member
of the Guild?
Since 1980 and in the years that
followed, I held posi�ons of Senior
Vice-President, President (taking
over from Bernice Vercoe in 1983),
then a3er the State Body was
formed, State
President and Vice-President and I
was made a State Life Member. I
was also on the State Commi!ee
and Judges’ Commi!ee. In 2004, I
was made an Honorary Member of
the Sydney Guild in recogni�on of
my contribu�on to the Guild, both State and Branch.
What do you enjoy most about the mee"ngs?
I haven’t a!ended a mee�ng in recent �mes but have
always enjoyed the friendship and camaderie shared
with other members whenever we got together. And
I loved demming! It was a joy to share my skills and
knowledge with the other
members .. explaining
techniques, answering
ques�ons and seeing their
faces light up when they
‘get’ what it was I was
trying to explain!
Has cake decora"ng changed much in the "me
you’ve been doing it?
My word, yes! I got married in 1946, just a3er the
war and at a �me when there were no cake shops,
only bakeries in Sydney. My uncle arranged for the
wedding cake which was a beau�ful cake, 3 �ers high
with decora�ons made out of plaster of paris! Cake
decora�ng has come a long way since!
Your most memorable piece/decorated cake?
I’ve always been interested in figure work. At one of
the earliest Seminars organised by the Guild, I made
some Lladro figurines. The church
cake shown here was made, brick-by
-brick, for the Bathurst Seminar and
transported on a public bus from
Canberra! In my early years of cake
decora�ng, I got first prize in the
Novice sec�on in the Easter Show
with a two-�er wedding cake.
What is the most rewarding part of
cake decora"ng?
Apart from the sa�sfac�on I get from crea�ng
wonderful works of art, I really enjoy teaching and get
immense sa�sfac�on from encouraging the interest
and seeing the progress of new
students. I have spent many
years teaching cake decora�ng
star�ng in 1964 at the Ashfield
Evening College.
What was your biggest challenge
as a cake decorator?
Learning the cra3! When I
a!ended my first class all those
years ago, I hadn’t baked a single cake or done any
cake decora�ng so it was a real challenge learning the
skills from scratch. My mother sent me her fruit cake
recipe, scribbled on the back of an envelope, and told
me that if I messed it up, I should “give up this
nonsense of cake
decora�ng”. Fortunately I
didn’t mess up!
If you had one piece of
advice for a new cake
decorator, what would it be?
Do a basic course, make sure
you get lots of prac�se and
get your hands on as many
cake decora�ng books as you can, both old and new.
Join the Guild and learn from the other members.

Treasurer’s Report: It was noted that Denise
Schaeffer had taken on the role of Treasurer as an
interim measure and is pleased to be handing over
to Kathy Rice. A full report was not available but a
verbal report was presented.

Judges Sub-commi�ee: Joy Eagles had a/ended
the Na1onal Judges mee1ng held in conjunc1on
with the Na1onal Seminar at Jupiters Casino on 23
August 2015. Pam Archibald has taken on the role
of chairing the Na1onal Judges Commi/ee.
State Rostered Days: All branches need to advise
Narelle Waldock of their SRD dates so that
demonstrators can be arranged.
Magazine Adver%sing: Prices have been held at
present levels and all adver1sers have been
contacted about con1nuing next year. Most have
agreed to con1nue so no new adver1sers are being
sought at the present 1me.
It was noted that the current edi1on of Sweet
Perfec�on is somewhat delayed due to the Editor
experiencing challenging personal circumstances.
Everyone was urged to submit interes1ng hints and
other informa1on to the Editor for inclusion in the
magazine.
Small Business Insurance: This is due for renewal
on 28 November 2015 and the premium will be
paid this week. There are 70 members registered
and 47 have paid todate.
It was reiterated that the policy is only available to
ac1ve members of the Guild and people should not
view Guild membership as an access point for
cheap insurance.
The following criteria have been suggested:
• must have been a member for at least 12
months.
• must a/end at least 50% of mee1ngs; or
• help with Branch ac1vi1es (eg Meals on Wheels
cakes, fundraising, mee1ng organisa1on).
Internet: Helen Robinson has been busy so not
much ac1vity advancing the website but Lyn Bales
is ac1vely keeping the Facebook page up to date.
Na%onal Seminar: Exci1ng news that aCer some
22 years of lobbying, the NSW Guild and Victorian
Associa1on have been accepted as full members of
the Na%onal Body. It is strongly felt that the NSW
Guild can contribute very posi1vely to the Na1onal
Body.
There are three main du1es incumbent upon
members of the Na1onal Associa1on which are
taken in rota1on:
• supply the execu1ve for two years
• run the biennial seminar
• run the magazine
The NSW State Commi/ee chose to take on the
duty of supplying the Execu1ve Commi/ee for the
period November 2016 – November 2018. The
other obliga1ons would not fall to the NSW Guild
for several years.
This decision is to be ra1fied by all branches.
Informa1on will be provided to the branches by
Secretary Jan Boon so members can fully
understand the background to this move and its
implica1ons.
The Na1onal Execu1ve consists of five members
and Joy Eagles and Jan Boon have agreed to be
part of that commi/ee. As the State Commi/ee
and Na1onal Commi/ee run concurrently, there
will be two vacancies on the State Commi/ee and
three addi1onal members needed for the Na1onal
Commi/ee.
The Na1onal Execu1ve do fundraising, manage day
to day running of the Na1onal Associa1on and
organise compe11ons at the Na1onal Seminar in
conjunc1on with the Judges panel.
The Display theme for the 2017 Na%onal Seminar
was announced as Land and Sea.
NSW Guild’s display will be images showcasing pets
and animals of our state. This 1me, the size is
reduced to 45cm square and no taller than 30cm.
Insurance: The Na1onal Commi/ee are s1ll
looking into the feasibility of obtaining a
Professional Indemnity Insurance policy that will
cover all state member organisa1ons.

NSW Guild Challenge and Seminar

Members who wish to book accommoda&on are
advised to use the booking code ‘PC190079’ to get
a discounted rate. There are 250 rooms at the
Rydges and rates are $160-$180 per room, which

Other accommoda&on such as holiday parks and
motels is available in the vicinity ranging from $80-
$90 per room/night.
All informa&on will be available at the March AGM.
The cost of a6ending the seminar is $315 for
members and $330 for non-members. This includes
dinner on Friday and Saturday nights.

The theme for this year’s Sydney Branch display for
the Seminar is Fisher’s Ghost.
The legend of Fisher’s Ghost dates back to 1826
and centres around the mysterious disappearance
of Campbelltown farmer, Fred Fisher. Informa&on

Christmas! We had lots and lots of

all the cakes. Thanks also to Jeannine Ashby,
Denice Fuhrmann and Mark Threlfo who helped
collect and pack the cakes on the day.

Recipe Corner
“Impossible” Coconut Pie
Ingredients
4 eggs
225g (1 cup) caster sugar
100g unsalted bu�er, so�ened
100g slivered almonds
1 cup desiccated coconut
2 tablespoons grated lemon rind
2 tablespoons grated orange rind
125ml (1/2 cup) lemon juice
125ml (1/2 cup) orange juice
250ml (1 cup) coconut milk
1/2 cup plain flour, si�ed
Lightly whipped cream and fresh

Method
Preheat oven to 180C.
Place eggs, sugar, bu�er, almonds,
coconut, lemon and orange rind and
juice, coconut milk and flour in a food
processor and blend un,l well-combined. Pour into a greased 28cm
pie plate. Bake for 1 hour un,l lightly browned. Set aside to cool,
then refrigerate for 1 hour to chill.
Slice and serve with whipped cream and passionfruit pulp.

are the perfect opportunity for
you to brush up on your flower
making skills.
Three workshops will be held this year in
conjunc�on with the Juniors’ mee�ngs.
The topics selected by members at the December
Christmas lunch were Parrot Tulip, Peony and
Blushing Bride. Photos are available on our

A minimum of 15 people are required for the
workshops to proceed and
the maximum enrolment is
24 people at each workshop.
Tea, coffee and sweet treats
will be provided. Par�cipants
will need to bring their own
lunch on the day.
