Italian Odyssey Part 4 I have been so remiss on updating the progress of my Italian odyssey! I’m sure everyone will be glad to hear that Ian and my Italian sourdough bread and cornetti cravings have abated. When we order now at a restaurant we tell the waiters straight away we eat “Senza Glutine” (without gluten), and everyone of them knows what we are talking about. This means we don’t have a bread basket on the table automatically which really helps. Sometimes they have a bread or breakstick without gluten which they proudly give us, bless them, which luckily taste really awful. This is such a blessing as we are not at all tempted! There is a reason I have been so remiss in blogging and it’s because I became obsessed with stomach acids and wanted to find out all about them and what it really means for our body if we don’t have a strong enough acidity in our stomachs. I can tell you one thing for sure, good stomach acidity is SO important! The question I really wanted to know the answer to though was: Why do we become hypochlorhydria (abnormally low level of hydrochloric acid in the stomach) in the first place? This is always the question I ask when I find out about something that we are lacking and shouldn’t be in the body. I have tried to put on a band aid (supplements or some variety) so many times and the band aids often caused more problems. I want to know what was the initial reason that started the whole low stomach acidity? To not ask these questions is I believe the way the medical system went wrong. We should never stop asking, how did we get to have this problem in the first place? We have instead just found something that will help the symptoms. And that is why we are in this pretty pickle right now with our bodies health. Now I think I have the answer to this epidemic of low stomach acidity. Dr Carlson talks about his own medical training and the lack of and misinformation given as a medical student about diet. He wonderfully describes about how medical, dietician and nutritionist training never gets students to ask why, it just gets them to do what they are taught to do. the market, but to tell the truth. To tell the truth about what has been working in mypractice, over the last nine years, to help thousands of people regain control over theirlives. These individuals, who suffered from a multitude of medical diseases, were helpedand oftentimes cured, though simple dietary changes.

With the current information being disseminated by the popular press and well-funded three letter organizations, million of people are being maimed and killed each year, because they beieve what these

entities are endorsing. Millions of people are suffering and dying each year because they believe, based on no factual evidence, that what they are being told is true. The titleGENOCIDE reflects the fact that not only a million of people dying right here in America,but all over the world as well; all due to the continued grotesque dissemination ofincorrect dietary beliefs. Unfortunately, people will continue to die and suffer horriblemedical consequences and tragedies, unless the truth, a truth I know and havewitnessed first hand in my clinical practice, is told.

I will clearly and logically present the truth about diet in the pages to follow. Sure some,maybe most people will state what I say is wrong. But that is their belief. The evidence Ican show, the truth I can reveal, will hopefully allow millions, I wish the world, to be andstay healthy, for as long as their life on this planet.

Someone once said that it’s not true because it works; it works because it’s true. Wewill start our discussion with this premise in mind. Throughout this book, I will makestatements only if I have seen it work in clinical practice. Remember, what I am about tosay has worked on thousands of my patients over nine years of implementing aparticular dietary plan into my patient’s live. This dietary plan worked for these patients,because it is true. Please remember this a you read this book.”

“For those physician who hold any doubt about the information I am about to reveal, Iwas once you’ nine years ago. “When I found out I had elevated blood pressure and low HDL, I started myself on a lowfat, low cholesterol diet.” “…..much to my surprise I gained weight, my blood pressure went higher and my HDL went even lower. But was I really surprised? I had toldthousands of patients over the years to follow this particular dietary regimen; and I knew it did not work.”

“This wasn’t a knowledge that was obvious to me, more of a subliminal understanding,as I had never really seen low fat, low cholesterol diets work in the past. I continued toplace my patients on low fat, low cholesterol diets because that was what I was taught todo in medical school and residency. So I continue to counsel my patients dietarily, aboutlow fat low cholesterol diets, throwing in that if the diet does not work, we could startmedication. And I knew, most of the time, we would have to.”

“I am truly embarrassed to say that I never actually gave much though as to why the vast majority of my patients did not respond to the low fat, low cholesterol diets. I implicitly knewthat the diet did not work because at the same visit I would talk about diet, I would talk

about the possibility of diet failure, and the use of medications.

What was wrong with me? Why did I not stop and think about why the diet was notworking? Was cholesterol elevated in my patient’s blood because they were deficient incholesterol lowering medications? Were blood pressures really elevated because my patient’s blood was deficient in blood pressure lowering medications? Orblood sugars elevated because of a defiency in of of the latest sugar lowering drugs? Why did I not smell the proverbial coffee? Why was I so stupid?

I really don’t think I’m all that dumb. I obtained my undergraduate degree inbiochemistry from Cornell, graduated from Medical School, and was Chief Residentduring my Family Medicine residency. How could I have been so darn ignorant? Why didI not question what I knew and saw was not working? Why did I just reach formedications when the so-called accepted diet did not work?”

“Because that was the way I was trained!!!!

Let’s see, it’s called Medical School because you go there to learn how to usemedicine. You do not go to medicine school to learn how to use diet to control diseases.When I was in medical school we only received two weeks of nutritional instruction,taught by an overweight dietician.

Let me tell you something, the way one is trained in medical school stifles any change at creativity or free thought. We are taught what to do and when to do it. We are not taught to think as a free mind inmedical school. Because of this, we are indoctrinated with all the mistakes in thinking that our predecessors demonstrated before us.

Indoctrinated, wow, heavy; but true. We are not taught how to think, we are taught what to think. Because of this, when we are told medical school, residency, and throughconferences and journal reading to start low fat, low cholesterol diets; we do it withoutthinking.

Just like cattle to the slaughter, or should I say, like humans to the cath lab, or to dialysisor to chemo….we do it without thinking..

Well, wait a minute; I shouldn’t just pick on the medical circle. With all due respect, weare, shall I use the word, indoctrinated again, at a very early age. We are told inelementary and high school that low fat, low cholesterol diets are correct. We learn it incollege, we read it in the paper, see it on TV, and hear it on the radio. How could low fat,low cholesterol diets be wrong, when everyone knows, just knows, that this is the correctdiet to be on.

So the reason I did not question the fact, (and it is very important my reader sees the word FACT for what it is) that almost everyone I placed on low fat, low cholesterol diets needed medication, was because Iwas trained never to question what I was told by my instructors. I was conditioned to just accept, not question, medical authority. And so I did not.”

(after the low fat diet he went on did not work)…“Guess what I did to myself next. That’sright I started myself on medications for blood pressure and cholesterol; BECAUSETHAT WAS WHAT I WAS TRAINED TO DO!”
