    Josh Caray comes to Victoriafrom his hometown of Atlanta, GAwhere he worked for the last two-and-a-half years in a radio/televi-sion hybrid position as a reporter,assignment editor, and liaison forboth outlets and anchored on theradio side. Josh is also a freelancesports play-by-play broadcaster

    for Leareld Sports and has called

    college basketball games for thelast couple of years.

    Prior to that, Josh was a full-timesportscaster working primarily inminor league baseball with stopsin Rome, GA, Gwinnett County,GA, San Angelo, TX and Waldorf,

    MD. He even called some minorleague television games that ap-peared nationally on the MLBNetwork. Josh also has an exten-sive collegiate background, call-ing games at the Division I level

    for Presbyterian College (SC) andChattanooga University (TN). He

    also spent time as a studio host atIMG for the Tulane and UNLV ra-dio networks.

    known throughoutTexas and the Unit-ed States as a trail-blazer in the ght

    for Civil Rights for Mexican Americans in Texas.His efforts contributed greatly to improving access to healthcare

    for minorities and ending segregation in Texas Hospitals. Dr. Garciagraduated from UTMB School of Medicine in 1940 and he fought

    in WWII and returned a decorated war hero to his home in Corpus

    Christi, where he practiced medicine.It was there that he began to realize the injustices brought against

    The White House plan an-nounced today elevates the univer-sal need for some post-secondary

    education in todays economy andthe need to make college afford-ability a national priority. TheWhite House plan differs signi-cantly from Tennessees and otherfree community college plansand addresses many, but not all, ofthose plans limitations.

    In particular, low-income stu-dents could benet from the White

    House proposal because it is nota last-dollar scholarship like

    the Tennessee Promise, whichonly helps students who dont al-ready get enough aid to cover tu-ition. This is a critically importantdistinction because, given the rela-tively low income of community

    college students and the relativelylow tuition charges at communitycolleges, last-dollar scholarshipsrarely benet community college

    students with the greatest need andrather benet those with the least

    need.Instead, the White House plan

    provides greatly needed additionalfederal funding to states that makekey reforms, including not charg-ing tuition or fees at communitycolleges. The proposal is aimedsquarely at stopping state divest-ment from public colleges, whichis crucial to making college moreaffordable.

    Still, making community college

    tuition free for all students regard-less of their income neither focus-es resources on the students whoneed aid the most, nor addressesthe bulk of the costs of attending

    community college since tuitioncharges comprise only one-fth of

    the cost of attendance. ConsiderCalifornia community colleges,which have the lowest tuition inthe nation plus waivers for low-

    income students; application ratesfor federal aid are notoriously low,part-time enrollment rates are skyhigh, and too many students stillcant afford to stay in school andgraduate.

    This Administration has rightlymade college affordability a toppriority, from increasing need-based Pell Grants to making stu-dent loan payments more man-ageable, and we look forward to

    continuing to work with the Ad-ministration and Congress to in-crease college access and successfor students who need help themost.

    UHV leadership shift puts greater emphasis on enrollment, retention

    Vic Morgan, interim presidentof the University of Houston-Vic-toria, has promoted Jay Lambert toUHV vice president for enrollmentmanagement and student affairseffective Jan. 1.

    Dr. Lambert has a strong com-mitment to helping UHV becomea destination university, Morgan

    said. His expertise will be a bigboost to our goal of reaching anenrollment of 6,000 students by

    2025. This shift allows the univer-sity to put greater emphasis on en-

    rollment management and studentservices as well as freeing ProvostJeffrey Cass to focus on our aca-demic programs and the develop-ment of an academic master plan.

    Lambert came to UHV in spring2013 from Lamar University,

    where he worked as the assistantvice president for student engage-ment. Before then, he worked atvarious institutions, includingChristopher Newport University,Mount Saint Marys College andthe University of Evansville. Heearned his bachelors degree ineconomics from Southeastern

    Louisiana University, a masters incounseling and personnel servicesfrom University of Southern Mis-sissippi and his doctorate in educa-tional leadership from Lamar.

    In his new position, his majorgoals are to focus on increasingUHVs undergraduate enrollmentand improving student retention.The university will not be lling

    his previous position of associatevice president of student affairs.

    As part of the change, Lambert

    will report to Morgan rather thanCass, who also is vice presidentfor academic affairs. The shiftwill allow Cass and the deans ofUHVs academic schools to focus

    on the goal of offering as many asve new academic degrees a yearas part of UHVs 10-year plan.

    As we move forward, reportingto the president will allow more ofan emphasis on student affairs andenrollment, and let these areas de-velop their own identities as part

    of UHVs growth, Lambert said.Im excited about the directionthe university is going. Its a pro-cess that will take time, but UHVhas so much potential for growth. I

    am also very blessed to have greatdirectors and staff in all of our de-partments.

    Secure or insecure, which best describes your home?by Officer John Turner

    When addressing the topic of

    residential security there are sev-eral things we look for and recom-mend. We begin at the street to see

    how inviting your house may be toa burglar.

    Is your landscaping limiting thevisibility of your house? If so, youshould consider trimming it back.The recommendations are thatshrubs near windows be no tallerthan three feet with a space of sixinches between the top of the shruband the bottom of the window. If

    trimming the shrubs down to threefeet is not an option, you can trimthem up at least a foot from thebottom. Trees should be trimmedso that their lowest limbs are atleast seven feet above the groundand upper limbs dont allow some-one to climb onto the roof.

    You should have, at a minimum,a light at each entrance to yourhome. Adding ood lights with

    dawn to dusk or motion sensors to

    the corners of your house wouldadd even more illumination.Also look at your house number

    and make sure its visible from thestreet. It needs to be of a color thatcontrasts with the background ormade of reective material and be

    a minimum of four inches high.If there is an emergency at yourhome and you need the re depart-ment, EMS or police, you want

    them to be able to nd your house

    easily.Regarding fences; this one is up

    to you. Chain link fences improvethe visibility of the house whilereducing privacy, while privacyfences do the opposite. Regardlessof which you choose, secure thegate with a lock.

    The second area of concern isthe exterior of the house itself.Doors are probably the most com-mon entry point for burglars. Thesimplest and cheapest way to dra-matically increase the strength ofyour door is to replace the origi-nal screws used to attach the door

    hardware (which are usually long) with screws that are threeinches long. Doors should alsobe equipped with a deadbolt lock(double deadbolt if the door isnear a window) and a door viewer

    (peep hole) with a minimum eld

    of view of 190 degrees.Windows are the second most

    common entry point. It is recom-mended that you have secondarylocks on each window. A second-

    ary lock can be as simple andeconomical as a wooden dowelor piece of PVC pipe cut to sizeand placed in the window frame.Many other types of window locksare available as well. Sliding glass

    doors should be treated the sameas windows. And, dont leave akey to your home outside wheresomeone may nd it.

    The nal area of concern is the

    interior. Consider timers on inte-

    rior lights, especially when away.

    These may give the impression ofsomeone being home. Ive alsoseen timers with an additional mo-tion detector feature so if you havean indoor pet roaming around thehouse, it will add more random-ness to the lights.

    If a burglar defeats all of yourother security measures, this iswhen an alarm comes into play. Itwont prevent your door or win-dow from being forced open but it

    will alert you to an intruder. Ideal-

    ly it will also frighten the intruderaway or at a minimum reduce thetime they are in your home.

    You should also strongly con-sider creating an inventory of allof your valuables. Should anything

    be stolen in a burglary or damagedin a re or other disaster, you will

    have the information handy whenmaking a police report or insur-ance claim.

    The information most requested

    when investigating a burglary isthe brand, model name or number,serial number, any owner appliednumber (such as a Driver Licenseno) and value.

    Photographs or video of yourvaluables are recommended aswell, especially with jewelry.

    When speaking to people about

    home security, the topic of re

    safety comes up especially whendiscussing double deadbolt locks(one that requires a key inside thehouse as well).

    People are concerned that theadded security measures may ham-

    per their escape should there be are. I rst remind them to haveseveral properly working smokedetectors throughout their houseand to replace the batteries everyyear on the same date, regardlessif the batteries are still good. I thenask a question. What are you more

    worried about? Oftentimes the fearof something far outweighs the ac-tual chance of becoming a victimof it. If having a double deadbolt

    lock keeps you up at night becauseyoure worried about a re, thenuse a single deadbolt. If, however,having a single deadbolt keeps youup at night worrying about a bur-glary then use a double deadbolt.

    Pros and cons of reverse mortgagesby Jason Alderman

    Over the last decade, reversemortgages have been marketed asan easy way for seniors to cash in

    their home equity to pay for livingexpenses. However, many havelearned that improper use of theproduct such as pulling all theircash out at one time to pay bills

    has led to signicant nancial

    problems later, including foreclo-sure.

    In actuality, there are some caseswhere reverse mortgages can behelpful to borrowers. However, itis imperative to do extensive re-search on these products beforeyou sign.

    Reverse mortgages are specialkinds of home loans that let bor-rowers convert some of their homeequity into cash. They come inthree varieties: single-purpose re-verse mortgages, Home EquityConversion Mortgages (HECMs)

    and proprietary reverse mortgages.Who can apply? Homeowners

    can apply for a reverse mortgage ifthey are at least 62 years old, owntheir home outright or have a lowmortgage balance that can be paidoff with the proceeds of the reverseloan. Qualifying homeowners alsomust have no delinquent federaldebt, the nancial resources to pay

    for upkeep, taxes and insuranceand live in the home during the lifeof the loan.

    Consider the following pros and

    cons as a starting point for try-

    ing or bypassing this loan choice.Even though HECM loans requirea discussion with a loan counselor,you should bring in your own -nancial, tax or estate advisor tohelp you decide whether you havea safe and appropriate use for thisproduct.

    Pros of reverse mortgages: Theyre a source of cash. Bor-

    rowers can select that the amountof the loan be payable in a lump

    sum or regular payments. Proceeds are generally tax-free. Final tax treatment may relyon a variety of personal factors, socheck with a tax professional.

    Generally, they dont impactSocial Security or Medicare pay-ments. Again, important to checkpersonal circumstances.

    You wont owe more thanthe home is worth. Most reversemortgages have a nonrecourse

    clause, which prevents you or your

    estate from owing more than the

    value of your home when the loanbecomes due and the home is sold. Reverse mortgages may be a

    smarter borrowing option for somedownsizing seniors. With proper

    advice, some borrowers use themto buy new homes.

    Cons of reverse mortgages: You may outlive your equity.

    Reverse mortgages are viewedas a last-resort loan option and

    certainly not a singular solution tospending problems. You and your heirs wont get to

    keep your house unless you repaythe loan. If your children hope toinherit your home outright, try tond some other funding solution

    (family loans, other conventionalloan products) rst.

    Fees can be more expensivethan conventional loans. Reversemortgage lenders typically charge

    an origination fee and higher clos-ing costs than conventional loans.This adds up to several percentagepoints of your homes value.

    Many reverse mortgages areadjustable rate products. Adjust-able rates affect the cost of theloan over time.

    If you have to move out for anyreason, your loan becomes due. Ifyou have to suddenly move into anursing home or assisted-living fa-

    cility, the loan becomes due afteryouve left your home for a con-tinuous year.

    Bottom line:Reverse mortgages have be-

    come a popular, if controversial,loan option for senior homeown-ers. For some, they may be a goodt, but all applicants should get

    qualied nancial advice before

    they apply.

    Texas A&M System leads the way in fiscal responsibilityby John Sharp

    Respect is one of the core val-ues we help instill in every Ag-gie student, and we at The TexasA&M University System treat ourstudents, their parents, and the tax-payers of Texas with respect whenit comes to giving them value fortheir dollar.

    With the start of the 84th Texas

    legislative session and the inau-guration of a new Governor rightaround the corner, it is a good mo-ment to reect on the importance

    of scal responsibility by higher

    education systems, including TheTexas A&M University System.

    Three years ago, we decidedthat landscaping, food service andbuilding maintenance could bedone more efciently by the pri-vate sector than by the universi-ties in our system. We outsourced

    these services and over the next10 to 12 years will save more than

    $360 million, which we are rein-vesting into the core mission of our

    universities: outstanding teachingand life-changing research. In ad-dition, we formed public-privatepartnerships for construction proj-ects, meaning we no longer use taxdollars to build our dormitories.Our private partners do that for us.

    We also saw that administra-tive costs at American universitieswere increasing four to ve times

    faster than academic costs. There-fore, we reviewed all administra-

    tive costs and began freezing andcutting administrative positionswithin the system. To date, our ad-ministrative review has identied

    $230 million in savings opportuni-ties over the next ve years, sav-

    ings that will be utilized to enhanceour academics even further. Forexample, we can offer programssuch as engineering in places theyhave never been offered: in the RioGrande Valley, in West Texas, and

    in Stephenville. Today, our admin-istrative overhead is an astonish-ingly low 3.6 percent, which the

    Texas Higher Education Coordi-nating Board says is the lowest inthe state.

    One of our primary goals is toenhance our research mission. Ouragship, Texas A&M, is the larg-est research university in Texasand the entire Southwest. Through

    the Chancellors Research Initia-tive (CRI) and the Texas A&M

    University Institute for AdvancedStudies we have recruited Nobel

    Laureates and National Acad-emy members to our classroomsand labs to conduct research into,among other things, regenerativemedicine for rebuilding damagedtissue, the use of lasers in agricul-

    tural and environmental science,the modeling of new materials forenergy storage/production, and theinterconnected relationship be-tween agriculture, nutrition, anddisease prevention. We recently

    announced the expansion of theCRI from Texas A&M and PrairieView A&M University to includeall campuses across our System,

    paving the way for more cutting-edge research.

    We are doing all of this while

    keeping the dream of an educationat a top-tier university affordable:tuition and fees at Texas A&Mrank 10th in the state, behind La-mar University in Beaumont, forexample. Furthermore, we guar-antee the tuition and fees a studentstarts with to remain the same forfour years.

    At the Texas A&M System, we

    know why we are here: to createthe best universities in our nation,and we are well on our way. Noother university system in the stateor the country does more than wedo to respect taxpayers and theirhard-earned dollars while provid-ing a rst-class educational expe-rience. To our students, their par-

    ents, and all Texas taxpayers, ourmessage is clear: we want yourlegislators to know that when theysend your tax dollars to the TexasA&M University System, we will

    Do you want or need health in-surance? If so, by the time Revistade Victoria hits the news standyou will have only 30 days left to

    purchase health insurance. If youor a loved one has diabetes, heartdisease, need a transplant or goto the doctor often, Why are you

    procrastinating? Buy it! The lastday to purchase health insurancefor most Americans is February15. Act now, avoid the rush and

    avoid the tax penalty you will berequired to pay because you chosenot to purchase health insurancefor yourself or loved ones.

    I have been visiting with Victo-rians for the last two months. I hearmany of the same questions and domy best to provide my clients in-formation they can use to make aninformed choice. Today, I wouldlike to answer four the most com-mon questions and one of my fa-

    vorite. So here are ObamaCaretop 5 questions.

    Question number 5.What is thelast day that I can purchase healthinsurance for this year? Open en-rollment ends February 15 at 11:59

    p.m. However, there are a few ex-ceptions which may allow you topurchase insurance later this year.A couple exceptions are the birthor adoption of a child or the loss ofemployer provided insurance.

    Question number 4. My insur-ance premium is up 18 percent this

    year, why isnt my insurance af-fordable? Health insurance claimsare paid by those who are not sick.

    Most of my current health insur-ance clients insurance premiumsrange from $4,000 - $6,000 a year.

    I know three of my clients hadhuge claims (including heart by-pass surgery, an organ transplantand another who has receivedhospital/nursing care for over 4

    months). All together, these claims

    have cost over $2,000,000. Who

    is paying for these costs? We are.

    My three clients and thousands of

    others are the reasons in-surance premiums are go-

    ing up.Question number 3.Will my insurance cover

    my pre-existing illness?Yes. I had a client walk intomy ofce in December, he

    needed a hernia surgery inJanuary and not only willhis new Blue Cross policypay for his surgery but, dueto his lower income, he wasable to purchase a $500

    deductible plan for lessthan $90 per month. (Thereal cost of the policy was$415. You and I subsidized

    the other $325 through a

    tax credit made possibleby the efforts (non-efforts)

    of our federal governmentrepresentatives.

    Question number 2.Will I paya tax penalty if I dont purchasehealth insurance this year? Theo-

    retically, yes. In 2015 the penaltywill be the greater of $325 or 2

    percent of your families income.The child penalty is $162.50. (This

    penalty could be a political hotpotato. Stay tuned to see how the

    penalty will be enforced.)

    The number 1 question:Where

    do I buy ObamaCare insurance?Actually, there is no such thing asObamaCare. It doesnt exist ex-cept in the useless name calling of

    both Democrats and Republicans.Health insurance in the Victoriaarea is purchased on and offthe network from insurance com-panies such as Blue Cross-BlueShield of Texas, Assurant and

    United Healthcare. Some (a good

    number) Americans may qualify

    for a tax-credit in order to helpreduce their insurances monthlycost.

    When I was younger New Years

    Eve was my biggest party night.Now that Ive reached the mile-

    stone of 50+ years old its hard forme to even stay up past midnight.I made the extreme sacrice last

    week to stay up past 12 oclock so

    I could welcome in the New Year.I watched the David LettermanShow and was reminded of his in-famous Top Ten List.

    I picked up my pen and paperand came up with my own versionof a top ten list for our fair cityfor the upcoming year. Drum roll

    pleaseNumber 10: No more, burp,

    supper over-indulgences. I read arecent article on the health of thestate of Texas. According to thearticle, most of us need to makeimprovements in our eating choic-es. God knows I surely need tomake adjustments in my diet if Iplan to stick around much longer.It would be great if we promote ahealthier lifestyle for all Victori-ans, especially the food choices inour schools.

    Number 9:This past year I hadthe opportunity to offer my helpfor someone who needed a help-ing hand. In the past Ive helpednancially, if I was able, and thats

    cool. However, this past year Igave my time. Afterwards, I trulyhad a feeling of self-worth. I feltlike I was a small part of some-

    thing greater. In 2015 lets allmake an effort to be more givingwith our time.

    Number 8: Im going to makethe effort to be the best citizenI can be. That means voting inevery election. No littering andobeying all trafc signs, especially

    speed limit signs. Im going to doeverything I can to let law enforce-ment worry about more importantthings. In short, that means no in-

    dictments. Why dont we all tryto ease the burden on our policeand our county and city courts? Ihope local ofcials make the same

    pledge, no indictments. Lets usetaxpayer dollars for more worthycauses.

    Number 7: Times are gettingtougher by the day. That meansI have to tighten my belt. Put offbuying things that I dont reallyneed or cant really afford. Im

    sure many households are doing

    the same thing. Perhaps city andcounty ofcials can take note of

    their constituents nancial re-straints and reduce expenditures

    until our economy shows the oilboom is not about to bust. This isthe time to be frugal, even if thatmeans the people of Victoria nothaving a swimming park.

    Number 6: Showing favoritismis one of the worst things a parentcan do. In the upcoming year Imgoing to make sure I dont play fa-vorites. It would be nice if the cityand county didnt play favoriteseither. The tax dollars paid on thesouth side of Victoria are no dif-ferent than the taxes paid on thenorth side of Victoria. Maybe Imwrong but it seems like issues suchas repairing potholes and repairingcity streets, permit enforcement,

    removal of non-working vehiclesand beautication projects are

    awarded based on address, and Idont think thats fair. We all live

    in Victoria so lets make the entirecity something to be proud of.

    Number 5:Apparently we needmore classrooms, at the cost ofmillion dollars. I think the realdiscussion should be about im-proving the education programs atthe schools we have now. VISD

    should worry about dropouts andgraduation numbers that are drop-ping annually?

    Number 4: While Im on thesubject of VISD, it seems like

    teachers get the short end of thestick as far as pay is concerned.How do we expect to retain orhire the best if were not willing tocompensate those teachers that do

    the best? We need to start think-ing outside the box. Teachers areentrusted with the care of our mostvaluable asset, our children. Letswork to pay them accordingly.

    Number 3: Lets make a real ef-fort to educate our children aboutthe dangers of drugs. It seemslike people always want to trans-fer blame. I know when I was 10

    years old my parents knew exactlywhat I was up to. And when I didwrong they didnt have to blamesomeone else.

    Number 2:As Victorians we areblessed. To live in a city of thissize and have all the cultural ad-vantages we have at our ngertips

    is something all Victorians shouldtake full advantage of. From theTheatre Victoria to the VictoriaBach Festival, from the VictoriaBallet to the Ballet Folklorico, andfrom the Victoria Symphony to lo-cal Mariachi groups, just to name

    a few, we have it all. No one hasto waste time or money to drive toSan Antonio or Houston or Austin.

    Please make the effort to spendyour dollars locally.

    And Number 1: Its sad to sayfolks but by the looks of thingstimes are xin to get worse be-fore they get better. That meanswe need to help each other out.This isnt the time for politicalparty lines, or the time for socio-economic lines, much less the timefor cultural or racial lines. This isthe time when we need to count oneach other. If someone needs help,by all means take the time to helphim or her. In the words of one ofour greatest statesmen of all times,Benjamin Franklin, We either

    hang together or we will surelyhang separately.

    To facilitate international aca-demic exchanges between stu-dents and faculty members, theUniversity of Houston-Victoriahas signed an agreement with alarge university in northern China.

    UHV and Harbin Normal Uni-

    versity recently signed a Memo-randum of Understanding thatcould pave the way for researchcollaboration and student ex-changes between the two schools.

    The MOU is a starting point,which allows us to fast track alot of specic collaboration on

    programs, such as teaming up oncomputer science undergraduatestudies, said Yun Wan, a UHV

    associate professor of computerinformation systems and the direc-tor of computer science graduateprograms.

    UHV Interim President VicMorgan welcomed the chance towork with Harbin on mutuallybenecial academic goals.

    This partnership formalizationcould lead to a lot of exciting op-portunities down the line, Morgansaid. We take pride in preparing

    students to work in an increasinglyglobal marketplace. We look for-ward to talking with Harbin of-cials about ways to strengthen in-

    struction and research.Harbin Normal University is

    a training and scientic research

    base for talents of education, arts,humanities, social sciences andnatural science. The campus is lo-cated in the town of Harbin, whichis in Heilongjiang Province.

    The school was founded in 1951.

    Enrollment at Harbin is about42,000 undergraduate students,

    masters students and doctoralcandidates. The school has about2,030 full-time teachers includ-ing 1,080 professors and associate

    professors. Harbin has 26 schoolsand offers 61 undergraduate spe-cialties, more than 100 masters

    degrees and 47 doctoral programs.

    The MOU is in place throughOct. 31, 2019. Jeffrey Di Leo, deanof the UHV School of Arts & Sci-ences, initiated discussions aboutways Harbin and UHV could worktogether.

    Harbin Normal University hasan outstanding reputation for re-search, Di Leo said. They have51 research institutes, and research

    Comer un aguacate diario comoparte de una dieta saludable para elcorazn moderada en grasa y parabajar el colesterol, puede mejorarlos niveles de colesterol malo enindividuos con sobrepeso u obesi-

    dad, de acuerdo con una nueva in-vestigacin publicada en el Diariode la American Heart Association.

    Los investigadores evaluaron elefecto que tienen los aguacates enlos factores de riesgo cardiovas-culares tradicionales y nuevos, alreemplazar el promedio de los ci-dos grasos saturados de una dietaestadounidense por los cidos gra-sos insaturados de los aguacates.

    45 pacientes saludables, con

    sobrepeso u obesidad de entre 21y 70 aos de edad siguieron tres

    Victoria College president announces retirement

    Victoria College President Dr.Tom Butler announced his retire-ment Tuesday.

    Butler has served as presidentof Victoria College since Sept.

    2008 and will continue in this rolethrough the end of August.Ron Walker, chairman of the VC

    Board of Trustees, praised Butlerfor his six years of service to Vic-toria College.

    Dr. Butlers leadership will bemissed by Victoria College as wellas by Victoria and this region,said Walker. Six years ago, he

    assumed leadership over an insti-tution which was an outstanding

    education facility. With the chang-ing times and demands, he hastaken Victoria College to the pointwhere it is meeting the educationaland training needs of today andready to tackle the needs and de-mands of the future.

    Throughout his career, Dr. Gar-cia served as U. S. Ambassador to

    pointed to the U. S. Civil RightsCommission. In 1990, John Paul,

    II inducted Dr. Garcia into theEquestrian Order of Pope Grego-ry the Great, the highest honor alayperson may receive from theCatholic Church.

    An advisor to six presidents, Dr.Garcia was awarded the Medal ofFreedom, the nations highest hon-or, by President Ronald Reagan in1984. He was the rst Mexican

    American to receive the medal.Dr. Hector, as he was called by

    his friends and patients, died inJuly 1996 in Corpus Christi at the

    age of 82. Every year in Galves-ton there is a Cultural CompetenceAward Ceremony that honors hislegacy, commitment and serviceby recognizing a current UTMBMedical Student of Medicine,

    Nursing, and Allied Health Sci-ences.

    GARLIC-ROASTED HAM1 (3 to 4-pound) center-cut

    cooked ham*

    2 to 4 cloves garlic1/3-cup molasses

    2 teaspoons freshly ground blackpepper

    1. Heat oven to 300F.

    2. Peel and slice garlic3. Using the tip of a paring knife,

    cut slits in ham roast. Insert garlicslices into slits.4. Stir together molasses and pep-per in small bowl. Spread molas-

    ses mixture over ham. Wrap hamwith heavy-duty foil5. Place foil-wrapped ham inroasted pan. Roast for 11/2 to 2

    hours or until internal temperatureas measured with meat thermom-eter is 140F.

    6. Serve warm or refrigerate untilcompletely chilled. Slice for sand-wiches or cube for salads or maindishes. Makes 10 to 14 servings.

    HOLIDAY STUFFED PORK LOIN1 (6-ounce) package stufng mix

    2 medium-sized apples, peeled,cored and nely chopped

    1/4 cup dried fruit, such as cran-berries, cherries, and raisins orchopped apricots1/2 to 1 cup chopped nuts,

    toasted*3 tablespoons chopped fresh sage

    or 1 tablespoon dried sage leaves1 (4-pound) center-cut pork loin,

    butter ied1-teaspoon salt

    1/2 teaspoon freshly ground black

    pepper

    1. Preheat oven to 400F (205C)

    2. Prepare stufng mix as directed

    on package. Remove from heat,stir in apples, dried fruit, nuts andsage.3. Unroll meat; place stufng mix-ture evenly over meat. Roll up

    meat, starting at one of the longsides, to enclose lling. Place,

    seam side down, on foil-coveredbaking sheet sprayed with cookingspray. Season with salt and pep-per.4. Bake 45 minutes or until meat

    thermometer reaches 155F (70C)

    when inserted into the thickest partof the meat. Remove from oven;let stand 10 minutes before slicing,

    so the meat will be nice and juicy.

    Its an important step before slic-ing. Makes 16 servings.

    5. *To toast nuts, place in a shal-

    low baking pan. Bake at 350F(175C) for 10 to 15 minutes or

    until nuts are lightly browned, stir-ring occasionally. Cool.

    CABBAGE WITH CARROTS ANDCHEESE SAUCE6 medium carrots, thinly slicedSalt and Pepper

    1/4 cup butter, divided (4 table-spoons)1/2 cup water

    1 medium head cabbage, washedand chopped2 tablespoons our

    1-cup milk

    2 tablespoons prepared mustard1/2 cup grated Cheddar cheese

    1. In a saucepan, combine carrots,

    1/2 teaspoon salt, a dash of pepper,

    2 tablespoons of the butter, andthe 1/2 cup water. Bring to a boil;

    cover, reduce heat, and simmer

    until carrots are tender. Drain offexcess water.2. In another kettle, cover choppedcabbage with boiling salted wa-ter; boil uncovered, 5 minutes.Melt remaining 2 tablespoons ofbutter in a saucepan and blendin the our. Gradually add milk.

    Cook, stirring, until sauce is thick-ened. Season with salt and pep-per to taste. To the cabbage, addprepared mustard, the sauce, and

    cheese. Blend together over lowheat. Arrange cabbage on servingdish, surrounded by cooked car-

    rots, Serves 6.

    MASHED POTATOES WITH BACONBITS4 pounds white potatoes, peeled

    and quartered1/2 cup (1 stick) unsalted butter,

    room temperature1 small onion, nely chopped

    (about 1 cup)

    1 stalk celery, nely chopped6 slices bacon, red until crisp,

    drained and diced1-cup milk (more or less)

    Salt and pepper to taste

    2 tablespoons chopped freshparsley

    1. Cook potatoes in lightly salted

    boiling water until tender, about

    20 minutes. Drain; return to potand keep hot.2. Meanwhile, heat 2 tablespoonsof the butter in a skillet. Add theonions and celery and saut untilsoftened, about 5 minutes. Addonions and celery to potatoes. Addremaining butter and mash untilthe lumps are gone.3. Add milk gradually, whipping

    well until desired consistency.Add bacon pieces and parsley; stir

    well. Taste for seasoning; add saltand pepper as needed.4. Serve immediately or reheat

    over low heat, stirring well andadding milk if needed.
