2014Happy New Year!
President Francis Neir III
Club Members –I am truly delighted to be President of your club. I have been looking forward to it over the past year, and have received great support and tu-telage from outgoing President, Tom McCarr. If you haven’t done so al-ready, please thank Tom for his won-derful leadership this past year.
One of Town and Country Club’s best events is the Annual Meeting and Dinner in December. It truly highlights that Town and Country Club is “The Club of Good-fellow-ship”. One of the remarkable things about the dinner is that when the band starts to play, everyone gets up
and dances. And they keep dancing the rest of the night. If you haven’t attended the Annual Meeting and Dinner, please make a point of add-ing it to your holiday calendar.
At some point over the winter, I sug-gest that you ski, snowshoe or walk the golf course. With leaves off the trees, I think you will be amazed at the vistas of downtown Minneapo-lis, Bloomington, and south past the airport. You don’t need to wait for spring to enjoy the course.
I know that we have just started into winter, but the Town and Country staff is already planning for spring. As part of this process, we plan to host a Town Hall Meeting in early March. As of now the topics of this meeting will be to review the progress of the “Bunker Project” and present the plan to complete this project by June 30, 2014. We will also explain the tree removal and replacement plan for the next three years.
This will be an exciting year for me as Club President. I look forward to seeing you around our Club.
Sincerely,Fran

New Event!! T&C Medallion Hunt and Ping Pong TournamentWith a nod to our Winter Carnival roots, we are hosting our first Me-dallion Hunt at T&C. From January 28 through January 31, Members can find daily clues posted on the website and at the Front Desk. The one lucky Member to find the medallion will receive $500 in food and beverage credit at the Clubhouse. The week’s festivities will also include a ping pong tournament.
Father & Daughter Winter BallIt is a universal truth that a Father holds the key to a daughter’s heart!
Dads don’t miss this extraordinary night. On Friday, January 24th bring your Princess or Princesses to this wonderful annual event. Enjoy din-ner, dancing and a special picture with your precious little girl or girls. They grow up too fast. Make plans now!
Annual ClosingThe Club will be closed beginning Monday, February 17, 2014 and will open Tuesday, March 4, 2014. During this time, the Clubhouse will receive its annual deep cleaning. Don’t worry, you won’t miss your work out. We have reached out once again to the
University of St. Thomas. For the past two years they have allowed us to use their Anderson Athletic & Recreation Complex. Look for a spe-cial mailing in the coming weeks that will give you all the details.
Patio Fire PitA lot of members and families have been taking advantage of the fire pit located on the patio adjacent to the putting green. The pit is surrounded by comfortable Adirondack chairs and a couple benches. It is the perfect place to enjoy hot chocolate, s’mores, or cognac and a cigar.
Roster UpdateIt is that time of year again. You will receive your annual roster update form in the mail the first week of February. Forms will also be available on-line and at the Front Desk. Please take a moment to fill it out and send it back as soon as you can. It is our goal to have the 2014 Roster updated and available on April 1.

Chef ’s Corner John Kain, Executive Chef
The New Year is upon us and I want to take the opportunity to
thank all of you for your use of the Club’s dining facilities. Your contin-ued patronage and support speaks volumes about the vitality of your Club. I have included an excerpt from an article by the national restau-rant association outlining food trends for 2014. I am proud to say that we are on the cutting edge and have embraced many, if not all, of them to some degree.
For its “What’s Hot in 2014” fore-cast, the NRA surveyed nearly 1,300 members of the American Culinary Federation in October and Novem-ber and asked them to rate 258 items as a “hot trend,” “yesterday’s news,” or a “perennial favorite” for 2014.
Once again, locally sourced meat, seafood and produce remain at the top of the trends, along with envi-ronmental sustainability and chil-dren’s nutrition.
Gluten-free food moved from 9th place to 5th place on the annual top 10 list and was joined, at 8th place, by non-wheat pasta — made with flour such as quinoa, rice and buckwheat — which jumped up from 12th place last year.
“Today’s consumers are more inter-ested than ever in what they eat and where their food comes from, and that is reflected in our menu trends
research,” Hudson Riehle, senior vice president of the National Restaurant Association’s research and knowledge group, said in a statement. “True trends — as opposed to temporary fads — show the evolution of the wider shifts of our modern society over time, and focus on the prove-nance of various food and beverage items, unique aspects of how they are prepared and presented, as well as the dietary profiles of those meals.”
The trends that made the biggest leap in the survey were nose-to-tail/root-
to-stalk cooking (now at 11th place), pickling, ramen, dark greens and Southeast Asian cuisine. The ones with the largest drop on the “hot trend list” were Greek yogurt, sweet potato fries, new cuts of meat (such as the pork flat iron or the Denver steak), grass-fed beef and organic coffee.
The top five alcohol trends were micro-distilled/artisan spirits; locally produced beer/wine/spirits; onsite barrel-aged drinks; “culinary cock-tails” that use fresh or savory ingre-dients or other items usually found in kitchens rather than behind the bar; and regional signature cocktails.
When asked which current food trend will be the hottest 10 years from now, the chefs put environmental sustain-ability at the top of the list, followed by local sourcing, health/nutrition, children’s nutrition and gluten-free cuisine.
Top 10 Predicted Menu Trends for 2014

Turf TalkWilliam R. Larson, CGCS
Throughout this past season you may have noticed that your Turf-grass Management Team was very busy. In the hustle and bustle of constructing new bunkers, several other changes occurred as we moved from hole to hole. Supplemental irrigation and drainage was added, cart paths were removed to increase playable area in congested areas, and low-input fescue areas were installed in an effort to decrease the amount of maintained turf and increase aesthetic appeal. One thing that may have been particularly noticeable to
some was the removal of several trees. While many of these trees interfered with the installation of new bunkers, many of them were also removed due to their proximity to certain playing surfaces. Here at Town & Country Club, the deleteri-ous effects of trees near greens have been discussed several times and through various media such as the Grounds Blog on the club’s web-site, Twitter (@tcturf), and previ-ous newsletters. We have included some links to articles featured in the USGA Greens Section Record for
those who are interested in learning more about the reasoning behind removing these particular trees.

News From Your Golf Pro
Ryan Rindels, PGA Head Golf Pro
PREPARE FOR NEXT SEASONWith this coming golf season in mind, there are a few things you can do to prepare yourself for golf success in 2014. First, it’s amazing what a little exercise and stretching can do for your golf game. Exer-cise can increase your stamina and strength, making you less likely to fade near the end of a round. And although we’re somewhat limited in how much strength we can add, flex-ibility is probably the easiest aspect to improve. It only takes minutes a day! Golf is a game of motion, and stretching helps attain a wider range of motion. Greater range of mo-tion will lead to greater power, better shots, and lower scores. The T&C fitness center should be a regular stop on your way to or from work!
Next, check your equipment. An equipment evaluation is something

that should be done every spring. Whether you’re in the market for new equipment or not, checking your grips should be the first step. Worn grips become slippery, causing you to increase your grip pressure and can lead to muscle tension, ultimately causing improper clubface rotation. To put it simply, you’ll be slicing the ball more with worn grips. For more information on grips, contact the Professional Staff this spring and have them checked out.
GOLF SHOP MERCHANDISEJust because The Golf Shop is closed doesn’t mean you can’t special order the newest golf equipment, golf apparel, or stock up on essentials for your winter golf needs. Golf balls, gloves, hats and accessories are all available for purchase at any time. Email me anytime and we’ll get you what you’re looking for.
BAG STORAGEIf you need to get your golf clubs out of bag storage this winter, con-tact the Front Desk or email me and we’ll arrange for them to be pulled for you.
WINTER GOLF LESSONSWinter is a great time to make swing changes or work on the moves you were taught last year. The Profes-sional Staff will again be giving les-sons at Goodrich Golf Dome (Ma-plewood) this winter. If interested, please contact your Professional of choice and get an early start on the golf season.

T&C Employee SpotlightSara Evens
Assistant Golf Professional/Teaching Professional
Started at T&C: Spring 1999
Background:Sara was awarded a full scholarship to play golf at the University of Minnesota, where she majored in Speech Communications. After graduating from the U of MN, she spent four years on the Futures Tour then joined the staff at T&C.
Memory from the early days:Sara is originally from Grafton, a small town in North Dakota. One memory that stands out from her early days at T&C is trying to adjust to private club etiquette and addressing people as “Mr.” and “Mrs.” Things were a little more informal in her hometown!
Favorite thing about working at T&C:Sara’s favorite part of her job is working with the ladies 9-hole and 18-hole groups. She also looks forward to the Member Guest Invitational Golf Tournament every year. Other Interests:In both the spring and fall Sara is the Head Women’s Golf Coach at the University of St. Thomas. In her free time, Sara loves to tend her flower gardens and spend time with family.
Thank you Sara for your hard work and dedication to the Club!
You’ve had to fight the lines at the mall, you’ve decided who’s been naughty and nice and now we’re hoping that you may have saved a bit of your “holiday allowances” because the wait is over! Town & Country Club is looking to reduce some of its wine inventory while offering our membership some great wines at dollars over wholesale prices.
There are a few things to note with this sale opportunity:1 - Due to our liquor license; all wine must be consumed while at the Club….we can serve it in any of the Club’s dining areas for breakfast, lunch or dinner (Purchases will be stored in the Club’s wine cellar).2 - There is no corkage fee on any service of wines purchased from this list.3 - Due to limited quantities, all wine purchased is based on a first come-first serve basis (Quantities available for sale are in the column to the right of the price).4 - For tracking purposes, all orders must be placed via email to [email protected] - The wine sale will begin on Tuesday, January 7, 2014 and end on Tuesday, January 28, 2014.6 - Periodic wine availability updates will be available via email request.7 - All questions, comments or concerns can be directed to Mike Ostlund, Assistant General Manager at the above email.

T&C Medallion HuntThe first annual T&C Medallion Hunt kicks off on January 28. Throughout the week, clues will appear daily on the T&C website and at the Front Desk. The lucky member who discovers the medallion will receive a $500 credit for food and beverages at the Clubhouse! The week’s festivities will also include a ping pong tournament and lots of other fun activities.
Cross Country Skiing at T&CThe cross country skiing trails are groomed and ready for action. We are excit-ed to once again offer the trails to the membership as an added way to enjoy the beauty of the golf course during the winter months. Typically, we will groom the courses two times per week.
For grooming updates, follow Bill Larson on Twitter. The T&C Ski and Tea group coached by Minnehaha Academy Nordic Ski coach, Anne Rykken, meets once a week for a lesson and a ski on the T&C Trails. Skiing is followed by tea (or other warm beverage) and lunch in the T&C Club-house. Classes run from January 7 through February 11. Contact Liz Schoeneck-er at [email protected] for more information.
Anne Rykken also offers private ski lessons at Town & Country Club. If you are interested in private lessons, contact her directly at 651.283.9896 or [email protected].
Ski Under the StarsMark your calendar for Saturday, January 25, as T&C hosts a night of cross coun-try skiing, an ice bar on the patio, and plenty of winter cheer! Watch your emails for more information to come.
