JOB DESCRIPTION Job Title: Commis Chef Department: Kitchen Reporting to: Head Chef / Second Chef Hours: Full time 37.5 hours per week Salary: £16,000 pa Contract: Permanent Location: Avon Tyrrell

KEY PURPOSE To ensure catering delivered at Avon Tyrrell meets and exceeds the expectations of all our guests and supports the efficient operation of the catering services provided by UK Youth at Avon Tyrrell. Demonstrating high levels of catering, dietary knowledge and customer service, thus helping to maximise Avon Tyrrell’s income and reputation in support of the UK Youth’s Mission and charitable objectives.

KEY TASKS 1. The Chef should:

a) Prepare, cook and serve as required whilst complying with policies on quality, quantity, food hygiene and portion

control; b) Monitor the quality of service, health and safety, personal and food hygiene; c) Ensure the kitchen work areas and rooms are kept clean and tidy at all times; d) Maintain a high standard of health and safety, personal and food hygiene within the kitchen and to keep up to date

with current legislation and ensure these procedures are adhered to; e) Ensure all staff when working in the kitchen meet Health and Safety, personal and food hygiene requirements; f) Ensure kitchen staff adhere to the Avon Tyrrell working practices when responsible for supervising them; g) To continually assist in improving the standard of kitchen service and support; h) Support the operation of a small cafe service for site guests; i) Deputise for the Second Chef as required.

2. To undertake administrative tasks as required in support of the Kitchen Department. This includes:

a) To check all deliveries and invoices are correct as per Avon Tyrrell Operating Procedures when duty chef; b) To assist in completing an annual stock check of all equipment and food.

3. To provide general kitchen support and interaction between different departments in support of the daily operations and

the development of Avon Tyrrell. This includes: a) Liaison with Guest Services Staff over catering lists and special dietary needs; b) Liaison with Activities Staff over their requirements and client needs; c) To report damage and record any damage and basic maintenance in the maintenance book; d) To put forward suitable suggestions for improvements to the kitchen and dining room for guests, the working

practices for the department and any other ideas that would improve the efficiency of the department; e) To undertake and attend training courses as and when required; f) To assist in the general maintenance of the kitchen and dining room fixtures and fittings; g) To ensure the dining room, servery and all area of the kitchen plus equipment are maintained to the highest

standards of cleanliness and hygiene.

5. To maintain good standards of Health, Safety and Hygiene in all working practices and to assist in keeping records of checks carried out. To help with keeping up to date any risk and COSHH assessments.

6. To help supervise any seasonal staff or students/work placements, so they can carry out the tasks required effectively and efficiently.

7. To cover regular weekends on a rota with other kitchen staff.

GENERAL Always to act as a positive ambassador for the organisation, contributing to the effectiveness of meetings, the sharing of

knowledge and experience, and the development of UK Youth and its profile. Attend one to one meetings and annual appraisals with line manager Participate proactively in staff meetings, team meetings and other meetings as required. Work effectively with colleagues to achieve objectives Support colleagues from other teams to achieve their objectives raising the profile of the organisation using all marketing

and communications mechanics/tools Take reasonable care of his/her own health and safety and for that of others who might be affected by his/her work, as

required by law and described in the relevant operating procedures and policies for his /her area of work. Undertake any other duties and reasonable requests that are in keeping with the nature of this post.

Our History UK Youth was founded in 1911 as the National Organisation of Girls Clubs. It became the National Association of Girls Clubs and Mixed Clubs in 1944 and the National Association of Youth Clubs in 1961. In 1987, it became known as Youth Clubs UK and adopted its current title UK Youth in 2001. In 2010-11 it celebrated its centenary year.

Experience the benefits of outdoor learning We sit at the heart of a network of regional youth associations and national partners. We support them through training and publications and providing a wide range of free resources and activities.

UK Youth has developed a sector leading reputation for working with corporate funders and attracting major investments for national projects that are delivered locally through our network members, with support from our national staff.

UK Youth’s projects create opportunities for young people to be actively involved in the decision making process. Many of our biggest national projects are youth led and young people make up over 15% of our Trustee Board. UK Youth Voice, our national youth steering group ensures that we put young people at the heart of everything we do. This steering group of 16-25 year olds plays a major role in governing the charity and shaping the development and delivery of our programmes.

UK Youth has offices in London but our historical base is our Outdoor Activity Centre at Avon Tyrrell in the New Forest National Park. Over 17,000 young people each year experience the opportunity to learn outside the classroom.

The Team UK Youth currently employs 80 skilled and dedicated staff across England. Our staff are primarily based between Avon Tyrrell and our London Office, with a number of home-based staff across the country.

The Trustees We have a highly committed Board of Trustees which includes three young trustees from our youth steering board UK Youth Voice, CEO’s of regional and National Youth Organisations, corporate executives, academics, and finance professionals.
