• To ensure a green lawn in the summer, take the time this spring to rake your lawn so sunlight and water can filter down to the roots. Reseed any bare patches so that new blades of grass will be in peak growing season for a lush lawn.

Cooking techniques that maximize your meats flavour(NC) When it comes to cooking meat there is no mistaking the unique taste that grilling offers aspiring chefs. While the thought of slapping a strip loin steak, baby back ribs, or salmon fillet on the grill still makes any meat lover salivate, the following cooking techniques will take your meats flavour to another level:

Turn your gas grill into a smoker: Combining the cooking power of a Broil King gas grill and the right tools allows you to add the smoky flavour of hickory, mesquite, and whiskey to your meat without purchasing a smoker. When you smoke a cut of meat, give it plenty of time so it can absorb the flavour. Soak the wood chips in water for at least half an hour and then drain them. There are several different types of Broil King wood chips available. Use a stainless steel or cast iron smoker box placed under the cooking grids so the chips will smolder and smoke.

Planking: Cooking meat and seafood on a

wooden plank is a simple technique that will give your meat additional flavour. Broil King offers cedar, maple, and oak wine barrel grilling planks. Just soak the plank in water, juice, or beer for an hour and pat it dry. Place the seasoned meat on the plank and then onto a medium low-temperature grill.

Cedar Plank SalmonINGREDIENTS:

• 1 6lb salmon fillet, skin on• 1 untreated cedar plank, sized to

accommodate salmon fillet• Asian Ginger Marinade• ¼ cup white wine• 1 orange, finely grated zest and juice• 1 tbsp sesame oil• 1 tsp ginger, grated• 1 tsp honey• 1 tsp Asian chilli sauce• salt and pepper to taste

DIRECTIONS:

To begin with, soak a cedar plank in a con-tainer of water for at least an hour. You may need to place a weight on top to keep the wood immersed.

Meanwhile, combine ingredients for mari-nade in a large, flat shallow glass dish and marinate the salmon fillets, skin-on, in the refrigerator for half an hour. Preheat barbecue on HIGH for 10 minutes.

Pat dry plank and oil the upper side. Place plank directly on the grids and heat with the lid closed until the plank begins to smoke. Place the salmon, skin side down in the middle of the plank and grill until just opaque at the thickest part. A 6 lb. fillet may take 30 minutes.

Choose your materials carefully: Even in small projects, material selection has a big impact. Explore alternative flooring options such as cork or bamboo, which can be manufactured in a much more sustainable fashion than hardwood. Formaldehyde used to be a common ad-ditive to building materials and house-hold products, despite its toxic nature. Today, formaldehyde-free and VOC-free cabinets and other products are available in a wide variety of styles – meaning you don’t have to sacrifice style to ensure your home stays free of unnecessary toxins.

Yo-Yo Dieting:

SO WHAT IS THE ANSWER?

Albert Einstein said it best: In-sanity is doing the same thing over and over and expecting

different results. Although he wasn’t talking about yo-yo dieting, I can’t think of a better context for this definition.

Yo-yo dieting was coined by Dr. Kelly D. Brownell at Yale University to describe the weight loss followed by weight gain cycle, up and down, much like a yo-yo. You are initially successful at losing weight quickly but are unable to maintain the weight-loss long-term. The weight starts creeping up again, until you’ve regained it all back. You then look for another diet to lose the regained weight, and the cycle contin-ues. And yet, millions of women try one diet after another, losing weight and then regaining it, over and over hoping that this time will be the last.

The dieting industry is a big business. The public spends 60 billion dollars a year on weight loss diets, programs, books, pills, etc. For the majority of the people, none of these “solutions” are successful long-term. An average woman can spend 17-30 years of her life trying to lose weight, and may lose her full body weight over 9 times!

So if dieting is not the answer, what is? Turns out we have to dig a little deeper, and really understand what is happening inside your mind, not just your body. Your mind is divided into two parts: the Conscious Mind and the Unconscious Mind. Both are important, but we usually just use one when trying to lose weight.

The Conscious Mind is only 10% of your total mind and focuses on the NOW.

It can also be described as the ‘Goal Set-ter’. You use this part of your mind when you problem solve, and every time you decide to embark on a new diet.

The Unconscious Mind is the other 90% of your mind (the ‘Goal Getter’) and this is where all of your emotions, beliefs, and memories are stored. Your Unconscious Mind can be thought of as a computer which operates only on the programming that has been created based on your life experiences. It stores both positive and negative programming.

It is possible that your Unconscious Mind’s programming believes that you need to overeat to feel loved and avoid feeling stress and negative emotions. Perhaps as a child you were forced to eat and were praised by finishing every-thing on you plate. Unconsciously, in order to feel loved and validated, you have to overeat. The main objective of the Unconscious Mind is to keep you safe. Because it’s 90% of your mind, it runs the show! This programming will always override what the Conscious Mind sets as a goal. That is why your diet only works for the short-term and the weight always comes back. You are focusing on the diet consciously, and are unaware of your programming.

Permanent success can be achieved only when your unconscious program-ming begins to match your conscious goals. retention. Also, heavy duty cooking grids combined with the right burners will give you full surface searing, instead of a searing zone. The Broil King’s heavy duty cast iron and their 9 mm thick stainless steel rods are the heaviest available and provide superior heat retention that delivers searing heat across the entire surface.

Gas or charcoal?

One of the most common grilling debates is gas or charcoal. A common misunderstanding is that barbecue flavour comes from the charcoal, when in fact the great flavour associated with grilling comes from fats and juices dripping onto a hot surface. When food juices hit a hot surface they vapourize and permeate the food with that unmistakable barbecue flavour. Charcoal is tasteless and odorless, but it does a great job of vapourizing the juices of food being cooked. On a gas grill you want to look for a heat medium that covers the entire cook box so that it will capture and vapourize all of the food juices. Grills with heat tents or gaps in the vapourizer will allow food juices to drip through to the grease tray, meaning lost flavour.

Heat Retention and Control

The heart or engine of a grill is the burner system. Burners are typically subject to much abuse; high temperatures, corrosive food acids

and salts; rapid temperature changes and con-densation. You want to look for a thick burner with flame ports on the side for optimal heat distribution (two sources of flame) and to reduce the risk of the ports getting clogged with food drippings. Most grills offer single tube burners. This burner design could result in more heat at the back vs. the front due to the flow of gas being concentrated at the back of the burner. There are burners with a tube in tube or dual tube design that distribute the flow of gas evenly front to back resulting in more even heat distribution.

Looks can be deceiving
