Traditional Potato Latkes 6 baking potatoes 1 large onion, chopped fine 1/2 cup sour cream 1 tsp salt 2 eggs 1/2 tsp pepper 1/4 cup flour 1/2 cup bread crumbs Oil for frying

DIRECTIONS: Mix onion, sour cream, salt, eggs, pepper, flour, and bread crumbs in a large bowl. Peel and shred potatoes in food processor with shredding blade. Squeeze dry. Immediately add half of potato shreds to the egg mixture and mix well. Chop remaining half with steel blade, squeeze dry again and mix into the egg mixture. Fry latkes in oil (350 degrees) until golden on both sides. Serve hot.

2-3 tbsp olive oil

1/3 cup minced shallots

1/3 cup balsamic vinegar

1 cup good quality chicken stock

1-2 tbsp Dickinson’s Strawberry Preserves

4-6 tbsp cool sweet butter

2-3 tbsp chopped parsley

Salt and pepper to taste

DIRECTIONS: Heat a large sauté pan with olive oil, add shallots and cook 1 minute. Add vinegar and stock and bring to a boil. Reduce liquid until 3-4 tbsp. Add Dickinson’s Strawberry Preserves and butter 1 tbsp at a time until the sauce is thick and creamy. Adjust seasoning and add parsley. Serve sauce over ham.

traditions TIPS: When baking your ham, place the meat cut side down and cover the ham with a foil tent. This preserves the moisture in the ham. The foil is removed for the last 15-20 minutes of cooking. To burnish the glaze, turn your oven to broil for 5 minutes. Make sure to watch the ham carefully, because these glazes can burn very easily.

10 basil leaves, chiffonade

2 tbsp chopped Italian parsley

4 cloves garlic, roasted and mashed

1 clove garlic, minced fine

12-15 heavy dashes of Tabasco sauce

Salt and pepper

DIRECTIONS: Mix and heat all of the ingredients together in a sauce pan, except lobster. Keep warm.Check for seasoning, adding in salt and pepper if needed. Pour into a serving bowl and add in sliced lobster. Garnish with basil.

DIRECTIONS: In a large saucepan, over medium to high heat, bring the beer and tea leaves to a boil; add in bay leaf, salt, pepper and minced shallots. Strain into a new sauce pan. Place lobster in saucepan and cover. Reduce heat and simmer for 12-15 minutes. Remove cooked lobster and serve with crusty French bread.

DIRECTIONS: Rinse mussels under cold water; remove beards from mussels and any other materials from shell, making sure mussels are tightly closed. Combine white wine and water with Good Earth Tea-Green Tea Lemongrass, saffron, ginger, garlic, lemon peel and salt. Bring to a simmer; add in cleaned mussels and cover. Cook for approx. 4-5 minutes (shaking often) until mussels open up. Discard any mussels that do not open. Remove cooked mussels from pot with a slotted spoon, add butter and swirl into broth. Adjust seasonings with salt and pepper. Pour seasoned broth over mussels; serve with crusty French bread.

To test for ripeness, use the typical thumb test for pears at its stem end. Bosc pears will yield to slight pressure somewhat less than other ripe pears because of their extra firm texture. To store, keep at room temperature until ripe and then refrigerate.

1/3 cup brown sugar

1/4 cup heavy cream

Cinnamon sticks for decoration

DIRECTIONS: Preheat oven to 400 degrees. Heat an oven-to-table sauté pan. Add butter, brown sugar, lemon juice and salt and bring to a boil. Add pears, sliced side down. Place in the oven and roast 10-12 minutes. Remove from oven, turn pears and return to the oven and continue to roast 10-12 minutes or until pears are golden brown and syrup is amber. Remove pears from oven; mix to blend. Cool pears slightly and place a cinnamon stick down the core for decoration. Serve with vanilla ice cream. Top with crumbled Pirouline wafers.

TIPS: For a healthy alternative use honey instead of brown sugar and serve over plain or vanilla Greek yogurt!

6 tbsp unsalted butter, melted

1/3 cup light brown sugar

1/4 cup rolled oats

1/2 cup walnuts, coarsely chopped

DIRECTIONS: Set a rack in the middle level of the oven and preheat to 375 degrees. • Butter a 9-inch pie pan and set it aside. • Peel, halve, and core the apples and slice them about 1/4-inch thick across the core. • Place the apples in a large bowl and add the remaining filling ingredients except the butter. Toss well to mix. • Place half the sliced apples in the prepared pan and dot with half the butter. Repeat with the remaining apples and butter. • For the topping, mix the butter and brown sugar in a medium bowl. • Add the crushed Walkers shortbread cookies, oats, and walnuts. Fold everything together until evenly mixed. • Scatter the topping on the apples in the pan and gently press it into place. • Bake the crisp for 45 to 50 minutes, or until it is bubbling and the topping is a deep golden color. • Cool on a rack and serve warm or at room temperature with whipped cream or ice cream.
