PROJECT PROPOSAL: BREAKFAST CURRICULUM

American schools need nutritional education Childhood obesity on the rise Can lead to chronic disease: hypertension, heart

problem, renal failure, and diabetes

According to pediatricians, Giovanni, Agostoni, and Shamir Breakfast effects children’s ability to learn and

mood

BACKGROUND

American schools do not make nutritional education a standard for schools Suzuki and Rowedder wrote a study about

nutritional education They stated Americans are getting more education

than other countries

Schools and some districts have made their own changes Some New York schools are providing breakfast

in the classroom before class begins North Carolina has an integrated nutritional

curriculum

RESEARCH DESIGN

Combine the two and make a breakfast curriculum Students come to school, eat breakfast, and

learn about the food they are eating

Give students a place to focus, eat, and learn

Ultimate goal: to give children a strong knowledge about food, where food is grown and how food is processed, and to promote healthier eating habits Hopefully see a decrease in childhood obesity

IMPLEMENTATION

Small goals lead to bigger success

First year: pilot program Meet with the school principle and cafeteria

supervisor Parental consent and potential volunteers Alternating months Document observations /get feedback from

parents

Second year: single classroom implementation

Summer Evaluate success, failure, and make changes Ask colleagues to be a part of a committee

Work on making curriculums for other grades

Long term The third year, bring the curriculum to the school

board Every year add more classes

One class – three classes of the same grade – complete grade

Then add additional grades each year A few years later, the entire school has an

implemented breakfast curriculum
