L’azienda nasce nel 1996 grazie a Silvano Buccolini e a sua mo-glie, Giuliana Papa, da cui l’acronimo Si.Gi.Silvano proviene dall’esperienza dell’Istituto Tecnico Agrario e provvede al recupero delle antiche varietà locali mentre Giulia-na è una grande appassionata e custode delle ricette casalinghe.Da questo connubio nascono i primi prodotti come la Sapa, le Visciole al Sole, la Confettura di Fichi Bianchi o la Confettura di Morici, tutte ricette riportate in vita dall’azienda agricola.Oggi intendiamo dedicare la nostra esperienza e la nostra pas-sione a chi vuole riscoprire i sapori, i profumi e i colori dell’antica tradizione.• Prodotti interamente fatti a mano.• Recupero e attenzione per le antiche varietà locali e per le

SiGi was founded in 1996 by Silvano BuccolinI and his wife Giuliana Papa. The company marries Silvano’s passion for saving ancient local fruit varieties with Giuliana’s extensive knowledge of traditional Marche recipes to produce specialities such as Sapa, Sour Cherries under the Sun, White Fig Jam and Mulberry jam. Per gli antichi Romani, il giuggiolo era il simbolo del silenzio e come tale adornava i templi della Dea Prudenza. In centro Italia si può trovare in molte case coloniche poiché si riteneva che fosse una pianta portafortuna.
JUJUBE JAMDelicious jam from the jujube fruit, a tree that dates back to Roman times when it was the symbol of silence and adorned the temples of the goddess Prudence. In Central Italy it has been conside-red a symbol of good luck for centuries and can be found growing near many houses.

La visciola è una piccola amarena selvatica molto diffusa nelle colline marchigiane, di colore rosso scuro, succo sanguigno e sapore nettamente acido da fresca. La confettura che se ne ricava è morbida, omogenea, di un rosso rubino intenso. Profumo intenso di visciola e retrogusto piace-volmente amaro. Ottima sul pane e sui dolci, si presta anche ad abbinamenti con carni selvatiche o formaggi morbidi.
SOUR CHERRY JAMThe tiny sour cherry is very common in wild in the hills of Le Marche. It produces a dark red juice with a fresh tart flavour. The jam is smooth, soft and ruby red with an intense cherry aroma and pleasantly bitter aftertaste. Excellent on bread and scones, it also goes well with venison and soft cheese.

Confettura ricavata da un’antica varietà di fichi, importata nel diciottesimo secolo da una nobile maceratese. L’estrema delicatezza del frutto maturo si rivela nella consistenza morbida a pezzet-toni, con i suoi tipici granelli. VISCIOLE AL SOLE
La Visciola è una piccola amarena selvatica (Prunus Cerasus)Il frutto della visciola, ben maturo, viene lavato e asciugato. Successivamente viene inserito nei vasi che vengono riempiti di zucchero. I vasi chiusi vengono posti al sole su tavole di legno per 38-45 giorni. In questo periodo il sole provvede alla disidratazione lenta dei piccoli frutti e allo sciogli-mento dello zucchero, aiutato dalla manualità dell’uomo che muove diligentemente i vasi ogni due giorni durante tutto questo periodo. Si forma così lo sciroppo naturale che è anche il liquido di governo delle visciole disidratate. E’ un prodotto unico non solo per la particolare lavorazione ma anche perchè lo sciroppo che si forma è fatto solo del suo stesso succo, senza acqua.
WILD SOUR CHERRY UNDER THE SUNThe wild sour cherries are washed and dried, then mixed with sugar in glass jars. These are sealed and left in the sun for 38 to 45 days, during which time the sun dissolves the sugar and dehydrates the fruit. The pots are moved every two days, enabling the process whereby the sour cherries produce their syrup. This unique process ensures that the sour cherries produce a syrup without the addition of water.

Antica pera marchigiana da sapore molto ricco e pieno, tagliata alla julienne di ottima consistenza, il suo bouquet di profumi intensi ed invitanti ha un gradevole tono speziato, ciò la rende ottima sulle carni bianche e in accompagno a torte salate a base di formaggio o in stuzzicanti antipasti.
SWEET BITTER “ANGELICA” PEARAn ancient Marche pear variety with a rich full flavour. The jam has julienne cut pieces of the fruit. The spicy aroma makes this perfect with white meat and savoury cheese cakes as well as starters and snacks.

Confettura cremosa, dall’intenso profumo speziato. Il sapore che ricorda il sentore della mela cotta, mentre lascia un retrogusto leggermente piccante. È ottima con la fiorentina e con la carne grigliata in genere, come salsa di accompagnamento nelle fritture di pesce e nella preparazione di antipasti e stuzzichini.

Unico esempio sul mercato di una vera e propria salsa di vino. Non gelatina, e non vino aggiunto ad una base generica bensì una vera e propria riduzione in vasetto di un grande vino marchigiano: il Camerte, nato dal connubio tra Sangiovese e Merlot in un affinamento in piccole botti di rovere. Ne deriva una salsa complessa e molto aromatica. Un sorprendente sapore indicato per dare un tocco personale a qualsiasi preparazione: da assaggiare con carni grasse o selvatiche, con carpacci e lardi speziati.
WINE “CAMERTE” SAUCEThe only true wine sauce on the market. This sauce contains no gelatine, nor is it made adding wine to a base, it is a true reduction of wine, using the Marche Camerte wine, born from the Sangiovese and Merlot grapes, matured in oak barrels. This complex aromatic sauce gives a unique touch to any dish, good with venison and salamis, or with carpaccio.
Una diversa etichetta contraddistingue la sua particolarità: un prodotto nato con e per “Herbaria” la manifestazione dedicata alle erbe spontanee organizzata nella provincia di Macerata. Rugni, Speragne e Crispigne scottate in vino e aceto e poi ripassate in pentola con spezie. “Strascinate” come si dice dalle nostre parti. E’ grazie a questa collaborazione che siamo riusciti a riportare in vita le vecchie erbe campagnole. Semimorbida, verde intenso. Profumo di erbe fresche e sapore complesso: l’amaro delle erbe lascia spazio ad una leggera acidità che stuzzica l’appetito. Ottima in abbinamento a bolliti di pollo e manzo, con carpacci o insieme a ricotte e formaggi morbidi, sugli antipasti o come stuzzicheria.

Gelatina morbida, trasparente, con foglie fresche di menta. Il leggero gusto asprigno della mela viene rinfrescato dalla tipica essenza sprigionata dalla foglia di menta.Con formaggi caprini, erborinati e affumicati e anche calda su formaggi vaccini stagionati e nell’accompagno di crostacei o pesce crudo.

La gelatina di mele Si.Gi. viene fatta con solo succo di mela, senza l’utilizzo di addensanti o coloran-ti chimici. Questo grazie all’elevato contenuto di pectina naturale contenuta nel frutto stesso. Per questi motivi, la lavorazione di questo prodotto risulta essere lunga e delicata. Estrarre la maggiore quantità di succo e lavorarlo pazientemente per darvi la migliore qualità: una gelatina morbida, limpida, dal colore brillante e dal profumo inebriante della mela appena tagliata.
APPLE JELLYThe SiGi apple jelly is made using only apple juice, with no thickeners or chemical dyes. The fruit’s natural pectin is released during a long and delicate production process. The final product has a soft clear bright colour and the heady scent of freshly cut apple.

La Pera Angelica è una varietà di pera tipica della regione Marche che Si.Gi. presenta sciroppata al naturale, detorsolata e tagliata a metà. La descrizione della pera angelica tradotta da Oriana Porfiri ci fa capire l’importanza del recupero di questo frutto dimenticato: “Il Pero Angelico è una delle varietà più preziose del suolo Italiano.[...] Il frutto è oblongo, tondeggiante sulla corona, poi rilevato irregolarmente, e degradate in seguito in un collo, che gli dà la vera forma della pera. La sua buccia è giallognola nella maturità, ma sfumata di un rosso vinoso, che nel lato del Sole si spiega in tante macchiette rotonde punteggiate di grigio, che risaltano singolarmente, e che la distinguono da tutte le altre pere conosciute. La polpa è bianca, gentile, butirrosa insieme e croccante, e piena d’un sugo abbondante e saporito, che la rende graziosa, e la fa gareggiare colle pere più squisite.” Pyra Angela. Aldrov. La brugnoletta, Prunus Cerasifera è una pianta arbustiva quasi scomparsa dal mercato. I suoi frutti sono drupe nerobluastre dal sapore intenso e aspro. Le brugnolette Si.Gi. vengono sciroppate a frutto intero, con il nocciolo, per lasciare tutto il piacere di assaggiare il frutto “al naturale”. Ricche di vitamina C e di tannini, le brugnolette riescono a conferire tutto il loro profumo e colore anche allo sciroppo che così diventa un’ottima base per la preparazione di cocktails speciali o guarnizioni per creme e gelati.
LITTLE WILD CHERRY-PLUM IN SYRUPThe wild plum has almost entirely disappeared from the market. The fruits of this plant are red-black with an intense flavour. SiGi leaves the wild plums whole in their syrup, with the stone, giving all the pleasure of tasting the natural fruit. Wild cherry plums are rich in Vitamin C and tannins, and the delicious syrup can be used on its own in cocktails or for ice cream and desserts.
La mora, annoverata tra i cosiddetti frutti di bosco, ha marcate proprietà nutrizionali con una discreta presenza di vitamine C ed A. Si tratta però, di un frutto delicato, che bisogna lavorare con estrema attenzione. Il Vino e Visciole Si.Gi. appena versato colpisce per il suo colore rubino intenso e per il suo profumo straordinariamente deciso di visciola matura. Il sapore del vino è intenso ma delicato, il retrogusto gradevolmente amarognolo, mentre al naso si riconoscono aromi di ciliegia matura; si accompagna a dolci rustici marchigiani quali anicini, ciambellone e ciambelle di mosto, e può reggere anche l’accostamento con un cioccolato. Definito elisir da corteggiamento , sa catturare le pupille gustative delle donne. Per la limita quantità prodotta, si può definire : “tesoro patrimoniale da tutelare”.
WINE AND SOUR CHERRYThis intensely flavoured wine has a tart aftertaste with a sour cherry aroma and a deep ruby colour. It is excellent with traditional Marche sweets, including aniseed biscuits, cakes and choco-late. Called the elixir of courtship, its intense sweetness is said to appeal particularly to women. It is produced in limited quantities and is truly “a treasure to be protected” along with the rest of Italy’s great art works.

Narra Omero (Libro IX - Odissea) che Ulisse e i suoi uomini, portati fuori rotta da una tempesta, approdarono all’isola dei Lotofagi (secondo alcuni l’odierna Djerba), nel Nord dell’Africa. Alcuni dei suoi uomini, una volta sbarcati per esplorare l’isola, si lasciarono tentare dal frutto del loto, un frutto magico, che fece loro dimenticare mogli, famiglie e la nostalgia di casa. È probabile che il loto di cui parla Omero sia proprio lo Zizyphus lotus, un giuggiolo selvatico, e che l’incantesimo dei Lotofagi non fosse provocato da narcotici, ma soltanto dalla bevanda alcolica che si può preparare coi frutti del giuggiolo.

Con un po’ di legne grosse si mantiene il fuoco perché il mosto deve bollire piano piano, finché non ne scenda un terzo, o almeno, la metà, a forza di bollire…”

La sapa è detta anche “mosto cotto”. Il mosto viene immerso in un paiolo di rame e bollito lentamente per 24-36 ore.La sapa è pronta quando si sarà ridotta ad un terzo della sua quantità iniziale. Si conserva benissimo proprio grazie al suo tenore zuccherino.La Sapa è un condimento dolce color caramello. La sua densità e il suo sapore acidulo di mosto cotto con un piacevole retrogusto amaro la rendono speciale in abbinamento alla polenta con ricotta di capra (essiccata, salata ed affumicata), come la tradizione marchigiana insegna. Squisita insieme ai formaggi stagionati e saporiti, la sapa si accompagna molto bene con le fragole e come salsa per i gelati di crema e di panna. In estate, aggiunta all’acqua, diventa un’ottima bevanda dissetante, infatti, nell’antichità,veniva usata insieme alla neve per creare una granita.
SAPASapa is also called “cooked grape must”. The grape must is simmered in a copper pot for 24-36 hours. When it has reduced to one third of its original quantity it is ready. The high sugar content acts as a preservative. The Sapa is a dense sweet caramel sauce with a tart aftertaste that is traditionally paired with polenta and goats cheese. It is also excellent with strawberries, and as a sauce for ice cream. In the summer it makes a delicious thirst quencher, diluted with water. In ancient times it was mixed with snow to create granita.

Once upon a time all salmon were wild, chickens ranged freely, and beef was hung. Milk was full-cream, cheeses were farm-made. Orchard fruits ripened on the tree, vegetables were local and seasonal. Lemons were juicy and ripe, or maybe a bit hard and green, but always zestily fragrant, never a plastic pack that squirted juice and preservative.
I am not imagining it. Food was what it purported to be. Adjectives were unnecessary. No need to say more than salmon, chicken or lemon to be sure of quality.
The 21st century is different. It is a sign of our times to talk about real food. Real food ought to be a tautology. But food is not just food any more. Factory farming has eroded standards so much that we have to distinguish between ingredients worthy of the name and ersatz imitations.
Britain and the US are the worst proliferators of non-food. Our food culture does not run deep, destroyed by industrialisation and rampant consumerism. The faster-lane the living, the worse the food production and culinary shortcuts, the more widespread the fakery.
