What can be more tummy-filling and sociable than preparing and eating lasagna together? Lasagna is one of those super delicious meals that the whole family enjoys from the first bite to end. We made these fun individual lasagna roll ups TWO ways this week. Both are pasta “IMPASTAS”. One is with versatile wonton wrappers that stand in for the pasta and the other is making your own zucchini “pasta”. The thinly sliced zucchini ribbons replace pasta in this delicious, low-carb, noodle-less dish. This lasagna totally satisfies cravings for cheesy and indulgent Italian comfort food. It's perfect in the late summer when we all seem have an abundance of garden-fresh zucchini, ripe cherry tomatoes and bursting basil plants in our backyard gardens…. This recipe is 20 minutes top from start to finish (eating)…. These Lasagna roll ups are so super fun to make, so cute and dare I say, even so fancy enough to serve at an adult cocktail party! pre-heat+grate+tear Heat your oven to 400 degrees and generously oil your muffin tin with olive oil. Have kids grate 4 ounces mozzarella (reserve some cheese for the top of lasagna) and add to large bowl. Have kids grate 1 small zucchini and (with clean hands) squeeze the moisture out of the grated zucchini. Discard the liquid. Add the squeezed zucchini to the grated cheese. Have kids tear 1-2 Basil leaves and add to the grated cheese/zucchini bowl. Mix well.

measure+crack Have kids measure and mix in 4 ounces Ricotta cheese (or tofu) and add to the grated cheese/zucchini bowl. Mix well and add salt and pepper to taste. Crack 1 egg in and mix some more!

spoon+roll Have kids lay the wonton wrapper (or a zucchini noodle) on their cutting board: add a spoonful of cheese mixture and spread over the wonton wrapper evenly. Have the kids roll up the wonton (see photo below). And add the roll ups into your muffin tins.

bake+make more Bake Lasagna roll-ups for 3-5 min or until bubbly and browned on the edges. While the roll-ups cook, The kids can keep layering more lasagnas on their cutting boards. Kids can tear more basil into little pieces. Top the finished lasagna cupcake with the extra grated cheese and fresh basil… With the sauce on the side to dip "Mangia bene, vivi felice!" (eat well, live happy!)

charred cherry tomato sauce

cut+chop+tear Have kids cut ½ - 1 C cherry tomatoes (the riper the better!) in half, chop up 1-2 garlic cloves and tear up 1-2 fresh basil leaves. Heat 2 tbsp olive oil on medium heat on your stove in your non-stick skillet.

sauté+season+stir Add the garlic and sauté for 1 minute. Lower the heat to medium heat, and add the tomatoes, season well with salt and a little pepper.

cover+pinch+mash Cover the skillet and cook for about 5-10 minutes, or until the tomatoes are soft and breakdown. Add basil and adjust with salt and pepper to taste. If the sauce tastes high in acid, you can add 1 teaspoon of sugar (or a pinch of stevia) at this point and then cook for 3-5 minutes on low heat just to dissolve the sugar. Pour the sauce into a bowl and have the kids take turns MASHING the sauce together with a wooden spoon…. Count to 5 in Italian and Serve warm with the lasagna roll ups!

boil+dissolve We will make a sweet basil ‘tea’ - In your skillet, boil 1/2 C of water. Have kids add the 4 whole basil leaves and add ½ C of sugar (or 3-packs of stevia) into a heatproof bowl. Adults carefully add the hot water to the bowl with the basil, stir and let sit until sugar is dissolved, 5 minutes. Let cool, take out the whole basil leaves and discard.

cut+squeeze Have your kids cut up 3 oranges into wedges and each kid squeezes the juice of their orange wedge into a big pitcher until all the orange juice is squeezed into the pitcher. Add the cooled basil “tea” syrup and 2-3 cups of sparkling water with a bunch of ice… DRINK UP!

Basil is an annual herb of the mint family, native to central and tropical Asia and Africa (some say it originated in India). It is an important ingredient in Thai, Vietnamese and Laotian cuisine. Today it is cultivated commercially all over the world. The many varieties of this herb have seeds that can germinate after 10 years! In addition to its culinary uses, basil is also used in perfumes, soaps, shampoos and dental preparations. In Mexico it is supposed to keep a lover's eye off others, and is considered a powerful protector in Haiti. During British colonial days in India, magistrates would have Hindu witnesses swear on this holy herb. It is recommended in Herbals for the relief of dysentery, gas pains, nausea, and as a cure for warts. The ancient Greeks and Romans thought basil would only grow if you screamed wild curses and shouted intelligibly while sowing the seeds. They also believed if you left a basil leaf under a pot, it would turn into a scorpion. In Italy it is a token of love, in Romania if a girl gives a sprig to her boyfriend, they are engaged, and a good Hindu goes to bed with a leaf on his chest as a passport to Paradise in your dreams. What is Lasagna? Lasagna is both a type of noodle and a dish made with that noodle; lasagna noodles are known as “lasagne”. Lasagna are long, flat, broad noodles which are ideally suited to layering in a baking dish to make a sort of noodle pie with an assortment of ingredients which may include meats, cheeses, and tomato sauce. The history of the name of these noodles is actually quite interesting. “Lasagna” is derived from the Greek lasanon, which means “chamber pot.” REALLY! The Romans borrowed the word to refer to cooking pots of a similar shape, and eventually the word came to be used to refer to the noodles which were traditionally layered in a lasanum, a Roman lasagna dish. Many people are unaware of the humble origins of the name for this popular Italian food! JOKE: Knock! Knock! Who’s There? Woo. Woo Hoo? WOW - You are sure excited to eat lasagna roll ups!

History of Sodas Soft drinks can trace their history back to the mineral water found in natural springs. Bathing in natural springs has long been considered a healthy thing to do; and mineral water was said to have curative powers. Scientists soon discovered that gas carbonium or carbon dioxide was behind the bubbles in natural mineral water. The first marketed soft drinks (non-carbonated) appeared in the 17th century. They were made from water and lemon juice sweetened with honey. In 1676, the Compagnie de Limonadiers of Paris were granted a monopoly for the sale of lemonade soft drinks. Vendors would carry tanks of lemonade on their backs and dispensed cups of the soft drink to thirsty Parisians.

In 1767, the first drinkable man-made glass of carbonated water was created by Englishmen Doctor Joseph Priestley . Three years later, Swedish chemist Torbern Bergman invented a generating apparatus that made carbonated water from chalk by the use of sulfuric acid. Bergman's apparatus allowed imitation mineral water to be produced in large amounts. In 1810, the first United States patent was issued for the "means of mass manufacture of imitation mineral waters" to Simons and Rundell of Charleston, South Carolina. However, carbonated beverages did not achieve great popularity in America until 1832, when John Mathews invented his apparatus for the making of carbonated water. John Mathews then mass-manufactured his apparatus for sale to soda fountain owners. The drinking of either natural or artificial mineral water was considered a healthy practice. The American pharmacists selling mineral waters began to add medicinal and flavorful herbs to unflavored mineral water. They used birch bark, dandelion, sarsaparilla, and fruit extracts. Early American pharmacies with soda fountains became a popular part of culture. The customers soon wanted to take their "health" drinks home with them and a soft drink bottling industry grew from consumer demand. Now sodas are filled with LOADS of sugar and are NOT healthy (Unless you make them at home!).
