With years of experience in the yacht industry, both onboard and on land, the women behind Loom Luxury Linens weigh in on why “every inch counts when it comes to your yacht linens.” Jackie Rasmussen, a former chief stewardess, quickly learned the ins and outs of bed making and turn down service. While back on land, Samantha was making a life out of custom yacht linens. After the pair joined forces, they were quick to realize the lack of

emphasis on proper-fitted bed linens throughout the cabins.

The first order of business, in regards

to custom fittings, is visiting the vessel and getting a detailed account of all the mattress dimensions. We leave no stone unturned in the process. Every bevel, radius, gusset, bulkhead, and odd angle is measured and templated for precision. Our efforts are made in an attempt to make the most accurate

fitted sheets and coverlets, for your vessel.

So, the question is:

Why does it matter?

We can drum on and on about the process and our qualifications. But in the end, a user only needs to know the benefits. So, here they are:

• Custom fitted sheets look better

because they give a cleaner, streamline look to the bed - unlike oversized sheets, which look unkempt and make the rooms appear smaller.

• When fitted properly, sheets will feel better, as they will not bunch or shift.

• They save the stewardess/steward time when making the beds.

• They reduce ware and tear, from constant pulling and wrestling.

In closing, we feel as though proper linens make for a better onboard experience. We have seen a happier crew, based on the time freed up from making beds, and we’ve seen pleasantly pleased owners in love with the appearance of their custom bedding. This makes our jobs worth it.

THE CHALLENGE OF INTERIORTraining for interior? Why bother

spending money on being a stewardess, you are just a glorified cleaner!? That is what many think! However, that is not necessarily the case. I spent many years in retail and working for big companies with extensive training courses; however, joining yachting was a whole new ball game. You are not just talking upper class, but the super wealthy. These individuals have everything and have only experienced 6 Star services everywhere they go.

A few years ago, Interior Training did not exist; as a result, I was trained by a friend. Today, anybody thinking about being on the interior of a yacht must understand that training is going to be the key to your success, as stews come and go, but good stews, get the good jobs and can get paid very, very well!!

Yes, we all know we have to do our STCW 95, so we are all in the same

boat if something goes wrong! But your guests do not always see that as a worry, don’t get me wrong, they like the fact that you all know what to do if there is an emergency. Right now they just want their champagne poured correctly!!

How many of you knew that the cork is not supposed to make a sound? Do you know how long it takes to get a bottle of champagne cooled to the correct temperature and how many glasses you can correctly get out of a bottle? Also, how many of you know how to correctly set a table for a seven course dinner? Did you know that each person could have up to 16 pieces of silverware!?! The details go on and on . . . such as, correctly making the beds with hospital corners and serving caviar the correct way.

Many things will open your eyes, as we just simply do not know how the

“other half” lives and how they expect things! Perfection, most of the time, can be very intimidating for us normal folks!!

One thing I will say about Interior Training - it can never be taken away from you, it will always be on your CV. It will make you more hirable for sure! By taking the extra step and completing your Interior Training, your CV will highlight your investment and show that you have gleaned additional understanding of what is required for perfection, versus someone else who has only achieved their STCW 95. I know who I would hire!

If you start with the right basic Interior Training, not only will you be more hirable, you will be a more confident, better, happier stew and will become a Chief Stew before you know it!

end to end, and you’ll end up sailing around the world. Twice. This New York native and his business partner have launched a marine super-center that is sure to impress.

Roger Moore is no stranger to the water. He took to it at an early age, owning his first watercraft before could even drive a car. In his early career of piloting, manufacturing, and industry, Roger found himself in San Francisco by the 1980’s. At 40, he took a break from work, sold his company, and cruised down the West Coast on his Cheoy Lee Ketch. He and his wife, Samantha, decided then that they were committed to the cruising life. After 13 years on the open water, they eventually settled in Fort Lauderdale. It was here that Moore met yacht broker Jeff Garcia, while listing his boat, “Good Grief.” The two combined their expertise in the boating industry in what would result in Nautical Ventures Group. Moore takes somewhat of a democratic approach to the boating industry, which has a history of being reserved for a wealthier clientele. “The marketing plan is to make this a destination where you can come and enjoy the water,” said Moore. The plan is obviously working - Nautical Ventures Group offers something for

everyone at any price point. The result is a marine group with the potential to excel in the whole gamut of the South Florida marine industry, from sales to service and everything in between.

Nautical Ventures Group came about as a fusion of two powerful marine businesses. QPS Marine focused on maritime brokerage, while Nautical Ventures retailed water sports equipment. Moore and Garcia established the new complex just over a year ago, creating jobs and entertainment for the locals.

You can find headquarters on Bryan Road Dania Beach, near the Fort Lauderdale Airport. The location came about due to an unexpected move from its previous home on Griffin Road. Expansion of the Fort Lauderdale/Hollywood International Airport forced the business to relocate to make way for a new runway. “In 10 months we made it through planning, construction, and move-in,” Moore proudly reported. Quite a feat for a 30,000-square foot complex consisting of a storefront and service center. A second location, River Bend Marine Center in Fort Lauderdale, houses an 8.5 acre marina and shipyard. The center is now under Moore and Garcia’s management, and has gained a loyal clientele. River Bend specializes in fueling, sales, and repairs. The refitting and selling of yachts, in fact, contributes to a large portion of profits for Nautical Ventures Group. Sellers are eager to make their boats market-ready and eager to sell. Buyers are satisfied with the upgrades and final product. Profits from these

services count for up to one-third of Nautical Venture Group’s revenue.

Business has been good to both Moore and Garcia, and does not seem to be slowing down. Revenue for Nautical Ventures Group was 12 million in 2013; revenue for 2014 has more than doubled that figure.

The expansion of the brand made it a key player in this year’s Fort Lauderdale International Boat Show. Moore’s company swayed the show hosts to showcase a large indoor pool facility called AquaZone. The attraction provided show attendees entertainment such as SUP yoga classes, kayak and paddle boarding demos, and a hovercraft demo. The response from the crowd was overwhelmingly positive. Many who attend the Boat Show find it easier to purchase a kayak than a catamaran. The accessibility of AquaZone encouraged spectators to participate in the activities and gain knowledge of company services and products.

Moore, now 68, says there’s no retirement in sight. After all, Nautical Ventures Group has not yet rolled out its plans to sell aircraft carriers, refit submarines, or tackle water hovercraft (but you can bet they’re all in the works).

Fort Lauderdale is considered the “Venice of America,” and is known as the yachting capital of the world, which draws in billions of dollars of revenue each year just from the yachting industry. The Fort Lauderdale marine industry creates jobs and is a draw as well to the tourism industry. Each year in the end of October, Fort Lauderdale hosts one of the largest, world-renowned boat shows. With this industry as a focal point of Fort Lauderdale; it helps keep the property values up, especially waterfront properties.

Currently, the inventory is low and the demand for properties is high. This holds true for owner occupied properties along with investment rental properties as rental demand is high and expected to remain high for the next 5 years. The prices throughout 2013/2014 have had a steady increase, while mortgage rates are still considered low. Now is the time to

purchase property for yourself or as an investment.

U.S. real estate appeals to foreign

buyers and a large number of them settle on property in Florida – about 25 percent of all international U.S. home purchases are to foreign buyers, according to the 2014 NAR report “Profile of International Home Buyers in Florida.”

A CHARTER CHEF

Heading east, out of Fort Lauderdale, across the Gulf Stream and into the Bahamas, 570 miles to Samana Cay . . . We are embarking on a super busy charter season in the Caribbean. I’ve provisioned heavily while in Lauderdale. With distant memories of a weevil infestation introduced in boxes of pasta procured in St Thomas, I’ve stacked my dry goods high, flours, sugars, pastas and canned goods, along with a super exciting Asian shopping spree; my galley has aromas of a Bangkok market place. I’ve also done a huge Bush Brothers’ delivery, taking advantage of a chef buddy from back home who’s in town to visit me, we broke down 15 fillets, a mix of wagyu, prime and choice beef, cleaning and rolling them, a number of whole NY strips, some we’ve portioned and vac packed, and three whole pork bellies, each cut in three and marinated three ways, ready for defrost and 24 hours of sous vide cooking.

We are breaking our 890 mile trip up with a couple of stops in the outter islands of the Bahamas. First we check out the famous wall diving in Conception island, nestled in deep water between Long Island and Cat Island. After a couple of pleasant nights on anchor, we head South East around 110 miles to Samana Cay, seeking out new islands to take our summer guests, off the beaten track of the Exumas. Anchoring with 50 feet of water below our bow, our aft sticks

over a wall, dropping 600 feet into the abyss. Arriving early AM, my day starts with a comfortable crew lunch on our aft deck, today we are doing a simple cheeseburger day, 85/15 ground beef from my provisioner Bush Brothers in West Palm Beach, with fresh cut, lightly spiced Potato wedges, caramelised onion and fixings. Last night, while at anchor, we did an Asian feast, a replica of a comforting, nostalgic, dirty Chinese delivery back home, of nice, fluffy, aromatic Jasmine white rice, a slick Organic Chicken Kung Pao with water chestnuts, Beef and Blackbeans, al dente broccoli and finished with a spoonful of mild chili and garlic paste, giving it an easy kick. I happened upon some shrimp crackers while on my Asian expedition cooked them out in a shallow pan, expanding to a large, crispy, light white disks of goodness, reminiscing in the bags accompanying my Chinese deliveries back home. I added a crispy salad of Shredded Chinese cabbage, jullliene of red pepper, spring onion and carrot, mixed through beautiful (6 calories a serving) clear kelp noodles. I’ve dressed my salad with a delicious Thai red chili, fish sauce and lime juice dressing. For a veg side I’ve sautéed some pak choi with sesame seeds, chili and garlic.

After our burgers, the happy crew shot off in different directions, the captain and engineer are setting out on a mission to bring a 100 lb Wahoo aboard, using some serious new

rigs and fully rigged, frozen 15 inch mullet. The girls are gunning for a sun tan on the sun deck, the bosun is on anchor watch. The deckhand and I put together our dive gear, 3200psi of air in our tanks, we drop off the aft deck, down into the dark abyss, we swim through an amazing barrel coral being monitored closely by a bloody huge, curious barracuda.

That night, after a crew favourite of meatballs in a rich marinara sauce that I’ve had cooking for several hours, lightly buttered Spaghetti, a simple Caesar salad, we enjoy a few rums. We can’t see land, the darkness taking everything from sight, no reference point nor star, no moon and not a boat anywhere near I retire to my cabin. I have 3 episodes of Top Gear left to watch.

“Bang bang bang.” My sleep is rudely broken by the Bosun knocking on my door. I hear lots of action and am told to get to the aft deck. As our chief stew is still on vacation, I’m enjoying chilled nights in my cabin solo, don’t get to sleep naked often these days… I slip on a tee shirt and shorts and make my way out, it’s only 4.20 am and apparently we’ve been boarded. In a dazed state I walk up the crew mess steps to be greeted by a gentleman in uniform holding a pretty nifty submachine gun, donning

Pork belly is the underside of swine and the basis of the wonderful bacon. This fatty slab of meat is cheap and often found in decent butchers’ shop and Asian markets. It’s an amazing piece of meat. First, decide what you want to do with it. Do you want it to end up on a BBQ? If so, you’ve rubbed it with a pork rub or a collection of spices and brown sugar, bagged it in butter, chicken stock, a bit of soy sauce, black pepper, thyme and juniper berries. Alternatively, I’ll go all Asian on this, star anise, a bit of soy, some fish sauce, a whole red chili, some sweet chili sauce, lime leaves and a stick of lemongrass, topped off with some chicken stock. Either way, I’ll cook it in a vac pack bag (or in a good quality zip loc bag) in water at 80degrees C for 24 hours. With braised meats, always cool to handling temperature in its liquid to stop it getting tough, then take out of its bag, delicately taking off herbs and spices, put it in a shallow tray and apply weight, lots of weight. When cold, (about 4 hours or so), I’ll cut into inch thick strips about 4 inches long, against the grain. The Asian recipe will be gently pan fried in a dry pan, the excess fat will render out, they will caramelise beautifully in the pan, at the end, when equally darkened on all sides, I will drain out the fat, and add in equal parts of about 3 tablespoons of soy and sweet chili sauce which will quickly reduce to a thick delicious sauce before plating, often accompanied with scallops and Asian slaw, or atop a noodle dish, or beside some white rice and sautéed pak choi. The BBQ pieces will grill beautifully, rendering out its excess fat, causing flames to lick it tenderly, dip its dark caramelised self into some good quality BBQ sauce, dark rum mix, then while its crisping back up, take a swig of rum for the chef, and a dash over your darkened, sweet and tender soldiers, causing a fiery celebration.

Cilantro, a herb that is loved by many, loathed by some, green leafy herb similar in appearance to flat leaf Parsley, but a softer leaf, and stem, allowing the whole bunch to be used. The smell and taste will take you away, to a ceviche from Peru, essential accompaniment to Mexican cuisine, in salsas, marinades and tacos, to the Far East, the piece de resistance for a Tom Young Goung soup, green curry and many other dishes. Cilantro is also popular in Indian cuisine. It should be kept in a small bit of water, with a damp cloth over the top,

in the fridge.

a blue life jacket and light gray uniform I recognize as Bahamian authorities. As I pass him I wish him good morning, down the port side I am greeted by

another armed guy on the aft deck. While the crew gather, a 30 or so foot, black, diesel, jet tender hovering 15 feet from the swim platform with “RBDF” written along the side, the Royal Bahamian Defense Forces, as of yet, we have no idea what’s going on. After checking our faces to the passports, and questioning the captain about

our movements and whether we had seen anyone out here they go on their way.

Right now we are only about 16 hours from St Thomas, we’ll arrive early Sunday morning, that’ll give me five whole days to clean and detail my galley, do a large fresh food provisioning trip, pack away my National Marine delivery, coming in Thursday, do any necessary adjustments to my first charter of the season menu, 11 guests for a sweet week in the beautiful British Virgin Islands.

Excited about seeing all my old haunts, famous Friday nights at “The Fat Turtle,” I’ll surely be reminiscing about my many seasons aboard the 120ft M/Y Touch, based out of yacht haven Grande. They were good times- I had a local driver’s license and a NY girlfriend, who was doing her masters in Marine Biology in the UVI. It was a time when if I was late to the Turtle, the bartender would say soothing along the lines of “where have you been bro, I’ve been worried sick about you guys!”

Admittedly, I wasn’t sure what to expect when I was invited by a fellow culinarian and yachtie to a little restaurant the locals refer to as HPB. I’ve had my fair share of expensive, mediocre food with less than average service while dining out in South Florida. After more than 10 visits Hardy Park Bistro has single-handedly (that’s a gross under exaggeration as there are many many hands in this little gem of a spot to thank) renewed my faith in what dining out in a no fuss, friendly, and accommodating experience can be. After the first two visits, I was weary to tell other friends about HPB for fear that it would explode in popularity, and those of us who were lucky enough to know its secrets would be in lines on the streets waiting for the chance to dine again.

I’ve since stopped whispering its name and I am now proud to be able to recommend HPB to anyone

who eats food, which, I’m assuming is everyone I know.

Chef and owner Phil, an Australian-born, 24-year industry veteran, along with his sous chef Laura, has been turning out dish after amazing dish in the open kitchen visible from the street. Both chefs have a yachting background that landed them here in Ft. Lauderdale. The dynamic duo turns out a weekly changing menu which means boredom never sets in, and I’m always excited to see what simple but delicious surprises my next dining experience will present (keep an eye out for the green thai vegetable curry).

On my most recent trip inside the sparsely decorated little grey building, a motif inspired by a bistro in Sydney Phil apprenticed in early in his career, I was greeted as I always am by smiling and now familiar faces. There is something to be said

for building rapport with hospitality professionals who are as excited to be there as you are. This time, as with all the rest, the food did not disappoint. In his own words Phil describes the menu as “good quality classic food” with “no muss or fuss.” He explains that he’s not trying to reinvent the wheel, but instead provide a great meal in a comfortable atmosphere. All of which are accomplished with the simple and understated atmosphere that allows for your company, the affordable wine list and the plates provide the main attraction.

Starting with the velvety cauliflower soup drizzled with fresh, bright green parsley oil and the melt-in-your-mouth beef carpaccio topped with some of the spiciest and freshest local arugula I’ve ever had. At this point in my life I would venture to say that I’ve tried dozens and dozens of burrata/mozzarella

salads. The burrata over grilled asparagus with truffle oil is now in my top three. After using the warm fresh house made multigrain bread to soak up the last remnants of the truffle oil and the milk cream I stop just short of picking up the plate and licking it. Fortunately, lately we have experienced a few nights that were chilly enough to warrant ordering a dish like the butternut squash and gorgonzola risotto that instantly warms every inch of your nippy extrematies. The combination of the sweet squash and the tangy cheese make for the best kind of comfort food I can hope for south of Georgia. Last but not least, save room for the chocolate mousse. Your taste buds and your dining companions will thank you for ordering this blissfully simple and smooth dessert. Advice: DO lick the plate on this one...

After months of gutting and installing, the ex-Star 7 has earned its new title, Pegasus IX. From the time of purchase, the owner knew he would be giving the 27-meter catamaran a major facelift. QPS Marine spearheaded the design of the overhaul. The result is a contemporary upgrade, a refinished interior, and a happy customer.

QPS Marine is a subset of Nautical Ventures Group and specializes in refits, services and management. The goal of this project, led by Jeff Garcia, was to turn a vessel that usually ferries passengers into a vessel that houses an intimate getaway.

The 27-meter (88.6 ft.) catamaran was built in-house by prolific builder Sabre Catamarans in West Australia in 2004. The owner awknowledges the reputation of catamarans. They are known for being fast, reliable, and built for continuous use. The refitting

of the vessel would combine these performance qualities with the luxury of a traditional yacht. The key goal was to outfit a versatile vehicle that can house a relaxing expedition while it can really move. “You can do everything and anything on this boat,” said the owner.

First, QPS wanted to do away with the tight interiors and open up the cabins for a larger living space. The plan was to reinvent the living space without impeding the existing performance qualities. Under the deck, the six compact cabins needed to expand into three larger cabins. The first task was the compile CAD renderings of the reconstruction. This required more thorough pad-and-paper design before breaking any ground.

The previous boat design lacked a sun desk, which was a priority for QPS’s client. The previous living and dining area was monopolized by a large

out of date dining set, and the galley was out-of-date. The team chose to support work offsite to produce the look. Westhoff Interiors, an American company based out of Kansas, finished the interior look complete with bleached oak veneer for a more luxurious feel. The updated galley features stainless steel appliances and a bright, airy feel. It also features a sliding screen to obscure it from view. This is especially useful when entertaining guests.

The noise and vibration from the machinery frequently disrupted the guest cabins. QPS solved this problem by reducing the noise pollution in the living quarters.

Finally, the catamaran was outfitted with a brand new deck, complete with a bimini.

So what’s next for Pegasus IX? The Swiss owner says it’s taking its 27 meters straight to the Bahamas for an adventure.

After ten years of traveling the world backpacking and working in the yachting industry, I was looking for freedom and the challenge of starting my own business. With a few ideas bouncing around in my head, the idea of opening a taco stand kept coming back to me. It was a long time dream and kind of a joke my brother Jay and I had from our first visit to SoCal as little kids. We’d always say when we got sick of a job, “Forget this, time to grab the boards and move to the beach to open a taco stand. It wasn’t until I came up with the name Nacho Bizness and a little motivation from my friends that I knew that this idea was it.

The idea started to become a reality in 2010 when I went on a delivery from San Fran to Cabo San Lucas with a buddy and decided that the trip wasn’t going to be just work, it was going to be “Taco Research.” After working a few seasons on the west coast, we had a good idea of where to pull in and taste the best authentic and fusion style tacos along the way. Once we made it to Cabo, the ideas where rolling and the menu was taking shape. I spent another few weeks surfing and stuffing my face at every taco stand along the Baja Peninsula when it hit me, International tacos! I’ll take all of the flavors that I have experienced from around the globe and infuse them with the best food on the planet - FUSION TACOS! So I’ve taken my favorite seasonings and spices, from the Caribbean, Asia, Central

and South America and of course, the USA and created a little something different.

Five years later, we have been featured on a number of tv shows and in just about every south Florida publication. We are making a great living and about to expand with another truck and potentially a restaurant. Most importantly, I am doing something that started as a dream and now is a reality.
