Wasabi ChiSushi’s next big move in Des Moines came from New York. Trained in Japan, Jay Wang worked the sophisticated New York City sushi scene into his mid 30s. A family man by then, he visited Des Moines for a wedding and realized that central Iowa was a good place to raise kids and own a business. He moved here and opened Wasabi Chi in 2011, followed by Wasabi Tao early this year. So far he has recruited 12 other New Yorkers, plus one Californian, of similar age and background to live and work in Des Moines.

“It was easier to talk them into coming here than to train guys from scratch. New York-style sushi takes years to master,” he explained.

Having two restaurants made it possible to air freight rare fish that Wang and his partners appreciate. “We’re getting 90 percent of our fish by direct shipping now. It’s more expensive, but with New York sushi, it’s more about the fish than the knife skills. So we need to do this,” Wang said.

Their Hawaiian suppliers are small boat operators who specialize in fishes Wang and his partners love — kampachi, ono madai (red sea bream), amberjack and kajiki. They get their lobster and bass from Florida oysters and scallops from Washington state. Facebook and email make it possible for the restaurants to alert their growing list of adventurous fish lovers when they get a direct delivery from Tokyo’s Tsukiji, the holiest of shrines among the world’s fish markets. Recently Wang sourced cherry blossom snapper, needlefish and golden eye snapper from Tsukiji.

“Golden eye is unlike other snapper. It’s richer and oilier and comes only from the Sea of Japan. Those fish cost us $70-$100 a pound, so we can‘t order them all the time,” he explained.

The two Wasabi restaurants feature things like live scallops — mollusks that are literally still alive when the itamae prepares them for customers. “They have

an incredible amount of umami (the legendary sixth flavor of Japanese cuisine) and a definite fresh, live taste. Just smelling them conjures the sea,” Wang added.

Wang noted that fish are seasonal like fruits and vegetables. “Most deep water fish and fish roe are best in late winter when the cold waters fatten them up. Shellfish, too, is best in winter. Snappers, whitefish and lobster, though, are best in hot weather. Softshell crabs are for springtime.”

Greater Des Moines Botanical Garden reopens, looks ahead to 2014

The Greater Des Moines Botanical Garden reopened its doors to nearly 2,700 visitors on Sept. 28 after a three-month construction closure. Construction continues on Phase I gardens, scheduled to open next summer.

The reopening comes halfway through the $11.6 million project and includes a new lobby and office suite, renovated event spaces and improvements to the conservatory’s pathways, gardens and balcony. The lobby is now home to Iowa’s first living wall, along with a garden shop featuring an assortment of naturally inspired gifts and books. Trellis, the Botanical Garden’s new café under the culinary direction of Lisa LaValle, will open this November.

“Reopening the building is an important milestone as we embark on this new beginning,” said President and CEO Stephanie Jutila. “The revival of the conservatory and the upgrades to the building will position us as a dynamic cultural institution with a passion for plants.”

The reopening comes as the Botanical Garden continues to develop several acres of outdoor gardens. Outdoor renovations will be completed throughout 2013 and 2014, and include a new entry garden and parking lot, water garden, terraces, shade tree allée, a walled event lawn encircled by perennial borders and a conifer and gravel garden. The $6.2 million “We Are a Garden Now” campaign marks the second phase of fundraising for the budding cultural institution. The campaign will raise money for the development of two additional gardens and expansion of the Botanical Garden’s curation activities. The annual and bulb parterre will be a formal garden room at the northern end of the alleé. The hillside garden will provide a breathtaking backdrop to the walled garden below, providing a unique opportunity for garden visitors to view the gardens from above with the Des Moines skyline in the background. The Botanical Garden will eventually develop the entire 14-acre property situated along the Des Moines River with gardens.

The Botanical Garden is located at 909 Robert D. Ray Drive and open daily from 10 a.m. to 5 p.m., except major holidays. Regular admission is $5 for adults, $4 for adults 65 and older, $3 for children ages 4-17 and free for children 3 and younger. Admission is free with membership. Our 110-year-old log home, the Stott House, was named to

commemorate the family that homesteaded the land and built

the old farmhouse. English immigrants Ida, Jake and Tom built the

original home from various houses that they pulled by horse and

buggy to the farm. They built the home piece by piece and lived in it during their

lifetime. The Hatfields rebuilt and restored the relic home, using logs, installing

Hatfield Lakes is located in south central Iowa, which is an area unmatched

for woodland and prairie habitat, with 2,500 acres of publicly-owned woodland

and upland prairie. Within three to nine miles, we enjoy Green Valley State

Park, McKinnley Lake, Summit Lake, Three-Mile Lake and 12-Mile Lake. In our

surrounding Iowa state parks, we have wildlife habitat for white-tail deer, quail,

geese, ducks, wild turkey, pheasants and other upland species. This part of Iowa

is known for year-round angling of walleye, crappie, bluegill and trophy bass.

How many years have you been in business? A little more than five years.What made you want to open your business? My mom, Elly Nance, is a retired

ER Nurse, and it’s a business we enjoy together. We like to make people tan and happy. Plus, we get to wear flip-flops and shorts to work.

What did you do before you started your business? I (Lara) was a death investigator. I needed a happier job, loved tanning and wanted to bring the best tan experience to everyone.

What can people expect when they walk into your business? Everyone is always greeted with a smile no matter how busy we are.

What products/services do you offer? No contract! Sun Club can be automatic, and you receive free stuff and discounts. At the east location we offer UV bed tanning and custom airbrush tanning by certified spray tan masters. At the south location we offer UV bed tanning, massage, European facials, full body waxing and eye lash extensions.

What sets you apart from the competition? Customer service, knowledgeable staff cleanliness and top-of-the-line tanning equipment. And the fact that I am a spray tan master.

On Dec. 28, 2012, Jokers took the Des Moines Nightlife scene by storm. Bringing a whole new look and feel to the property that was originally Liars Club.
