Our innovations include micro-batch blending techniques, essence infusion and natu-ral osmosis curing techniques developed for our herbal products. Like gourmet chefs, our herbal blending masters must taste and adjust blends each season based on the seasonal character of our natural ingredients in order to deliver the consistent flavor and character found in all of our products. Innovations and DevelopmentsWe were the first to introduce Certified Organic white teas from authentic Fujian white tea bushes and traditional artisan processing techniques to US tea drinkers. Each spring, when the best white teas are made, Rishi experts visit the source farms and enjoy first refusal rights of the season’s best batches from the original organic white tea projects in northern Fujian.

Rishi Tea was the first US tea importer to introduce Fair Trade and Organic Certified teas direct from Yunnan’s antique tea gardens. Our strength in tea processing and mar-keting of new style teas as well as our exclusive network in the antique tea villages of Yunnan allows us to produce exquisite pu-erh teas as well as truly unique green, white, and black teas from these ancient Yunnan tea gardens that until only a few years ago produced only pu-erh. Our initiatives to diversify the products and improve hygienic quality in the ancient tea-producing areas positively impacts the communities where our ancient tree teas are harvested by creating new products and sustainable market chan-nels for their ancient tealeaves above and beyond the volatile pu-erh market. While all tea comes from the Camellia sinensis evergreen, there are more varietals of Camellia sinensis (tea bushes) than there are different types of grapes selected for making wine. Each tea varietal has a unique character. The region of cultivation, the season of harvest and the method of processing the fresh tealeaves also influence the character of green tea. The soil type, elevation and ecological condition of the tea garden greatly contribute to the flavor and nuances of green tea. A sip of green tea can reveal where the tea was cultivated as well as when and how it was made. Each origin has its own signature flavor, aroma, range of varietals and traditional processing methods. There are hundreds of types of green tea but no matter the varietal or origin, all green teas are cat-egorized according to their processing. There are five basic categories of green tea and Rishi handles all types: steamed, pan fried, bake cured, sun dried and combination processed.

Black tea originated in China hundreds of years ago and was further developed throughout the world’s other tea-growing regions. Unlike green tea processing, which attempts to preserve the green color of fresh tealeaves, black tea pro-cessing encourages fresh tealeaves to oxidize and change color from green to coppery-red. This change in leaf color during processing is often referred to as “fermentation” or “en-zymatic oxidation.” Black teas are considered fermented while green teas are considered unfermented.

White tea originated north of the Min River in China’s Fujian province. In this region, 1,000 meters above sea level, Rishi cultivates organic white teas at select smallholder gardens using authentic white tea bush varietals and the clas-sic white tealeaf-withering process. Each year, Rishi travels to this remote heritage region to work directly with artisans to select the highest quality white teas of the season. White tea is the least processed of all tea types, resulting in a milder flavor without bitterness and with a sweeter finish than green tea. Compared to other teas, white teas are very low in caffeine due to the production and suggested brewing method. White teas also contain high con-centrations of antioxidant polyphenols (tea catechins) and L-theanine amino acid.

Chai Our Chai blends can be infused like tea or prepared traditionally by sim-mering in a sauce-pan with milk, sugar and water. The coarse roots, herbs, spices and bold leaf teas release their full flavors when stirred and simmered for 3-5 minutes (as opposed to the method of briefly infusing or steeping that applies to most pure teas and herbals we provide). The combination of milk, water and sugar extract the essence of Chai blends; using only pure water without sweetener will not result in a traditional flavor.

Oolong Tea (pronounced Wu-Long) refers to a category of semi-oxidized teas. Oolong’s manufacturing style has nuances of green tea and black tea in its production. Special wilting, bruising, roasting, rolling and baking techniques encourage and control leaf oxidation. Heat is applied to kill the enzyme that encourages leaf color oxidation. The result is a tea that on the scale of leaf oxidation and infusion color is somewhere between green and black tea. Depending on the duration of oxidation and style of roasting, oolong tea infusions range from bright green to golden and more heavily oxidized hues of amber and reddish-orange.

A classic grade of darker oxidized oolong with a character similar to Darjeeling black tea. Pu-erh tea has an ancient history of more than 2,000 years originating in the Yunnan province of southwestern China. There are two distinct types of pu-erh: Sheng pu-erh (raw pu-erh) and Shu pu-erh (ripened pu-erh). Sheng pu-erh is often called “green pu-erh” and Shu pu-erh is often referred to as “black pu-erh.” Rishi offers various grades of both types, all of which are tailor-made for us in our Fair Trade and Or-ganic Certified ancient tea project in Yunnan.

According to Traditional Chinese Medicine, Pu-erh tea has a warming and potent digestive property. Chinese doctors note that Pu-erh cleanses the body of bad cholesterol and toxins while increasing metabolic function and circulation. This is also why pu-erh has such a wide appeal within Asian food cultures. Many tea drinkers swear by pu-erh as the best cure for a hangover and a wonderful “detox” tea. Pu-erh is regarded as the best amongst all teas
