Po’ Boys evolved out of a street car strike in New Orleans in the late ’20s. The Martin brothers, who were former streetcar operators before becoming bakers, began making sandwiches on New Orleans French bread for the striking workers out of leftovers and whatever they could. In seeing another striking worker approaching their store they would shout, “Here comes another poor boy!” Now you know the story.
