    Make Pizza

    Pizza is one of the most popular dishes around the world. It is generally a flat round bread which isoven-baked and covered with tomatoes or a tomato-based sauce and mozzarella cheese. Toppings arealso added depending on the region, culture or personal preference. In this article, we will be learning

    how to make a pizza at home.

    The basic steps in pizza making are first preparing dough, then pizza sauce. After that, cheese andtoppings are added according to taste and then the pizza is baked in an oven. This seems to be simplewhile reading but preparing a good mouth watering pizza at home drains in a lot of hard work.However, you will be able to make pizza at home easily using this step-by-step guide.

    Let's start from the scratch.

    Making Pizza Dough

    Dough making has been known to humans since ages now, but mastering the art to make perfectpizza dough can be a bit cumbersome sometimes. At home, Pizza dough is prepared by hands, nospecial machinery is required. However to prepare hand-made dough you will need to have a largemixing bowl, a measuring cup, measuring spoons, a large whisk or wooden mixing spoon and somekitchen film before you start. It will be better if you also keep a small hand towel ready before startingthe process.

    Ingredients:

    1 - 1/4 Oz Envelope - Active dry yeast, (or 2 1/4 Tsp)1 1/2 Cups - Warm water (110F - 115F)4 Cups - Bread flour1 1/2 Tsp. - Salt2 Tbsp. - Extra virgin olive oil1 Tbsp. - Sugar

    Extra flourExtra olive oil

    Process

    Pour the warm water in a large mixing bowl, then add the sugar and dissolve it. Next, dissolve theyeast by stirring continuously after addition. Allow the mixture to settle down for 10 minutes or extraso that the yeast becomes active.

    Now add the yeast and olive oil, when the appearance of the mixture becomes foamy and cloudy atthe surface. Dissolve it continuous stirring. Then add 3 cups of flour to the mixture one-by-one andwhisk in until dissolved completely. Make sure the mixture is completely smooth. Use your hands to

    combine the dough until all of the dry flour has moistened into a mass.

    When the flour has absorbed all of the moisture and congealed into a firm mass, remove it from thebowl to a floured tabletop to knead it. Fold it in half again and push it into itself, again and again forperhaps 10 to 12 minutes or so, or about 200 cycles. It is very important that the dough is very wellkneaded.

    After kneading is complete, when dough transforms into a silky, smoothly-textured ball, coat thedough ball with a thin layer of olive oil. After that place it in the bottom of a large mixing bowl thathas also been coated on the inside with olive oil.

    Now comes the step on panning the prepared pizza dough. One of the most demanding of the pizzamaker's many challenges is getting the raw pizza dough ball into a pizza pan. The panning of pizzacan be done by various methods as per your convenience. The popular methods are Pizza doughsheeting, pizza dough pressing, hand tossing pizza dough- do it only if you don't get hazy whencatching, hand pressing pizza dough, and last is pin rolling pizza dough.

    Making Pizza Sauce

    Normally at home, we recommend using tomato sauce only which is lightly herbed with oregano andbasil. Some pizza lovers prefer to have even simpler sauce than this, however tomato sauce is thesimplest to prepare at home.

    Ingredients:

    3 Tbsp. - Butter16 Oz. - Can of tomato puree

    3 Tbsp. - Olive Oil1 Tsp. - Salt3 Cloves - Garlic, minced1/4 Tsp. - Black Pepper3 Large - Yellow onions, minced1 Tsp. - Whole oregano2 Qts. - Canned whole Italian tomatoes1 Tsp. - Whole basil

    Process

    Melt the butter with olive oil in an oven or large skillet. Now slowly but completely saut the garlic andonion. Then add the tomatoes, salt, pepper, oregano, basil and puree. Boil it.

    Cover the mixture and let it bubble for two hours. In between, stir it occasionally. Crush the tomatoeswith the masher. Continue the process till the sauce reaches the consistency of a soup.Set the sauce aside to cool before applying it to your pizza dough, or, or refrigerate it for use in thefuture.

    Pizza Topping

    Ladle about 7 to 8 oz. of pizza sauce into the middle, bottom of the dough shell. Spread the sauceevenly over the surface of the dough sheet. Spoon the sauce out to the edge of the dough sheet.Leave a small margin on the outer-side of the dough sheet, which allows the crust to rise and crisp

    more quickly than the covered dough; creating the classic, puffed up edge of the pizza.Now create a layer of the shredded cheese over the sauce. Shred about two cups of cheese. Arrangeyour toppings over this layer of cheese.

    Add toppings according to your preference.

    Preheat your oven up-to the temperature of 450 F for about 10 to 15 minutes. When preheating isdone, place a prepped pizza in the oven at the centre. Place the pan in the oven such as there ismaximum circulation of air around the pan. The baking will take about 10-15 minutes at thattemperature.

    Signs to look for that the pizza is ready are:

    1) The cheese has melted on top and is beginning to brown.2) The crust edge has browned, from a medium to a golden brown.3) Now carefully lift the edge of the pizza to inspect its bottom, it should be evenly brown.

    If these signs are evident, your pizza's done! Thus now you are ready to throw regular pizza parties ofyour home made pizza to your friends and family.

    Pizza - all home madeI get huge number of question from khanakhazana readers about

    making Pizza at home. Buying a pre-fabricated pizza base from the

    market is not my idea of cooking either. Hey, if you want to get 1/2 of

    the Pizza from outside, why all the fuss, go ahead and just order

    delivery.But, if you are one of those who spends some quality time in your

    kitchen, this is for you! One more thing, I think there are at least a

    million different varieties of pizza and pizza crust out there. So, it is an

    absolute delight to personalize your pizza, just the way you want it. Be

    creative, let it flow

    I will share a basic dough method. It is easiest to make in a food

    processor or bread maker. However, go ahead and make it by hand.

    There's just a lot of mixing and kneading that way, but then you bond with your food, don't you?. Feel free to add

    ingredients to the dough to make it more interesting. I've often added chopped garlic, Dill () and coriander

    leaves ().

    What you need:3 cup flour

    1 teaspoon salt

    1/4 cup warm water

    1 package dry yeast2 tablespoons olive oil

    1 tablespoon honey

    3/4 cup water

    Combine salt and flour. Dissolve the yeast in warm water; let sit for10 minutes. Water should still be warm when you add the oil, honey,

    water, and yeast mixture to the flour.

    The dough should turn into a ball. If the dough does not ball up

    because it's too dry, add water one tablespoon at a time until it does. Ifyour mixture is more like a batter, add flour one tablespoon at a time.

    Adding water or flour as needed to get the right consistency will

    assure you always get a perfect dough. Just remember to do it in smallamounts.

    Place the dough ball on a floured board and knead for about a minute.

    This builds the gluten which helps the dough to rise and become fluffywhen cooked.

    Put the dough in a plastic grocery bag or a covered bowl and store in a

    warm, dry area to rise.

    After about 45 minutes the dough should have about doubled in size.

    Show it who's boss and punch it down. That's right, give it a good

    smack so it deflates. Let it rise for another hour to an hour and a half.The dough is now ready to be rolled out. You can punch the dough

    down one more time if you want and wait another hour or two before

    rolling out. The choice is yours.

    One mistake most people make when working with dough is not usingenough muscle. I tell people that is actually an opportunity for a niceexercise of your hands. You can't really damage the dough so don't be

    afraid. When working with dough, use plenty of flour, but don't let it

    get too dry. It should be fun to work with, not too sticky and not toocrumbly.

    Using both hands, one on top of the other, press from the center

    outwards on it to start stretching it out, turning the dough a bit on eachpush. You can also pick up the dough and squeeze the edges of it

    while turning it like a steering wheel. This allows the weight of the

    dough to stretch it. Once the dough is about 1/2" thick all the way

    around, use a rolling pin to flatten it out to about 1/4" thick and makeit even.

    Take a fork and put puncture holes all over the dough. This keeps it

    from bubbling up while cooking and it also helps to hold the sauce onas well.

    Phew! now you are almost there. All you need to do now is to spread

    the sauce, add cheese and your choice of toppings, and bake at 400 F

    till the crust is golden.

    flavoured pizza,I dint took much effort to make it more of Indianized version,still I tried to make

    it a bit spicy and Indian flavoured. So for the Indianizing part,what I added is paneer and baby

    corn as topping just we get in Chennai and I sprinkled garam masala and tandoori masala over the

    toppings And the result is a yummy Pizza,which my kid enjoyed a lot as it had the paneer and

    the baby corn,his favourite and of course pizza his favourite,so its a double treat for him!

    I just followed the base recipe and method ofRaaga-The singing chef, the recipe is a keeper!

    Right from the salt,everything is perfect measurement!

    And If I could make,any one can make it :) So dont be afraid to try it out yourself !

    INGREDIENTS FOR THE DOUGH:

    All purpose flour/Maida 1& 1/2 cups

    METHOD FOR DOUGH:

    1. Take a broad vessel,add oilive oil,sugar,salt and boil the water and add to it.Mix

    well to dissolve sugar and salt and then add the milk and yeast.

    2. Mix well to dissolve the yeast.

    3. Add the flour and gather to get a smooth dough. No need to knead so much.

    4. Keep covered with a wet cloth till an hour.

    5. After an hour it will be doubled in size.

    6. Again gather to make a smooth pliable dough,I dint fly the dough in air,just rolled

    using rolling pin (Adjust the thickness and roll out to a single base) and folded the ends as

    shown in the pictures.(You can prick the base with fork to make sure of getting cooked

    every where,but I forgot to do so,still mine got cooked fine)

    TO MAKE IT AS A PIZZA:

    1. Spread the sauce and sprinkle some cheese.(Optional to spread cheese at this

    stage)

    2. Arrange the toppings as desired and add the grated cheese to cover the toppings.

    3. Lastly to make it Indian,I sprinkled the masala powders.Drizzle with little olive oil

    on top.

    TO BAKE:

    1. Grease a pizza pan,with olive oil and transfer the prepared pizza to it,I dont have

    any pan so I just lined my tray in the oven (combination oven,I used the convection mode

    to bake ) with aluminium foil to bake the pizza :)

    2. Preheat the oven for 210 degree Celsius and bake for 12- 15 mins..,till the baseand the cheese turns golden brown.

    SWEET POTATO BUNS / ROLLS AND ANNOUNCING AN EVENT!!

    I had a lone sweet potato after making some other recipe and was thinking what to make with

    it. Then saw this Sweet Potato Buns recipe in a cookbook I took from the library (The Best Veggie

    Burgers On The Planet by Joni Marie Newman). I was more than happy to try it out. And I always

    wanted to experiment buns with longer kneading time, as my previous attempts has no much

    kneading time.

    I was just amazed with the result of this buns,they were smooth,soft outside and the pores

    were very fine and spongy inside. I was thrilled and could not wait to taste the buns as I saw them

    raising,with smooth top inside the oven while it was getting baked! And more than anything my

    hubby tasted and approved it was tasting good(he is not a big fan of yeasted breads/buns). My kid

    also had it happily after he returned from the School.

    INGREDIENTS

    Sweet potato 1 small

    Plain flour/All purpose

    flour/ Maida

    2 cups

    + 1/2 cup for sprinkling

    Olive oil 1/8 cup

    Sugar 1 tsp

    Warm water 1/4 cup

    Milk 1/2 cup

    Salt 3/4 tsp

    Honey 1 tsp

    Active dry yeast 3/4 tblsp

    Butter For brushing

    Method1. Pressure cook/boil the sweet potato up to 3-4 whistles with little water. Drain

    water, cool, peel the skin off and mash it.

    2. Meanwhile add yeast,sugar to the warm water and dissolve completely. Let it sit

    for 10 minutes, after which it would have raised double in volume.

    3. Add milk,oil,honey to the mashed sweet potato and mash,mix as smooth as you

    can, you can use a blender too if you want.

    4. In another large bowl,mix flour and salt. Make a dent in the middle and stir in the

    yeast mixture. Mix well and add the milk/potato mixture and knead to a dough.

    5. Sprinkle flour to make a non sticky dough while kneading. Knead well for 8-10

    minutes,until smooth and elastic.

    6. Cling wrap the mouth of the bowl and keep aside for an hour to let it raise.

    7. After an hour,punch down the dough and sprinkle more flour if its sticky(only if

    needed) and knead again for 2 minutes.

    8. Divide into 6 equal balls and arrange it in a greased baking tray. Make sure you

    give enough space to avoid sticking to each other.

    9. Preheat the oven to 190o C. Bake the buns for 13-15 minutes. Take out and quickly

    Notes

    If your yeast mixture doesn't raise in step 2 then your yeast is not active,

    please do not attempt making the buns. You may not get it right.

    Kneading the dough is the main key to get softest buns that takes to a

    whole new level.

    You can replace oil with melted butter as well.

    For vegan version, use agave nectar in place of honey and soy milk in place

    of milk and oil in place of butter.

    I had long time wish for trying out these stuffed buns/masala buns. When ever any of our

    blogger friends post stuffed buns, I always wish I could try it out and today is the day! I just

    followed the same recipe for the dough as my pizza doughStuffing also of our own

    choice/imagination.

    INGREDIENTS

    For the Dough

    Maida/All purpose flour 1 & 1/2 cups

    Milk 1/4 cup

    water 1/4 cup(add if more needed)

    Active dry yeast 3/4 tblsp

    Red chilli powder 1/4 tsp

    Turmeric powder 1/8 tsp

    Coriander leaves & lemon Juice As needed

    Method:1. Warm the milk,add sugar to it and mix well. Add the yeast to it and mix well. Keep

    aside.

    2. Take flour and make a dent,add water,olive oil,salt in it and the yeast completely

    dissolved in the milk.

    3. Mix and make a smooth dough,keep in a warm place covered with a cling wrap for

    an hour.

    4. Meanwhile prepare the stuffing. Cook the vegetables and heat a pan with

    oil,season with jeera/ajwain,add the onion and fry till transparent.

    5. Add the masala powder,red chilli powder,turmeric and salt and give it a quick stir.

    6. Add the cooked,mashed vegetables and fry till everything mixes well.

    7. Remove from fire and add the coriander leaves and lemon juice if desired,mix

    well.

    8. By now/after an hour, the dough we prepared would have doubled in size. Take it

    again and just give it a gentle knead and make six equal sized balls.

    9. Line a baking tray with aluminium foil,grease with olive oil and arrange the rolled

    balls with enough spacing between them. Brush with olive oil .

    10. Meanwhile roll the stuffing after cooling down completely.The stuffing should be

    around half the size as we roll the buns.

    11. After 10 minutes or so the rolled bun dough, would have raised again ( may be I

    can say little) .

    12. Take each bun and make a dent in the middle.

    13. Keep the rolled stuffing inside and pinch all the end towards centre to cover the

    stuffing.

    14. Roll in to smooth bun. Repeat for every bun. Arrange them in the lined baking tray.

    Keep the pinched joined side down.Brush them well with olive oil.

    15. Preheat the oven for 190C. When the preheat is finished,by the time the buns

    would have raised too(refer the picture below).

    16. Bake for 17- 20 mins or until the top crust turns golden brown in colour. (Mine took

    exactly 19 mins) Smells heavenly!!

    17. After finished baking,brush them with butter or oil and enjoy with tea/evening

    snack! This would be a great snack for kids after they come back from school!

    You can use the stuffing of your choice,use yourimagination and adjust according to your taste!

    I have measure everything properly and tried my bestto give the exact measurement.Just adjust the water quantityalone if you feel the dough is very stiff. The dough should be soft and pliable,not stiff. The Yeast is very important factor,let it be active andfresh,otherwise the whole recipe is flop.     Pizza has its origins in Italy and now well known and loved all across the world, including India in recent

    I have provided here helps you to prepare Pizza any time at home without ordering one from Pizza Hut or

    Dominos, provided you have the Pizza base ready with you (purchased or if you kno w how to prepare

    Advantage of preparing Pizza at home is that you can choose toppings of your own choice, the cheese

    spread of your choice, vegetable masala spread which is just as spicy and yummy as you need. You do

    not need to pay a big price for those tiny toppings choice offered by Pizza giants. If you purchase Pizza

    base from the retail store, preparing Vegetarian Pizza is quick and easy as you can see below. It requires

    just about 20 minutes of your time, perhaps much less than the time it takes to drive to a Pizza Hut or

    Dominos, order and then wait for order to be fulfilled.

    For the Vegetarian Pizza described here, I have used Onions and Capsicum toppings only. Of course,

    nothing stops you from adding other soft vegetables like Tomatoes, Sweet Corn, Baby Corn, Olives and

    fruits like Pineapple pieces, milk products like Paneer or Tofu pieces. But I must admit that I really love to

    have Vegetarian Pizza from Pizza Hut and Papa Johns. For my pleasure, Pizza Hut has come out with

    numerous varieties of Vegetarian Pizzas here in India with tongue-catching names like Country Feast,

    Paneer EL Rancho, Exotica, Kadai Paneer, Spicy Veggie, Veggie Crunch etc. along with the popular

    Veggie Lovers Pizza. If you are one among those who frequent Pizza Hut or other Pizza outlets, do drop

    Vegetarian Pizza With Ready Base

    Vegetarian Pizza Ingredients:

    Pizza Base 1

    Butter 1 Tbsp

    How to make Vegetarian Pizza:

    1. Chop the Onion and Capsicum into small pieces. Keep aside.

    2. Take a readymade Pizza Base and smear with butter (spread butter) all over the base as shown below.

    3. Heat Oil (1/2 Tbsp) + Butter (1 Tbsp) in a pan, add chopped Onions and fry for 2-3 minutes or until the

    Onions start to look transparent. Now add Ginger Garlic Paste (available in the store) and fry for a minute.

    4. Now add Capsicum to the frying pan and cook the same for 5 minutes making sure that the Capsicum

    does not turn too soft (do not overcook Capsicum). Now add Tomato Puree and cook for 2-3 minutes or

    until the liquid content is mixed well with Capsicum and Onions.

    5. Then add Oregano, Tandoori Color (optional) and Dry Basil (optional) and ensure that these mix wellwith the other ingredients in the pan.

    6. Now add Salt, Pepper Powder, Red Chilli Powder and saute for 2 min. Finally add Tomato Sauce and

    7. Preheat the Microwave oven or Normal OTG for 5 min. In my case, I made the Pizza in a Microwave

    Oven by heating in grill mode.

    Vegetable Spread and Cheese on the Pizza Base

    8. Take the butter smeared Pizza Base from Step 2 above, spread the entire vegetable mixture/masala

    spread from Step 6 above.

    9. Sprinkle grated Mozzarella Cheese and place this ready to cook Pizza on a crust plate for baking.

    Instead of using a crust plate, you can keep this Vegetarian Pizza base directly on a grill stand and grill it

    for 4-6 minutes or until the Cheese melts and spreads all over the Pizza base.
