Maple syrup isn’t just for breakfast anymore as you can see from this selection of recipes shared by Ohio Maple Producers. Maple syrup has many nutritional benefits and can add a unique taste to make a simple food spe-cial for your family.
Maple-Garlic Chipotle Wings3 Chipotle Chiles½ Cup Canola Oil3 Cloves Garlic¼ Cup Pure Maple Syrup1 tsp Black Pepper2 ½ lbs Chicken Wings Preheat oven to 425 degrees F. Line a baking sheet with parchment paper. To make sauce, puree the chipot-les in a blender. Add remaining items, except wings, and blend until smooth. Arrange the wings on the prepared pan and sprinkle with pepper on both sides. Bake for 15 minutes. Remove from the oven and turn the wings over. Preheat the broiler. Brush the wings with the sauce and broil for 3 minutes. Remove and turn, baste with the sauce and broil for 2 minutes on the second side, or until crispy. Remove, brush with any remaining sauce.
Candied Maple Bacon So easy to make, this candied bacon is maple-y, sweet, and salty, Perfect on waffles, icecream or to add a smoky maple flavor to any favorite dish.
Ingredients 1 pound of bacon 1/2 cup brown sugar 1/2 cup of Ohio maple syrup
Instructions1. Preheat oven to 325 degrees F.2. Line two rimmed cookie sheets with parchment paper.3. Scoop the brown sugar into a shallow long pan.4. Pour the maple sugar into another shallow long pan.5. Take each strip of bacon and dunk it into the map-le syrup, then the brown sugar. Place each strip on the cookiesheets.6. Place in the preheated oven and cook for about 15 minutes, turning once halfway through.7. Check the bacon and if it's how you like it remove from the oven. If you like yours a bit crispier you can add 5 minutesor so. Remove from oven and allow to cool for a few minutes.8. Pull each piece off the parchment paper and place on a plate to cool. If you can resist it that long.9. Serve with a big old maple smile!
Maple BBQ Sauce 2 Tbsp. butter ¼ C. Elm Run Farms 100% Pure Maple Syrup 2 Tbsp. minced onion 2 tsp. lemon juice 1 ½ C. ketchup 1 tsp. mustard 1 Tbsp. Worcestershire sauce Melt butter; add the onion and sauté until soft. Add remaining ingredients and simmer for a few minu-tes.
Maple Marinated Steak 3-4 lbs. Chuck beef, 1” thick ¾ C maple syrup ½ C soy sauce ½ cup cider vinegar 2 tsp. dry mustard ½ tsp. black pepper ½ tsp. garlic powder Trim off fat. Marinate for 4 hours. Remove meat. Broil 30-40 min. Baste frequently.
Barbecued Green Beans 4 Slices bacon, diced ¼ C. Elm Run Farms 100% Pure Maple Syrup 1 Sm. Onion, chopped 1 Tbsp. Worcestershire sauce ½ C. ketchup 1 Qt. green beans Brown bacon and onion together. Add, and simmer 2 minutes the next 3 ingredients. Pour over beans into casserole dish. Do not stir. Bake at 350 degrees for 20 minutes.
Sandy’s Famous Potato Salad 3 lbs. potatoes 4 tsp. mustard 4-5 eggs 1 ½ tsp. salt ½ sm. onion 3 ½ tsp. Elm Run Farms 100% Pure Maple Syrup 6 oz. sweet pickles, diced 16 oz. mayo Wash and boil unpeeled potatoes at medium tem-perature until soft (approx. 15-20 mins.) Boil eggs (ap-prox. 5-7 mins.). Peel and dice potatoes and eggs, and place into large bowl. Stir in pickles and onion. In a separate bowl, mix together remaining ingredients, and stir into potatoes.

Maple Syrup Doughnuts 1/2 cup maple syrup 1/2 cup sugar 2 eggs, beaten 1/4 cup buttermilk 4 Tbs. butter, melted 3 cups flour 2 tsp. baking powder 1 tsp. salt 1/2 tsp. soda 1/4 tsp. cinnamon 1/8 tsp. nutmeg In a mixing bowl combine dry ingredients. Set asi-de. In a separate larger bowl combine and beat together maple syrup, sugar, eggs and buttermilk. Stir in melted butter till well blended. Stir dry ingredients into liquid mixture until blended. (Do not overmix.) Place dough on floured bread board and roll out to 1/4 inch thickness. Cut with doughnut cutter. Fry in hot fat (deep fryer) at 3750 F. about one minu-te per side. Fry only a few at a time. Drain on paper to-wel. Roll in a mixture of cinnamon and sugar or sprinkle with maple sugar.
Meat-ball Hors D’oeuvres 2 lbs. Lean Ground Beef 1 Med. Onion, Chopped 2 Eggs
Breadcrumbs 1/2 Cup Maple Syrup 1/4 Cup Brown Sugar 1 tsp. Salt 11/2 Cups Chili Sauce Combine beef, onion, eggs and salt in bowl. Mix well. Add enough breadcrumbs to bind mixture. Shape into small balls. Brown in skillet. Pour rest of ingredients over meat and simmer. Serve with wooden picks.
Maple Baked Lamb Chops 4 lbs. Lamb Flank or 6 Chops 1/4 Cup French Dressing 1 tsp. Dry Mustard 1/2 tsp. Rosemary 1/2 tsp. Sage 2 tsp. Worcestershire Sauce 1/2 tsp. Mint Flakes 1/2 tsp. Salt Juice of 1/2 Lemon 1/2 Cup Maple Syrup 2-3 TBSP. Water Wipe meat with damp cloth. Mix together: French dressing, mustard, spices, Worcestershire Sauce, salt and lemon; then brush on meat. Place meat in shallow pan. Bake 3500 F. for I hour. Remove from oven and lower heat to 3250 F. Cook meat 30- 40 minutes, basting occasionally. (This recipe can be also be used with beef or pork.)

In a deep 2-quart saucepan, heat syrup over me-dium heat to 236 degrees on a candy thermometer. (If you have trouble with the syrup boiling over, add a tiny bit of butter or coconut oil.) Put popcorn in a large lightly oiled bowl. Pour syrup over popcorn and mix. Let cool, stirring occasionally.
Hot Maple Spiced Cider 1 gallon apple cider 2/3 C. Elm Run Farms 100% Pure Maple Syrup 2 tsp. cinnamon 1 tsp. allspice Mix all ingredients and bring to a simmer over medi-um heat. Add apple slices and cinnamon sticks for gar-nish if desired, and serve.
Maple BBQ Beans 1 can Pork & Beans 1 can Light Kidney Beans, rinsed, drained 1 can Dark Kidney Beans, rinsed, drained 1 can Black Beans, rinsed, drained 1/2# cooked, chopped bacon or ham 1 large chopped green bell pepper 1 large chopped onion 1/2 C Pure Ohio Maple Syrup 1 C BBQ Sauce 2 to 3 cloves garlic, chopped for a little heat, add some chopped jalapenos Combine all of the above ingredients in large crock-pot. Cook on low for 8 hours. This is a great recipe! A whole meal done in the crock-pot. Some easy variations ~ you can use most kinds of meat for this. It’s great to make using all your leftovers from the week. You can also add potatoes. Ser-ve this along with warm cornbread, topped with butter & Pure Ohio Maple Syrup.
Maple Ice Cream (6 quart ice cream maker)
1 ½ qt. half and half 3 C. Elm Run Farms 100% Pure Maple Syrup Milk to ½ full Combine ingredients and churn according to the ice cream maker manufacturer instructions.
Maple Gingerbread 1/2 Cup pure Ohio maple syrup 2 Cup flour 1/2 t salt 1 t ginger 1 t soda 2 eggs 1 Cup sour cream
Preheat oven to 325 F. degrees. Combine and sift dry ingredients. Mix Pure Ohio Maple Syrup with beaten eggs and add sour cream. Combine the mixture and bake in greased 8" x 8" pan for 20 to 30 minutes. Serve warm with whipped cream or favorite ice cream. Yield: About 8 to 10 servings.
Maple Cheesecake 8 oz. cream cheese softened 8 oz. whipped topping ½ C maple sugar or syrup 1 pre-made graham cracker pie crust Mix all ingredients together and pour into pie crust. Let chill overnight. Sprinkle top with maple sugar before serving.
MAPLE SYRUP PECAN PIE 3 Eggs, Well Beaten 1/3 Cup Melted Butter Dash Salt 2 TBSP. Flour 1 Cup Dark Amber Maple Syrup 2/3 Cup Sugar 1 ½ tsp. Vanilla 1 Unbaked Pie Shell Beat all of the above ingredients well with a mixer. Add 1 1/4 cups pecan halves. Bake at 3500 F. for about 1 hour.
Hemingway's Hot Butter Maple Rum 1/2 Cup Apple Cider 1/2 Cup Hot Water 2 TBSP. Dark Maple Syrup 2 TBSP. Butter 11/2 oz. Dark Rum (if you use dark rum, you can use Light Syrup) 1/2 tsp. Grated Nutmeg Heat cider, hot water, Maple Syrup and butter in small saucepan until butter is melted. Stir in rum. Serves 1.
Maple Punch I 6 oz. Can Frozen Lemonade 2/3 cup Maple Syrup 1 Quart Ginger Ale 1 Tray Ice Cubes Empty the lemonade into a large pitcher and stir in the maple syrup. At serving time, add the ginger ale and ice cubes. Mix well and serve immediately. Serves six.
Maple Sweet Pickles 7 lbs. Fruit (Plums, Pears, Peaches or Cucumbers) I Pint Cider Vinegar 1 tsp. Cinnamon 3 lbs. Maple Sugar 1 tsp. Ground Cloves 1 tsp. Ground Allspice Mix and boil until the fruit is tender.

Maple Chipotle BBQ Pulled Pork In small saucepan, cook slowly over med-low heat until well softened and beginning to caramelize: 3 TBSP. olive oil 3 cloves chopped garlic 1 medium red onion, chopped
Add: 2 Cups plain tomato sauce 1/2 cup maple syrup 1/4 Cup apple cider vinegar 1 teaspoon salt 1 tsp. black pepper 1/2 tsp. ground dry thyme 1 or 2 tsp. ground chipotle powder Simmer slowly for 20-30 minutes or until reduced by 1/4, stirring often. When cool, puree in a blender until smooth. Makes 2 1/2 cups. For the pork, dry rub a 5-6 lb. pork shoulder roast with a mixture of: 1/2 tsp. powdered ginger 1 TBSP. garlic powder 1 TBSP. black pepper 1 1/2 TBSP. kosher salt 1 TBSP. dry thyme Heat 4 tablespoons oil in a large skillet over medium heat and brown the roast on all sides. Transfer to a co-vered roasting pan. To the roasting pan, add: 1 medium onion, chopped 3 cloves minced garlic
1/4 Cup apple cider vinegar 1 1/2 Cups chicken stock or water 1/4 Cup Maple syrup 1/2 to 1 tsp. ground chipotle powder, according to taste 4 medium firm apples, peeled and chunked 2 TBSP chopped fresh thyme (or 1 tsp dry thyme) 1 tsp. salt 1 tsp. ground pepper Pour all over the roast and cover with foil then the pan lid. Roast at 300oF for 3-4 hours until meat is ten-der and falling off the bone. Remove the braising liquid to a saucepan, skim all the excess fat and reduce the liquid until thickened slightly. You can puree the sauce to smooth it out and incorporate the cooked onions and apples. Serve over the pulled pork.
Maple Apple Crisp 5 apples peeled and sliced 3/4 C Maple syrup 1/2 C flour 1/2 C quick oats ½ C brown sugar ¼ tsp. salt 1/2 C butter Pour syrup over apples and arrange apples in gre-ased 8” x 8” baking dish. Mix dry ingredients and cut in butter until mixture resembles coarse bread crumbs. Sprinkle over apples. Bake at 375º until apples are ten-

Ham Loaf
1 lb. Ground Fresh Pork 2 lbs. Ground Ham 1 Cup Bread Crumbs 1 Cup Milk 2 Eggs Beaten Mix the above ingredients together. 3/4 Cup Maple Syrup 1/4 Cup Brown Sugar 1/2 Cup Water 1 tsp. Cloves 1/2 Cup Vinegar
Mix the remaining ingredients together for a glaze. Bake in covered roaster about 1 hour, basting at least four times with the glaze. Bake at 350 F.
Mapled Pork Chops
6 Pork Chops cut 1” thick 1/4 Cup Chopped Onion ½ tsp. Chili Powder 1 TBSP Vinegar ¼ Cup Maple Syrup 1 TBSP. Worcestershire Sauce 1 1/2 tsp. Salt 1/8 tsp. Pepper 1/4 Cup Water Mix ingredients together and pour over the pork
chops. Cover and bake 45 minutes at 400 F, basting oc-casionally. Uncover and bake 15 minutes more. Place chops on platter and thicken sauce with flour. Pour over the meat.
Salad Dressing 3/4 Cup Oil 1/4 tsp Paprika 1/4 Cup Cider Vinegar 1/4 tsp. Pepper Dash of Garlic Salt 1/2 Cup Maple Syrup Dash of Salt 1 tsp. Dry Mustard 1 TBSP. Dried Onion Flakes Mix ingredients together and shake well. Store in the refrigerator.
Maple Vinaigrette 1/2 tsp. Salt 1/4 tsp. Freshly Ground Pepper 2 TBSP. Pure Maple Syrup 1 tsp. Dijon Mustard 2 TBSP. Red Wine Vinegar 1/2 Cup Vegetable Oil (Olive Oil is Too Strong) Mix together in a jar by hand, or for a creamier dres-sing, use a blender. Particularly good on a salad of mes-clun (mixed baby greens) with sliced strawberries and slivered almonds fried briefly in butter until light brown.

Maple Corn Bread 1 egg beaten 1/2 Cup Maple syrup 3/4 Cup milk 3 Tbs. butter, melted 1 Cup yellow cornmeal 1 Cup flour 3 tsp. baking powder 1/2 tsp. salt In a mixing bowl combine dry ingredients. In a se-parate bowl combine remaining ingredients. Stir liquid mixture into dry mixture. Do not beat. Pour into a 9 x 9-inch square greased baking dish. Bake in 400 F. oven about 20 minutes till light golden brown.
Maple Syrup Muffins 1 Cup flour 1/2 Cup whole wheat flour 2 tsp. baking powder 1/2 tsp. salt 1 egg, beaten 1/2 Cup Maple syrup 1/2 Cup milk 1/4 Cup cooking oil 1/2 tsp. grated orange rind In a large mixing bowl combine flours, baking pow-der and salt. Set aside. In another bowl combine and blend well the remaining ingredients. Make a large indention in the center of the dry ingre-dients. Pour liquid ingredients into the hole and stir till just moistened. (Do not overmix.) Batter will be lumpy. Pour into greased muffin tins to 2/3 full. Bake in 375 F. oven 18-20 minutes.
Maple Baked Chicken
1 3 lb. chicken, cut in pieces 4 Tbs. butter, melted 1/2 tsp. grated lemon peel 1/4 cup Maple syrup 1 tsp. salt Dash pepper 2 tsp. lemon juice 1/4 cup chopped nuts (optional)
Place chicken pieces in a shallow casserole dish or baking pan. Combine remaining ingredients and pour over chicken pieces. Bake (uncovered) in 325 F. oven 50-60 minutes, basting every 15 minutes.
Maple Glazed Ham 1/2 Cup Maple syrup 1 Tbs. prepared mustard 1/4 cup orange juice Combine. Spread over ham after you have re-moved the rind. Baste during the last hour of cooking every 10 minutes.
Maple Glazed Carrots 1/4 Cup Maple syrup 6-8 medium carrots 3 Tbs. butter ¼ tsp Ginger Clean and slice carrots. Melt butter and maple syrup in a large iron skillet and add carrots. Bring mixture to a boil. Reduce heat and simmer till liquid is absorbed and slices are well glazed.
Maple Butter 1/4 Cup Maple syrup 1 Tbs. prepared mustard 1/4 Cup orange juice Combine. Spread over ham after you have re-moved the rind. Baste during the last hour of cooking every 10 minutes.
Maple Spice Cake 1/4 Cup butter 1 Cup Maple syrup 1 Cup apple sauce 2 eggs, beaten 1/3 Cup milk 1 1/2 Cups sifted flour 2 tsp. baking powder 1/2 tsp. salt 1/2 tsp. cinnamon 1/8 tsp. ground ginger 1/4 tsp. nutmeg Sift together dry ingredients into a large mixing bowl. Set aside. In a separate bowl combine remaining ingredients. Stir dry ingredients gradually into liquid mixture. Blend well. Pour batter into a 9-inch square greased pan. Bake in 350 F. oven 40-50 minutes. Frost with maple icing.
Maple Frosting 1/2 tsp. vanilla 1/2 Cup Maple syrup 2 Cups confectioners' sugar 1 Tbs. butter, softened 1/8 tsp. salt Into a small bowl sift the confectioners' sugar. Blend in remaining ingredients and beat. Add more confectio-ners' sugar if necessary.
Maple Blueberry Buckle 1/3 Cup Maple Syrup 1/2 tsp. Allspice Grated of 1 Lemon 2 Cups Blueberries 1/2 tsp. Cinnamon Combine above ingredients in saucepan. Heat gently. Pour into buttered 8” x 8” square pan. For the Topping: 1 Cup Flour 1/4 tsp. Salt 2 TBSP. Maple Syrup 11/2 tsp. Baking Powder 3 TBSP. Butter 2 TBSP. Milk Preheat oven to 400 F. Sift the dry ingredients. Cut the butter into the dry ingredients until the pieces are about the size of small peas. Blend syrup and milk then add the flour, tossing with a fork or hands. The dough should be neither too dry nor too wet. Roll out dough into a square 8" x 8". Lay on top of fruit mixture and bake about 20 minutes. Top with whipped cream. Serves 6 - 8.

This March our trees will be tapped, sap gathered and boiled, pancakes and sausage cooked, and coffee brewed for thousands more people who for over 67 years have made this a yearly tradition. The Burton Log Cabin* will be making maple syrup and maple candy, a tradition in the area which dates back for centuries. An Antique and Craft Show will be in full swing at the High School where Beaches & Dreams Travel Co. will be waiting to see you. The Burton Public Library will host book sales and Century Village Museum will bustle with activity. Local antiques stores and shops stocked with new ideas for spring are ready for visitors. But don’t despair... you can still have unique & delicious pancakes even after the season ends. All year our local restaurants serve a variety of pancake selections and they all use pure maple syrup!
