How to Use Ø Pure maple syrup can be used
as a healthy alternative to sugar in a variety of dishes, such as desserts and baked goods. The natural sweetness adds depth and complexity to a wide range of entrees, and can be used for glazes, rubs or barbeque sauces for poultry, meat, seafood or vegetables.
Ø To substitute: use 1 cup of maple syrup for every 1 cup of white sugar in your recipe, but reduce the liquid in the recipe by 3 tablespoons for each cup of syrup used.
Ø Pure maple syrup can also add a subtle sweetness and hint of flavour to fresh fruit, cereal and ice cream, as well as sweeten tea, hot chocolate, coffee, eggnog and smoothies.
Nutrition Facts Ø Maple syrup contains significant amounts of potassium
(35mg/tbsp.) and calcium 21mg/tbsp). Ø It contains small amounts of iron and phosphorous and
trace amounts of B-vitamins. Ø Maple syrup is low in sodium with only 2 mg per
tablespoon. Ø Maple syrup contains many natural antioxidants and
anti-inflammatory compounds. Ø Maple syrup provides about 50 calories per tablespoon.

Ingredients:
¼ cup local maple syrup ½ cup melted butter salt and pepper to taste 12 ears of local corn
Directions:
1. Preheat the grill to high. 2. In a bowl, combine the maple syrup, butter, salt and pepper. Set aside. 3. Remove the first layer of husks from each ear of corn. 4. Gently spread out the remaining husk leaves, remove the corn silk and baste the corn with the maple-‐butter mixture. Pat the remaining husks back around the cob and wrap each in aluminum foil. 5. Place corn on the grill and close the cover. 6. After four minutes, give the corn a quarter turn and close the cover. Repeat three times until all four sides have been grilled (a total of 16 minutes). Unwrap, remove husks and enjoy!

Storage Ø As an unopened bottle or container, the shelf life of
maple syrup is approximately one year. Once opened, the shelf life is approximately 6 months, refrigerated.
Ø Plastic containers are inexpensive, but allows for some gas exchange to occur which decreases in syrup quality over time. Syrup in plastic containers will degrade and change color after 3 to 6 months of storage.
Ø Glass, while more expensive, maintains syrup quality.
Purchasing Tips Ø The darker the syrup, the stronger the flavour. Ø Syrups are divided into 4 colour classes:
o Golden maple syrup with a delicate taste o Amber maple syrup with a rich taste o Dark maple syrup with a robust taste o Very dark maple syrup with a strong taste
