The Monettes have made many expansions and updates to Flagstaff House since it was built as a cabin in 1929, including adding huge, floor to ceiling picture windows, several outside terraces, a richly crafted mahogany bar, and a cozy fireplace.

Expertise runs high in the Monette family, starting with owner and visionary, Don Monette, who has over 50 years in the restaurant industry.

In 1985, his son, Mark Monette, became Executive Chef, continuing the tradition of fine cuisine at Flagstaff House. Chef Monette has cooked in some of the best restaurants in New York City, France and the Orient, learning from master chefs such as Bernard Hermman and Thomas Keller. His unique style of cooking incorporates French American cuisine with Asian accents. His menu changes daily to take advantage of the freshest seasonal ingredients, including fresh fish flown in daily, locally grown organic products, and herbs from his own organic garden.

In 1993, another son, Scott Monette, became General Manager, bringing a sharp eye for detail and the ability to make every guest feel special, complementing his brother’s skills in the kitchen.

Flagstaff House Restaurant’s 160-page wine list has been a family passion since the day they opened. They have four sommeliers on staff and the largest wine collection in the state, with 20,000 bottles from 3,000 selections in three wine cellars with a value of more than $1 million. Beginning in 1983, Flagstaff House has earned yearly the coveted Wine Spectator’s Grand Award, a recognition of one of the best wine lists in the world. Flagstaff House restaurant, located at 1138 Flagstaff Road just 5 minutes from Boulder, has been owned and run by the Monette family for more than 40 years. Although not a “special occasion only” restaurant by any means, Flagstaff House likes to keep their restaurant feeling special with a “business casual” dress code: collared shirts, casual pants, slacks, skirts and dresses (no shorts, T-shirts, or athletic attire, please.)
