FETTUCCINE ALFREDO MEETS ITS MATCH

Rich and indulgent, Fettuccine Alfredo requires just three ingredients: butter, cream, cheese. This is one recipe where it's a good idea to use an artisan European butter and

top quality Parmigiana Reggiano, although I have been known to make it for my grandkids with butter from the fridge and Kraft Parmesan. Some recipes call for unsalted butter, but I prefer the salted variety. Use whichever you'd like, adding salt to taste.The sauce will be thin at first, until you add the cheese. If the sauce is too thick, use reserved pasta water to thin.

If served prior to the main course, in small portions, this dish will serve 6. However, add sautéed scallops, chicken or bacon and you’ve got a main course for 4.

FETTUCCINE ALFREDO

½ cup butter

1 cup heavy whipping cream

1 cup grated Parmigiana Reggiano

1 lb. cooked fettuccine, ½ cup pasta

water reserved

Freshly ground pepper, to taste

Minced fresh basil and grated Parmigiana

Reggiano, for garnish

In a medium saucepan, melt butter

with cream over medium low heat. Pour

over hot, cooked fettuccine. Add Parmi-

giana Reggiano and toss to coat. Sea-

son with freshly ground pepper.  Divide

among 4 – 6 plates. Garnish with basil

and additional cheese.

MATCH IT WITH PINOT GRIGIOIt’s not a hard and fast rule, but I tend to pair Italian wines with Italian foods. Alfredo’s decadent sauce is offset nice-ly by a Pinot Grigio, a crisp, dry Italian

white with bright acidity. The Pinot Gri-gio grape is also known as Pinot Gris in other parts of the world, including Alsace where the  Pinot Gris wine is usually spicier and fruitier than the Pi-not Grigio. Try them both and see which

Over the years, the farmhouse and or-chards were owned by various families. The farmhouse was rebuilt, used as a school, and later sold to the Keller family. The Kellers added to the farmhouse and opened the Pine Tree Tavern in 1934.The restaurant passed hands several times before operat-ing as Golfers at the Turn. Ron bought the property in 2002 and returned the Old Pine Tree to its former beauty as Timber Lodge. For decades the location has been – and re-mains – a most popular Medina spot.

Sommelier Matt Forrest, tell us about Galaxy Restaurant's Wine Room and wine cellar.

The Wine Room is an intimate counterpart to the Circle L Steakhouse, with seating for 30-plus in the main dining area, and 24-plus in the bar area. Two fireplaces and an expansive view of the wine cellar through a glass wall help lend an ambience of class and sophistication.

The wine cellar is strictly temperature-controlled at a cool 59 degrees Fahrenheit (55 is ideal for storing wines long term, but 59 allows for a compromise to ensure more appropriate serving temperature for reds, usually 60 degrees Fahrenheit). Cellar capacity is approximately 5,000 bottles. 

How many different wines do you stock?We currently stock a little over 420 different wines

by the bottle, representing over 50 different grape varietals from 11 countries.  The Wine Room offers 50 wines by the glass, including  eight higher-end selections poured from our Napa Technology Wine Stations. We're currently pouring notable selections such as Caymus Cabernet Sauvignon, Shafer One Point Five Cabernet Sauvignon, and Mollydooker Carnival of Love Shiraz.  A 6 ounce glass will run $25, which is very near retail price. Prices for on-premise consumption range from $20 for a bottle of Cristalino Brut Cava (a dry, traditional method sparkling wine from Spain) to $1,250 for a bottle of Chateau Margaux 2003 (one of the most famous red wines in the world. It 's a first growth Bordeaux capable of aging gracefully for decades). Almost half of our wines by the bottle are priced at $50 or below for on-premise consumption, offering tremendous value and a wide range of selections from around the globe. (Come in and ask for a bottle of Boutari Santorini Assyrtiko ($48) and the sommelier will be overjoyed!) Standard glass pour prices are very reasonable, ranging from $6 for a 6 ounce glass of our privately-labeled Galaxy house wines (Chardonnay, Pinot Grigio, White Zinfandel, Merlot, and Cabernet Sauvignon) to $15 for a 6 ounce glass of Beringer Knights Valley Cabernet Sauvignon (the only wine Galaxy owner Robert Leatherman has ever ordered during my tenure) or a 187ml "split" of Laurent Perrier Brut Champagne.

What are some of your best sellers?Moscato, Riesling, Cabernet Sauvignon, and red blends rule the

day at the Galaxy. Consistent movers are Borgo Maragliano "La Caliera" Moscato

Color is all about the tone of the stone. “There are some diamonds with tints of yellow or brown. The less color the better, although on the opposite end of the spectrum there are fancy yellow diamonds that are quite valuable.” Carats refer to the weight of the stone.

Feeding the dog. Simple, right? Well, maybe not, since there are so many choices and so much information available about

pet nutrition. There is no best diet for dogs, in spite of all of the marketing campaigns to the contrary. If it sounds too good to be true, then it probably is. However, there are many excellent commercially available dog foods. Several pet food manufactur-ers also have veterinary prescription diets specifically designed to prevent and  treat many common disorders. One example is Royal Canin, which makes a complete line of therapeutic diets in addition to wellness diets for all life stages.

What diets are best for your dog?Look for diets that are made by reputable companies that have

been around for a long time. They often have long histories of pro-ducing quality diets. Look for recent information on pet food recalls and the reason for the recall. Was it due to poor quality ingredients or lack of quality control?  Also, make sure that you are feeding a diet that is appropriate for your dog’s life stage. Puppies have nutritional requirements that differ from adult dogs and should be fed a diet appropriate for growth.Wet and dry foods do not differ nutritionally; however, since wet foods are 75% water, dogs need to eat a lot more to get the same number of calories.

How much money should you spend on dog food?Expense doesn’t always equal quality. A higher price often means

higher quality ingredients and better quality control, but be careful that you’re not paying for fancy packaging and creative market-ing. For example, a new trend towards “grain-free” diets has creat-ed some relatively expensive new diets for dogs. However, there is no scientific evidence that grains are bad for dogs. On the contrary, grains contribute valuable nutrients such as vitamins, minerals, fiber, and essential fatty acids to diets while lowering fat and calories. Dogs are very efficient at digesting nutrients from grains. Many grain-free

diets simply substitute highly refined starches in place of grains, pro-viding fewer nutrients and less fiber while costing more.

What ingredients should you look for?Ingredient lists are often used to judge the quality of dog foods,

but this approach is very subjective and you can easily be fooled by the manipulation of pet food manufacturers.  Ingredients are listed in order of weight, including water, so anything with high-water content, such as fresh meats and vegetables, will be listed higher than similar dry ingredients even though the nutri-ent content may be less. Dogs require nutrients, not ingredients; therefore a diet full of ingredients for marketing purposes can be less nutritious than a diet containing less appealing ingredients that are high in nutrients. For example, many by-products are far more nutrient dense than whole meats on a per weight basis, however, the terminology is less appealing to humans.

Are home-cooked diets healthier for your dog?High quality commercial diets generally offer the best nutrition

with the most convenience and affordability.  However, some pet owners prefer to prepare home-cooked diets to control ingredients and allow customization of the diet for their dog. If you choose to cook for your dog, make sure that the diet you pick has been formulated by a qualified veterinary nutritionist. Avoid raw diets, as there is no sub-stantial evidence that these diets are better than cooked diets. On the contrary, raw diets have been associated with many health concerns.

Use these facts and the advice of your veterinarian to make the best decision on what to feed your dog to keep him or her happy and healthy for a very long time.

small local charity that really needs the help. I love animals and the Medina Raptor Center is a wonderful place."

Laura Jordan  of Medina Raptor Center is thrilled. "We sure appreciate the help. In 2015 we took in about 600 injured birds. We have three veterinarians who donate their services, plus many volunteers. It's a wonderful thing to see an injured bird begin to heal and eventually fly back into the wild."

So,  let's recap --  the Benders donated the tree that was chopped down for free by Treemasters  on behalf of Medina's Odd Fellows, who donate their time to worthy causes. The tree was decorated by volunteers and photographed by a professional photographer who is donating the proceeds for the sale of the photo to the Medina Raptor Center. The Medina Raptor Center is manned by a staff of volunteers, including three veterinarians who donate their time to care for injured birds. And that, Medina County, is why you inspire us.

The Story behind Medina's Christmas Tree

Julie Bender wasn't crazy about the  pine tree in her Medina front yard. Overgrown at

20 feet, the Norway Spruce cast a dark shadow through her living room window.

"The first year we lived in our home, my husband strung lights to the very top of the tree," Julie says,"By the following year, it was too big to decorate."

In April, 2015, Julie and her husband Dan decided to have the tree removed. Julie called several tree trimming companies and settled on Treemasters of Medina. Treemasters arborist Jeff Bumbulis took a look at the tree and gave the couple an estimate.  Then  he offered an alternative.

"I told them I could chop down the tree that spring," says Jeff, "But if  they waited until mid-November, I would chop down the tree for free."

Jeff asked Julie if she would donate the tree to the city. If so, he would donate his services to remove the tree. Julie agreed.

Jeff and certified arborist and Medina parks and recreation director, Jansen Wehrley,  are  in charge of finding Medina's Christmas tree.  Jeff is also a member of the Independent Order of Odd Fellows of Medina, a group of local men dedicated to

contributing to the community. He decided he would donate his services to chop down the tree on behalf of the Odd Fellows.

That spring, Jeff sheared the tree so it would bulk up over the next seven months. "So it would look more like a Christmas tree," he says.  The tree came down in mid-November, with the  top 13 feet  transferred to Medina Square's gazebo.

After being decorated by Main Street Medina staff members and volunteers in preparation for Candlelight Walk, the Christmas tree was lit by Medina Mayor Dennis Hanwell before an estimated crowd of 4000.

On Christmas night, professional photographer Kristy Steeves  took a photograph of the tree. "It was overcast that night, but I waited to get the perfect shot. All of a sudden, the clouds cleared and there was the full moon, just behind the gazebo."

Kristy snapped the picture and posted it on Facebook. The next day, Kristy's phone started ringing as the photograph went viral. It seemed just about everybody wanted a copy of the photo.

"I decided to donate proceeds from the sale of the photograph to the Medina Raptor Center," says Kristy. "I wanted to choose a

Standing TallJON TESKE TAKES GAME TO NEW HEIGHTS

Almost every day, and sometimes two or three times a day, Jon Teske gets the same question:

How tall are you?An 18-year-old senior at Medina High and the

reigning MVP for Medina County boys' basketball, Teske occasionally wants to give a sarcastic answer. But even when his mood is bad, which isn't often, his polite nature won't allow it.

Teske, who already has a full athletic scholarship to continue his basketball career at the University of Michigan, doesn't go into all this detail, but here's the answer to the question he gets, from people young and old, more than 500 times a year: He is 7 feet tall in bare feet and listed at 7-1 on Medina's official roster.

"I've always been the tallest kid in my class, so I don't worry about it anymore," he says. "I just kind of roll with it and have fun with it."

It helps that Teske's height isn't that notable at home. His father, Ben, is 6-8 and his mother, Ju-lie, is 6-1. Both played basketball at Grace College in Indiana. Sister Hannah, a junior at the Univer-sity of Akron and former high school swimmer, is 6-2, while younger sister Abby, a junior basketball player for Medina, is 6-0.

It helps, too, that Teske has seen where his height -- and hard work --  can take him. He started on Me-dina's varsity basketball team as a 15-year-old fresh-man, when he was 6-9 and 205 pounds, then grew to 6-11, 215 as a sophomore. Teske really blossomed as a 7-0, 230-pound junior, when he helped the Bees reach the Division I regional semifinals (final 16 teams), and now weighs almost 250 pounds.

Mixing occasional 3-pointers with an array of low-post moves, Teske averaged 16.8 points, 10.3 rebounds and 6.7 blocks in Medina's final 12 games last season. More impressive, he did so against teams that had a combined 155-69 record (.692), six league champion-ships and at least 10 major college prospects.

Teske is also the biggest reason why the Bees are one of the favorites to win the Greater Cleveland Conference this season, but except for becoming more vocal in terms of leading his teammates, his personal-ity hasn't changed much since his family moved from Michigan to Medina prior to his sixth-grade year.

"He's quiet," Bees junior point guard Ben Geschke says. "He's not a very loud kid. He's very focused on school. He's just incredibly nice to everyone."

Chris Hassinger, who took over the Medina boys' program prior to Teske's junior season but was coaching the girls' varsity prior to that, is im-pressed not only by his star player's development on the court, but also by the personality traits that have remained consistent throughout.

"A lot of times with big-time players come big-time egos," Hassinger says. "It's the total opposite with Jon. He's an unbelievable human being. He's just got it all, as a person and a player."

Teske, who owns a 3.5 grade-point average and plans to major in accounting at Michigan, is highly unlikely to ever become a credit-grabbing, trash-talking player, but don't be fooled by his quiet demeanor.

"He's our best leader," Hassinger says. "People don't realize it. He's the director of everything that goes on out there, especially defensively."

Hassinger believes Teske, who faces constant dou-ble- and triple-teaming in high school, has a chance to become an All-Big Ten center at Michigan, but the coach's praise doesn't end there.

"I'm 100 percent sure he can play professionally somewhere," Hassinger says. "The work ethic is there; the skill is there. There's not many guys like him."

For now, Teske is a high school student. Still needing to shave just once a week, capable of adding another 20 pounds of muscle without losing any mobility and pos-sibly not yet done growing, he is learning to not only embrace his height, but use it to his full advantage.

"He doesn't hesitate to tell anyone he's 7 foot now," his dad Ben says. "With his basketball development and Michigan (scholarship), he's starting to see where it's opening doors."

Teske may have to duck a bit when he goes through those doors, but he's not complaining.

"Everywhere I go, I know someone is staring at me, but I've kind of gotten used to that," he says. "I have young kids running up to me all the time, so that's nice. You never know how you might impact someone."Rick Noland is the assistant sports editor at The (Medina

1. I got this t-shirt my freshman year of high school. I actually lost the origi-nal my junior year and bought this one from a friend. I still wear it; it’s always been so comfortable.

2. If there’s one thing that defines us as a couple, it’s our love of travel. We bought the print in Florence, Italy several years ago. The table runner is from my trip to Greece with my mom in September, 2015.

3. Running brings me clarity. Scott and I work out together, but running is my own.4. I can’t live without my blender. I’ve used it every day for the past three

years and it’s never let me down. My smoothie recipe is 5 strawberries, ¼ cup blueberries, a banana, about 6 pineapple chunks and as much spinach as I can shove into the blender.

5. We adopted Gracie when she was 6 weeks old. She fit in the palm of my hand. She was so timid. We gave her a bath with coconut shampoo, fed her a bowl of food and suddenly our timid dog was running all over, up and down, everywhere. She’s 13 now, so she’s slowed down, just a little bit. SCOTT’S FAVORITES

 6. My baseball glove is like an old friend.  I've had it since my senior year of high school. I played in high school and college at St. Louis University (Parks College.) I played second and third base and pitched.

7. I love taking photographs and I’m a big movie buff. Tina and I watch between 80 – 100 movies a year.

8. I’ve worked at WJW Fox 8 since I moved back 13 years ago. As a kid in fourth grade, I was one of Dick Goddard’s local weather watchers. I would call in to report significant weather events. I interned at Channel 8 during college.

9. I’ve been a drummer for a long time. I was in the high school concert band and I'm a big progressive rock fan, especially of the band Rush. I don’t play in a band, but enjoy playing when I get a chance.

10.  I'm the oldest in a family of five kids. I always knew I wanted a family of my own. We have two kids, ages 10 and 8. Being a dad, coaching their sports and finding fun things to do as a family is always very fulfilling.
