Editor’s LETTERWith the sudden upsurge in the restaurants offering world cuisine in the city,

I was deeply impressed by the middle eastern stunner, the Mediterranean

cuisine with all its regional and cultural influence. It’s a hot favorite with

foodies and food experts, specially in India. I was wondering what special

features make it so delectable and so vibrant, and the answer lies in the

question itself. Anything natural and light on system is always accepted and

loved widely in contradiction to the processed and unnaturally spiced

alternatives. This era is the rise of increased concerns about health and related

issues and with the organic edibles trending, this cuisine is all about what you

wish how food and dining out should be. This issue is all about Mediterranean

cuisine, the very fresh, healthily spiced and system friendly selection of

cooking practices and traditions.

Also, boys and men, we had a lot of complaints/queries from your front after

our Women special, so folks we are still working on Men special issue(and

we are trying to make it extra special, trust us!). Meanwhile, we make it up to

you by presenting you with a special article on Men shoe. Hope this will help

you when you select your next footwear.

ow is it that Mediterranean cuisine is the

latest favorite cuisine of every food blog,

magazine, chef, restaurant, cookery show

and blah blah? It is, because its one of the

healthiest and most varied of the cuisines.

It’s mostly based around fresh produce and

spices. The flavors are pungent, sweet,

spicy and beautifully aromatic with a

sensational after taste, very very fresh and

light for the system.

The Mediterranean cuisine comes from 21 countries

that surround the Mediterranean sea, which are Italy,

Spain, France, Turkey, Greece, Lebanon etc.

Therefore it comprises of everything you know

about these places like pizzas and pastas and falafel

and paellas and gazpacho soup and tomatoes and

hummus and garlic butter and wine based dishes and

many more. It doesn't limit itself to these regions as

over the years travellers and traders have bought this

cuisine to their native places, where it was modified

and adopted as per cultural and regional influences.

Therefore it’s a combination of variety of regional

variations under a common cosmopolitan cuisine

Mediterranean.

Mediterranean food has a wide and diverse range. A traditional Mediterranean meal consists of plenty of fruits,

vegetables, types of beans, legumes, whole grains, nuts and peanuts, extra virgin olive oil, fish, lean red meat,

cheese and yogurt. Of course the menu would include moderate amount of wine. The intrinsic tune of

Mediterranean diet is health. One of the main ingredients in Med food is olive oil which is essentially a source

of good health. In fact, Mediterranean cuisine is all the ingredients, recipes and equipment found in the

kitchens around the Mediterranean. Many ingredients you find are preserved or packaged and their

production is rooted in 5 millennia of human history.

Mediterranean Cuisine As We Find It Today

Mediterranean is a big melting pot of cross

cultures and "cross cuisines". Mediterranean

has gone through various civilizations from

different generations where opposing

cultures have collided only to give birth to a

new culture. Moreover, different countries

that surround Mediterranean have also had

a deep influence over each other in terms of

cooking style and food. Mediterranean

cuisine is thus characterized by its range of

ingredients. In fact, Med cuisine is all about

ingredients. The most prevalent ingredient

in the Mediterranean cuisine is olive or olive

oil. Olive trees are found in abundance all

across Mediterranean region and olive oil is one of the major export items of the land. Naturally, olive has

found free entry into a variety of dishes and is used both as a cooking agent and a dressing. Common

vegetables like eggplant, tomato, squash, onion, mushrooms and lettuce are widely used in varieties of dishes.

Use of meat is considerably less as the rugged terrain of Mediterranean does not support larger herding animals

like cows. Hence the option is limited to smaller animals like sheep, goat, pig and chicken. It is for the same

geographical reason that seafood finds a treasured place in Mediterranean dishes.

C o o k i n g m e t h o d o l o g y :The cooking methods again are differently

adopted according to regional favorites.

It’s a mix of baking, boiling, steaming,

roasting, braising, poaching and deep

frying. As mentioned earlier, food is also

preserved by drying, pickling and smoking.

The ancient traditions include cooking in

a charcoal grilled oven or wood ovens or

open flames or barbecue pits. The cookware,

serving bowls, cutlery are different according

to the region. Traditionally the food is to be

had with hands in large wooden or clay

bowls with basic serving utensils. The food

is usually had when all family members

are seated together and all of them have

from the same big serving bowl(Islamic

influence).In modern times, the fork, spoon

and fine cutlery are used while serving and

eating.

Indian influence:

Mediterranean cuisine in India is usually characterizes by

fine dining attitude with dominance of open air themed

seating. Chic, urban Turkish interiors with flowing curtains,

low seating, bright pillows and red-blue-golden colors

standing out, this theme is usually chosen while designing a

Mediterranean restaurant.

The health factor attracts a lot of conscious people due to it’s

stress on olive oil, fresh vegetables and grilling. Also Indian

being a predominantly vegetarian country, there are loads of

vegetarian options available, which adds to the overall appeal.

The sourcing of special ingredients is not an issue anymore as more and more products are easily available

owing to the rise of super bazaars and their procurement strategies. Different types of cheeses, variants of

olive oil, herbs and sea food are readily available across the country and hence, people are trying these

cuisines at home along with trying them at the fine dining restaurants as well.

The repertoire of flavors and dishes is huge and is popular among the locals and the expats and hence it’s an

opportunity in itself - the Mediterranean cuisine. The consistency and quality are major concerns, if worked

upon can lead to widespread popularity of the idea.

The Mediterranean cuisine has been in the center of attraction not only for its delicious taste but also due to its widely accepted health value. Indeed this diet has many positive effects on human health.

Before doing that first crunch or removing all

sweets from your refrigerator, a plan is to be

made, a realistic plan to help loose your fat.

No fad diet or instant exercise plans can help

your loose all your fat in 3 days which you

have accumulated over so many years of wrong

eating habits and stationary routine. A strong

4 week plan is needed to kick start the fat loss

and metabolism and consistency is a must.

Once you have made the initial 4 week plan,

note the before and after changes after every

week and see through the areas that are giving

you problems. Replace the ones that work for

you with the ones that are useless to you.

Check your progress weekly and add 3-5 new

ways to loose fat every consequent week.

Add new routines of exercises, learn new

forms of exercises, add new fat burning food,

delete some. You have to mix and match to

make a routine that best works for you.

STEP 1. Start carrying water everywhere you go.

Keep sipping water throughout the day. Water

keeps you hydrated and helps your reduce your

appetite and cravings. Sip warm water with lemon

juice added for better results. Being hydrated you

wont feel the urge to dump down that cola bottle

or order that fruit juice with extra sugar.

STEP 2. Keep you plate colorful. Add a lot of

different colors of vegetable and fruits to your

meals to get various nutrients and it also tricks

your mind into believing that you are full. Add

tomatoes, lettuce, broccoli, yellow/red capsicums,

leeks, celery, zucchini, oranges, apples, pears,

watermelon, strawberries to your salad bowl and

dress them with a dazzle of olive oil and lemon.

Have it before every meal and add/delete new items

every time.

Step 3: Cut out those french fries and burgers.

Fats food is the worst culprit in the battle against

fat. Loaded with sodium and empty calories ,they

head straight to you tummies and hence you keep

piling on those extra kilos all the time. Skip fast

food altogether and you will loose that stubborn

fat of yours.

Step 4: Do your weight bearing exercises religiously.

Just diet alone doesn't work in eliminating that

fat of yours. You have to sweat in order to burn

those ponds off your body.20-30 minutes of

cardiovascular exercises along with 40 minutes

of strength training is a must for 5 days a week.

This is a realistic plan and hence efforts are

needed with persistent follow-ups and no cheat

days and minimum rest days.

Step 5: Yoga and tai chi are some

exercise and holistic fitness forms

that aims to rectify your problem

area from deep inside. These should

be added to your exercise plan in

order to get dramatic results and a

drastic change in your overall system.

Practice yoga/tai chi along with a

trained person at least twice a week

and do your breathing exercises

regularly to improve your lung

capacity that in turn aids in your

daily cardiovascular exercises.

Step 6: Don't be complacent. Once

you get going on this track of weight

loss, don't slow down your efforts.

Don't stop exercising and don't stop

eating right.

Step 7: Don't starve yourself. If you think starving

yourself to malnutrition is the best way to loose

fat you are absolutely mistaken in this approach.

Starving slows down your metabolism and your

body burns less fat even if you exercise. Moreover

you don' t get proper nourishment and hence

you wont be able to exercise and function normally.

Don't deprive yourself either. Once a week your can

have that Baskin Robbins but remember to put in

15 min more of cardio next day to burn it off. It

keeps you motivated and you will work with

extra zeal next day.

Step 8: Don't wear tight clothes and give

yourself 20 min after your meals to feel satisfied.

Wearing tight clothes help you get that muffin top

and loose skin. Moreover wearing tight clothes

might prevent you from eating the right quantity

and afterwards you start feeling hungry also.

Give yourself 20 min after your meals to feel full

because that’s when the food goes down your

food pipe. Do not eat for at least 2 hours after your

meals and do not exercise after 1 hour of meals.

Exercise just before meal time for better results.
