Have You Tried pizza al Taglio Yet? We traveled to Italy in search of the best flour, the sweetest tomatoes, the most authentic prosciutto, and the pizza-making technique we’ve brought to Proctor.

Italian street food “pizza al taglio” means “pizza by the cut” and is served by the half-pan, quarter-pan, and slice. The Deli team cuts bubbling, cheesy pizza with scissors to order, fresh out of the oven.

roccolo is a unique Italian cheese made from unpasteurized milk produced solely from the area’s Bruna Alpina cows. Milky in the middle and nutty on the outside. The cheese is brined in saltwater, then placed on pine boards and left to age for six months in natural caves.
