DESCRIPTION

These are the slides from my talk at the conference Thinking About Dinner, and the University of Toronto, March 2, 2013. In the talk I argued that one can think of molecular gastronomy as a form of hacktivism, provided there is a social element involved -- and in some cases there clearly is!

1. What is HacktivismWell it’s a portmanteau of…

and activism.

Page 9: Molecular gastonomy as hacktivism

So what is hacking?

Page 10: Molecular gastonomy as hacktivism

Not This.

Page 11: Molecular gastonomy as hacktivism
Page 12: Molecular gastonomy as hacktivism

Page 15: Molecular gastonomy as hacktivism

What is Hacking?OK, so there is a humor element…

Page 16: Molecular gastonomy as hacktivism

What is Hacking?OK, so there is a humor element…

But what else?

Page 17: Molecular gastonomy as hacktivism

What is Hacking?OK, so there is a humor element…

But what else?

New Hacker’s Dictionary (1998):

1) A person who enjoys exploring the details of programmable systems and how to stretch their capabilities, as opposed to most users, who prefer to learn only the minimum necessary.

Page 18: Molecular gastonomy as hacktivism

What is Hacking?OK, so there is a humor element…

But what else?

New Hacker’s Dictionary (1998):

6) An expert or enthusiast of any kind. One might be an astronomy hacker, for example.

Page 19: Molecular gastonomy as hacktivism

What is Hacking?OK, so there is a humor element…

But what else?

New Hacker’s Dictionary (1998):

7) One who enjoys the intellectual challenge of creatively overcoming or circumventing limitations.

Page 20: Molecular gastonomy as hacktivism

What is Hacking?OK, so there is a humor element…

But what else?

MIT Jargon File (2000):

1) An appropriate application of ingenuity

Page 21: Molecular gastonomy as hacktivism

What is Hacking?OK, so there is a humor element…

But what else?

MIT Jargon File (2000):

1) An appropriate application of ingenuity

2) A creative practical joke

Page 22: Molecular gastonomy as hacktivism

What is Hacking?OK, so there is a humor element…

But what else?

In short: the reapplication of technology for uses not originally intended.

Page 23: Molecular gastonomy as hacktivism

Example

Page 24: Molecular gastonomy as hacktivism

What is Hacking?Repurposing technology: The phonograph

(0riginally intended as message recording tool)

Page 25: Molecular gastonomy as hacktivism

Hacking the phonograph

Page 26: Molecular gastonomy as hacktivism
Page 27: Molecular gastonomy as hacktivism
Page 28: Molecular gastonomy as hacktivism

But this includes…

Page 29: Molecular gastonomy as hacktivism

But this includes…1. A respect for traditional

technologies

Page 30: Molecular gastonomy as hacktivism

But this includes…1. A respect for traditional

technologies

2. Mash-ups of traditional and new technologies

Page 31: Molecular gastonomy as hacktivism

But this includes…1. A respect for traditional

2. Mash-ups of traditional and new technologies

For example…

So Hacking is…1. Repurposing technology

Page 39: Molecular gastonomy as hacktivism

So Hacking is…1. Repurposing technology

2. Understanding technology and how it works

Why?

Page 78: Molecular gastonomy as hacktivism

Why?

We waste 20,000 pounds of paper per day on menus.

Cantu: Make enough food for everyone. That’s the end game. And to get there, we have to start thinking a little crazier about what food is.

Wired.com: What is food?

Cantu: It’s what enables us to live — and more than that, it’s dense energy storage.

Chef Cantu Saves the World?

“Recently I started thinking about how people can eat the stuff they don’t eat now, that already grows around them. If you can turn that into food and make it taste good, you’ve got an answer.”

“You have to have some understanding of chemistry, of how taste receptors work, of how people perceive food. But it starts with that initial crazy question: What is food?”

What other ways does molecular gastronomy contribute to social welfare?
