He became acquainted and fell in love with Thai food in 2004 when he worked at Nahm restaurant in London which was one Michelin-starred at the time. His curiosity didn’t end there. Chef Morten traveled to the motherland of authentic Thai cuisine, intensively learned and stayed in Thailand for 2 whole years. The relationship to Thai further prospered when Chef Morten joined Kiin Kiin in Copenhagen, Denmark as a head chef in 2007. Only 1 year after he joined, Kiin Kiin was awarded one Michelin star. He collaborated four more restaurant openings with Chef Henrik Yde-Andersen, the co-founder of Kiin Kiin. In September 2010, the Siam Kempinski Hotel Bangkok opened its door to the public for the first time. Its signature restaurant, “Sra Bua by Kiin Kiin”, which was the result of the partnership between Kiin Kiin and the property, opened shortly after that. Chef Morten was indeed part of Sra Bua pre-opening team. Chef Morten was invited to become the permanent head chef at Sra Bua by Kiin Kiin towards the end of 2011. In his position as Chef de Cuisine, Chef Morten will be responsible for the culinary performance and the quality of the restaurant’s food and beverage operation, ensuring that every dish fully expresses the innovative spirits of their originals at Kiin Kiin in Copenhagen, to surprise and satisfy the sophisticated Bangkok restaurant’s clientele.
