Safety When the shad were running last year I took my 83 year old dad up to the dam to catch a few fish. Current runs strong and it’s tricky to get anchored in place. It was a chilly day so we all had windbreakers on. We had a great time, caught a few fish then enjoyed barbecue in North Charleston on the way home. My previous working life required I think about safety in everything I do but I didn’t really examine the risk I took with my dad’s life until the ride home. My boat has life jackets, etc. but what the heck was I going to do with my dad if he went overboard in cold water, current with both of us fully clothed? I used to think that a hundred fifty bucks sounded like a lot for an auto-inflate life jacket made for ease of movement. Looking at it with new eyes, it sounds like a bargain. If my passengers and I can’t fall over and come up laughing or swearing, we’re wearing. Sticking to the safety theme: Dave Kottka has lined up boat inspections this month. See below. May 2014 Forecast

May fishing is simply outstanding. The number of inshore species that will strike a lure is long. Trout, Flounder and Redfish are joined by Spanish mackerel, Bluefish, Ladyfish. The biggest challenge anglers face is decided which fish to catch! In May, I tend to fish a lot of current seams. As this is where all of the above species tend to congregate. When fishing purely for numbers, it is hard to beat a Z-Man MinnowZ Bad Shad on a quarter ounce jig. Bouncing this combination along the bottom with the current will keep you in steady action. When targeting larger fish, the Lucky Craft 65SP and 78SP suspending lures will catch good numbers of fish and most of them will be pretty big. A quick twitch, twitch and pause retrieve cadence in the current seam is recommended. May is also when sun protection becomes important when fishing. A good hat, long sleeve high SPF shirt and sunscreen are essential for a long day of fishing (especially for children). Mountain Tails By Ron Silverman

You may have read in last month’s edition of New Casts, that Paula and I bought a vacation house on a small lake in Connestee Falls, Brevard, NC. And, that the first time I went fishing with my neighbor Bill Roehrich (Mr. Bass in those parts) in March, he caught the bass of a lifetime, an 11 pounder, a rare fish for a mountain lake at 3.000 ft elevation.

I went back to our house in Brevard in mid-April. While I was there, Bill and I took delivery of my new pontoon boat. Of course, we fished it that afternoon before putting it at my dock. This time, we were fishing on the lake we both live on, 75 acre Lake Atagahi. The big bass Bill caught in March was on Lake Ticoa, another of Connestee’s lakes. Ticoa purportedly has better fishing than Atagahi, which is known for its plentiful but mostly undersized bass. We fished that day for about 3.5 hours, and caught over 30 bass on artificials, but none over 12”. No complaints from either of us. It was a beautiful mountain day, blue skies, good company, and we were catching fish. Now for the rest of the story. We each caught a notable fish that day in addition to the many small bass. Bill set the hook on a bass that he said was going to be another “monster”. He brought it to the boat and I netted it. It weighed 8 lbs, 4oz, a rarity for this lake. Bill had to sit down for a while after catching this bass, which we photographed and released. A short while later, I was casting a Senco worm wacky rigged for bass to the shore. The boat itself was in 25 feet of water. Bill had just said that it was possible to catch big trout here. Sure enough, as I brought my Senco to the boat to make another cast, a silver torpedo shot up from the depths and swiped at my Senco. We were in bright sunlight and the water was gin clear. I could see that this was an awesome trout. I think it may have missed the Senco on the first try so I opened the bail and dropped back and sure enough hooked up.

The rest is history. Bill netted the trout and now it was my turn to sit down. The trout was close to 23”, and looked like a salmon as far as I was concerned. (Of course, it was a Rainbow). What a trout! It was bleeding and was not going to make it. We took some photos and put it on a stringer. I was batching it in Brevard for a few days and I was going to have some trout for dinner.

The Connestee Falls Fishing Club gives “Lunker Awards” for big fish caught in Connestee’s lakes; minimum size to qualify for bass is 19” and for trout is 20”. We each earned a Lunker Award that day. But the award pales when compared to the enjoyment of a beautiful day on a clear mountain lake fishing with a new friend.

USCG Aux Vessel Safety Inspection The USCG Aux, Flotilla 12-6 will perform a Vessel Safety Inspection at the Daniel Island Storage Facility on May 24th (Sat.) from 9-12 am. These inspections are free of charge and are performed by highly qualified USCG Aux Vessel Examiners. With the boating season getting into full swing now is the time to make sure that your boat is in compliance with all State and Federal boating regulations. Recipe of the Month – Stacey’s childhood friend, Jennifer Moak (landlocked Ohio resident, great cook) HoneyLimeTequilaShrimpTacos with Avocado, Purple Slaw and

Chipotle Crema

Recipe Type: Mexican, Southwestern USA Prep time: 30 mins Cook time: 30 mins Total time: 1 hour Serves: 4 to 6 people

Ingredients

For the honey lime tequila shrimp tacos ~~ 2 pounds (454 g) raw shrimps, peeled and deveined 1 teaspoon coarse sea salt 2 tablespoons raw honey juice of 2 limes + 1 lime 1/2 cup tequila 1 medium onion, finely minced 1/4 teaspoon ground cumin 1/4 teaspoon ground chipotle (optional) 2 avocados, diced 1/2 head of red cabbage, thinly sliced ~~ For the slaw dressing ~~ 1/4 cup (60 ml) freshly squeezed lime juice [about 2-3 limes] 1 teaspoon of Dijon mustard sea salt and pepper to taste 1/2 cup light, neutral oil, such as grapeseed ~~ For the chipotle crema ~~ 1 cup (250 ml) sour cream or créme fraîche [low fat can be used] 1 to 2 pieces of chipotle chiles in adobo sauce [canned] ~~ For assembly ~~ 12 - 15 homemade or store-bought good quality yellow or white corn tortilla a handful of cilantro, finely chopped

Preparation

• Wash, peel, devein, and dry raw shrimps. Season with salt.

• In a bowl, combine honey, lime juice, tequila, onion, cumin, and chipotle powder (if using). Mix well and toss shrimps in marinade. Chill up to 30 minutes in the refrigerator.

• Heat grill to 400 F (205 C). Make sure to oil the grilles well. Skewer shrimps in soaked wooden sticks (this will make it easier to handle on a grill).

• Grill shrimps until bright or just opaque, about 2 minutes each side. Flip the shrimp skewers and cook for another 2 minutes or until they turn bright orange. Alternatively, you can also pan fry the shrimps. Set cooked shrimps aside.

• Dice the avocados and squeeze juice from the remaining 1 lime.

• Thinly slice the red cabbage using a sharp knife or a mandolin.

• To make the dressing for the red cabbage slaw, put the lime juice, Dijon mustard, sea salt, pepper and oil in a jar or bowl. Whisk vigourously until it emulsifies.

• Toss the red cabbage with the lime vinaigrette. Set aside.

• Meanwhile, to make the chipotle crema, place the chipotles in the bowl of the food processor and give it a good whirl until it is smooth.

• Stir in the sour cream or créme fraîche, mixing well until the colour is even. Transfer chipotle crema in a squeeze bottle.

• To assemble the tacos, heat tortilla in a dry pan, about 1 minute per side or until lightly browned or charred. Wrap tortilla in a cloth to prevent from drying out. Set aside, covered.

• Place some diced avocados in the middle of the tortilla, followed by the red cabbage slaw. Remove skewers from shrimps and pile on the taco.

• Drizzle with the chipotle crema and garnish with cilantro. Serve immediately.

*** Stacey made this last night and we loved it. I think this would be great with any fish and lettuce would be fine to replace cole-slaw.
