February 25-28. IFSH conducted a Better Process Control School training course, a federally mandated

program for thermally processed low acid and acidified food products. The program helps processors

produce safe food and meet regulatory requirements of many heat treated shelf stable products such as

sauces, coconut water, packaged beans, etc. Thirteen participants from the food industry in the U.S. and

the Netherlands enrolled in the (2-4 ) day course and received a certificate of completion.

February 26. IFSH and Crème Global jointly presented in a webinar organized by IFSH HTS Initiative

under the title of “High-Throughput Sequencing and Predictive Microbiology: Mapping the microbiome to

manage risk during production.” It was a well-attended event with over 135 participants. The event was

recorded and will be accessible soon through a link on the IFSH website.

Joseph Zuklic received his B.S. in Chemistry and M.S. in

Analytical Chemistry, both from Governor State University, and

worked in the industry (including Nufarm and Ecolab) as a

chemist in the last three years before joining IFSH. Joe will

provide chemistry and analytical support to FDA collaborative

research as well as industry projects. He has a keen interest in

analytical instrumentation and methodology. Outside of work, Joe

enjoys plants, nature walks, the gym, food of all kinds, and

recently started planning an indoor garden.

Yang Chen joined FDA this week as an Analytical Chemist in the proficiency

testing and methods validation group. Yang comes to us with a strong and

successful career of nearly twenty years of experience in the field of analytical

chemistry, food safety and quality assurance. Yang worked as a Senior Scientific

Officer and Food Safety Laboratory Supervisor at Agrifood Technology AWB

Limited in Werribee, Victoria, Australia, and later as a lead analytical chemist

(through ORISE and GoldBelt) for the Food Emergency Response Network,

Veterinary Laboratory Investigations Network and other Proficiency Testing

Programs at FDA/IFSH. Yang will continue focus on analytical chemistry, method

validation and food chemistry proficiency test programs.

Food Safety Preventive Controls Alliance (FSPCA)

In accordance with the Alliance’s mission to support safe food production for the U.S. market, the FSPCA has, as of

February 3, 2020, trained 3,454 Lead Instructors and issued 114,938 Preventive Controls for Human/Animal

Food, Foreign Supplier Verification Programs, and Intentional Adulteration Vulnerability Assessment certificates

combined. See metric details under Quick Links on the FSPCA homepage.

New Training Materials

The FSPCA Preventive Controls for Human Food Participant Manual v1.2 (Chinese) has been added to the FSPCA

New FSPCA Courses

FSPCA IA Food Defense Plan Preparation and Reanalysis online course went live on December 11. This course

qualifies an individual to prepare a food defense plan and conduct a reanalysis ONLY. To perform other functions

as required by the IA rule, such as identifying and explaining mitigation strategies or conducting a vulnerability

assessment, you must take the specific training developed for that activity or be otherwise qualified through job

experience. While this training course is not required by FDA, the regulation requires that individuals preparing the

food defense plan and performing reanalysis “have successfully completed training for the specific function at least

equivalent to that received under a standardized curriculum recognized as adequate by FDA or be otherwise

qualified through job experience to conduct the activities” (21 CFR 121.4(c)(2)). This training developed by the

FSPCA is the “standardized curriculum” recognized by FDA; successfully completing this course is one way to meet
