This is a tasty dish from Southern Nigeria specifically Cross River and Akwa Ibom States. Consisting of basically vegetables, this soup is rich in Vitamins, Protein and fibre. Serves 5 Cook Time 1 hour 30 minutes Favourites 31 Add to Favourites

INGREDIENTS 4cups Afang leaves, pounded 600g Waterleaf or Spinach 1kg Meat/Chicken/Goatmeat Rich meat stock 300g softened Stockfish Dried Fish 200g Kpomo 4 cups Perewinkle 6 Chilli Pepper 1 cup Crayfish, ground 2 Seasoning cubes to taste 2 cups Palm Oil 1 Onion bulbHaving issues with measurements and conversions?Click Here.DIRECTIONS When the meat is soft, add the stockfish, dried fish and kpomo Cook till you have about one cup of stock water in the pot Add the waterleaf and cook for about 3minutes Stir then add the Afang leaves, crayfish and the palm oil Cook for about 5minutes then add Maggi Cubes and Pepper Add salt to tasteShare ItTweet It Email Save Print9 comments

Chubbycommented about 3 years agoThe Afang leaves are usually washed, left to dry and then cut into tiny shreads. it is then pounded or ground before it's used for the soup. Some tribes cook it shredded and people who cannot pound it or grind it, blend it with little water but you have to be careful so you don't turn it to a smooth paste. Pounding is the best option though

Chubbycommented over 2 years agoyes the Fng leaves can be found in our local markets in lagos. ask for where calabar or igbo people are selling vegetables. usually found where they sell ugwu lewf, waterleaf, bitterleaf etc

Darmicommented about 2 years agoI made afang soup by using cameroun pepper,it was awesome. It gave a flavour that was so lovely,an aroma that wud make u ask for more. I suggest tryin cameroun pepper in place of chili pepper.

Tuksycommented 10 months agoCameroon pepper are generally nice in soups but u must be careful as to d quantity used if not U'll ve your nose running even before Ur soup is cooked. Afang can also be used in egusi soup as it is cooked by the Ikwerres in Rivers State. They call it Okazi soup and it's also very nice & taste differently from afang soup.
