PREPARATION

1.Cuttheonionintothinstraightpieces.

2.Cutthetomatointothinstraightpieces.

3.Cutchilliesintohalves.

4.Separatemintleaves,washandkeepitseparately.

5.Soaksaffronandkesaripowderinhotmilk,andsetitaside.

6.Cleanthebasmatiriceinwaterandsoakitforhalfanhour.

7.Cutchickenintolargepieces.

8.Inalargevessel,heat50mlofoil.

9.Oncetheoilishot,addcardamom,cinnamon,clove,bayleafandjavitri.Sautfor1minute.

10.Addrequiredamountofwaterandsalt(2tsp)inthevesselsoastocooktherice.

11.Boilthewaterfor10minutes.

12.Now,addthesoakedriceandhalfcooktherice.(Thisisveryimportant).Thismaytakeapproximately5to7minutes,dependingupontheheat.

13.Whenthericeishalfcooked,switchofftheheat,filterthewaterfromtheboiledriceandleaveitaside.

14.Inalargevessel,add150mlofoilandtheghee.Heatit.

15.Addthecutonionsandcookitinmediumheat,untilitturnsgoldenbrown.Thismaytake15to20minutes.

16.Whentheonioniscooked,addthechillipowderandsautfor1minute.Thisturnstheoilintolightreddishbrown.

17.Nowaddthegingergarlicpasteandcookfor2minutes.

18.Whentherawsmellofgingergarlicpastefades,addthechickenpiecesandcookit1to2minutes.

19.Nowaddthecuttomatoesandgreenchillies.Cookitfor2minutes.

20.Addthemintleavesandcookfor1minute.

21.Nowaddthecurdandsalt.(2to3tsp,dependinguponthetaste).Mixitwell.

22.Closethevesselwiththelidandpressurecookfor20to30minutesinmediumheat.

23.Thiswillcookthechickento90percentages,andoozesthewateroutofthechickenandseparatestheoil.

26.Takehalftheportionofthebiryanigravyandspreadoverthericelayer.Takehalfofthechickenpiecesfromthebiryanigravyandkeepitoverthericelayer.

27.Nowspreadtheremainingportionofthericeoverthegravy.28.Sprinkletheremainingportionofthesoakedsaffronmilk.

29.Nowspreadremainingportionofthebiryanigravyandchickenpiecesovertherice.

30.Sprinklethelemonjuiceoverit.

31.Coverthemouthofthevesselwithathinwetcloth,andcloseitwithalid.Youcouldalsousealargepressurecookerinsteadofavessel.

32.Pressurecookfor30minutesinaverylowflame.

33.After30minutes,switchofftheflameandleaveitforanother30minutes.
