“This year I celebrated my 15th year living in North Devon. I'm happy to say that it gets better with every passing year. The same goes for the food. Whilst brilliant local ingredients have always been there it seems that more and more cafés, pubs, bars and restaurants are seeing the value in serving locally sourced, home grown and sustainably harvested produce. That’s because we all know, deep down in our hearts, that fresh is best. Long may it continue. So here’s to those who really care about the food they produce, from the farmers, the brewers, the fishermen and the foragers to the chefs and the cooks. We salute you!”

Martin Dorey is a surfer, writer and keen shrimper. His book, The Camper Van Cookbook, was published in May 2010 and his TV show, One Man and His Campervan, was broadcast on BBC2 in February 2011. He lives at Horns Cross, near Bideford.

Pound the Lapsang Souchong tea leaves to a dust in a pestle & mortar. Add the finely grated zest of an orange and pour over 4 tablespoons of oil. Rub this into the meat, wrap in cling film and marinade for 1 – 2 hours. To cook the meat, remove from cling film. Wipe as many of the tea leaves

off the meat as possible. Heat an oven proof pan on a high heat. Sear the meat well all over. Transfer to a hot oven for 3 – 5 minutes until springy to touch. Rest for 10 minutes before serving. Visit northdevon.com for the bacon sauce, confit smoked garlic and shaved parsnip chip recipe.

This recipe utilises peasant ingredients and transforms them into a hearty yet refined dish. Skate knobs or cheeks are available from most good fishmongers, especially those that have their own boats. Order them in advance and keep

them in a refrigerator at just above freezing temperature for no longer than two days. Alternatives would be thick slices of monkfish tail or scallops. I serve this dish in my restaurant and it is a winter time favourite with my customers.

Make pastry, cover and leave for 30 minutes. Roll out half the pastry, and line the greased tin.Layer the filling, seasoning between layers – first beef, followed by onion, potato and swede. Season and sprinkle with 2 tablespoons of water.

Roll out the other half of the pastry and fit to the top of the pie, make 2 slits in the top about 3cm each.Seal the edges, brush with beaten egg and bake in the oven Gas Mark 3 for 1 ¼ hours, until golden brown and the potato is cooked.

The Grove Inn’s Laver Soup with Poached Scallops...25g Salted butter1 Large onion, finely chopped25g Plain flour900ml Vegetable stockJuice of half a lemon250g Cooked laver150ml Milk50ml Single cream9 Scallops, with their coralsSalt to taste

Melt the butter and gently cook the onion for 10 minutes, making sure not to colour. Stir in the flour and cook gently for 2 minutes.Gradually add the stock, lemon juice and cooked laver. Cover, bring to the boil and simmer for approximately 5 minutes. Cool a little then puree in a liquidiser. Return the soup to a clean saucepan and stir in the milk and the single cream.

Place a single scallop with its coral in the soup and reheat and simmer gently for about 10 minutes. Discard this single scallop as it will be over cooked but it will have added sweetness to the soup.Place the remaining 8 raw scallops in the soup and poach for 2 minutes.

Steam the carrots whole until just soft, roughly 15 minutes. Whilst the carrots are cooling, make the dressing; lightly toast the cumin seeds in a heavy based frying pan. Add the honey and olive oil. Squeeze the lemon and add the juice to the dressing.

Add salt and pepper to taste and set aside. Lightly toast the sunflower seeds as above. Cut the carrots in diagonal slices and place in a serving bowl. Sprinkle the sunflower seeds and raisins over the carrots, pour in the dressing and toss to coat.

Pre-heat an oven proof dish in a hot 220 ºC oven.Brush dish with oil and place fillets skin side up. Brush fillets with olive oil and roast for approximately 6 minutes.
