The next time you plan a party, an event, a birthday or a holiday

bash, think first of Dee-Stefano’s of Indiantown. Long known as a quality restaurant, they are quickly becoming known as a catering company. They cook everything to order and, while serving mostly Italian/American fare, they can prepare most cuisines.

Dee-Stefano’s has served pig roast barbecues in a field; catered a Cu-ban wedding party with black beans, yellow rice and sweet plantains; prepared box lunches for a business meeting and a three-hour serving of nothing but high-end hors d’oeuvres for a New Year’s cocktail party. Food is always cooked to order.

For outdoor events, whether in a park or a pasture, they partner with com-panies which carry rental equipment, providing tables, chairs and all other things necessary for the event.

“We are proud of the food we serve,” said Steve Woods, owner. “Our ca-tered food can travel comfortably in an hour and we are confident we will serve a quality affair. A hot box, which can hold food at temperature for three hours without further cook-ing the food, is the secret to getting the food to the job while maintaining its top quality.”

While most catered events are for lunch or dinner, they have catered many breakfast buffets complete with omelet stations. Whether it is a cock-

tail party, a bar mitzvah, a thank you dinner or a banquet for 50 to 500, Dee-Stefano’s can do it. “Because we are a restaurant, we have the ad-vantage of allowing people to come in and taste the food as part of the plan-ning,” said Steve.

As the water continues to trickle into the lake, fishing remains very steady. Pan fishing is productive in the Kissimmee River, the main

lake and all local canals. Fly rod anglers are catching good numbers of big blue gill on poppers and foam spiders. Yellow, white, black and grey colors are all working. Many of the fish are undersized, but if you keep searching you can find areas that hold larger fish. Crickets and grass shrimp will work well also when fished under a bobber and lightly weighted.

Bass fishing is still very good with both live bait and artificial. Live baits will account for the larger bass, while large numbers of bass are being caught on arti-ficial bait. An early morning top water bite is still hap-pening. The catch rate varies widely daily. Soft plas-tics, like worms, flipping and pitching baits and flukes are producing daily.

Some days it is necessary to slow down and fish very slowly to be successful which can be difficult after months of rapid fire catching. Moving water areas will

congregate bait and draw bass in producing a feeding frenzy in some cases where many bass can be caught in a short time.
