Message from the ManagerEric J. Quinn General ManagerOn behalf of the entire staff here at Olde York Country Club and RDC Golf Group, we would like to wish you and your family a Happy New Year! We hope that you enjoyed a most joyous Holiday Season!

With the 2010 golf season quickly approaching, our staff has been hard at work in preparation for another year full of golf and social activities for the entire family. The 2010 Member Tournament Program is currently in production and will be available to members in the coming weeks. Each member will have a copy of the program placed in his or her locker and additional copies will be available throughout the club. New this year, members can download monthly activities from the Olde York website and import them into their personal computer or PDA device. Also, weekly e-mail blasts will continue and members are encouraged to log onto the member section of the Olde York website and update their personal information.

Members will be pleased to know that effective January 1, 2010, we will be converting our member billing from the current format of two statements, Olde York Country Club for all of your golf purchases and Olde York Restaurant Services for all of your food and beverage purchases, into one consolidated statement. Consolidated statements will begin to be mailed to members at the end of January. All of your monthly charges will now appear on one consolidated statement and members are asked to submit your payments to Olde York Country Club.

As a reminder to all members, the entire club will be closed on Monday, Tuesday, and Wednesday during the months of January, February, and March. During these months, the club will be open for members and guests Thursday through Sunday. Please refer to this edition of Traditions or our website for the club’s hours of operation. Club Cash will continue each Thursday night, along with Family Night on the 1st Saturday of each month.

Once again, I want to welcome all our new members to Olde York. We have 20 new members that took advantage of our Membership Drive this season.

I also want to thank you for your referrals. Olde York is a great place to be with your family and friends.

Olde York Country Club is pleased to announce the continuation of the Reciprocal Program between Forsgate Country Club and Olde York members. This elective program will allow full golf members in good standing the ability to have additional privileges and benefits for a fee of $900, plus tax, which can be billed in monthly installments of $75, plus tax. It is a commitment of 12 months.

As always, thank you for your support and being a part of the Olde York Tradition!

The winter months are drawing to a close. The thought of plush grass and full trees is not too far off the horizon. The plans put forth this winter were to establish new growth in bare areas and maintain plant vigor within existing stands of grass. We started last year’s winter with the seeding of green banks, tee banks, and problem areas. This year, we decided to take the process a step further with dormant feeding the troubled areas. This, we hope, will improve turf conditions and boost the rate of growth in the spring. The weak areas were aggressively aerified and seeded with the addition of fertilizer, which will promote new growth and satisfy existing growth as well. Also this winter, the ladies tee on number five was stripped and leveled for a better playing surface. We have removed some of the wood-line on the left side of number five as well. This will give the golfers a better view of the entire green. During the past few months, we have also cut down the natural areas, piped new drainage in low areas, edged bunkers, and covered #15 green. #15 green was also verticut and seeded before being put to bed. We are having great success with covering this green in the winter and will keep doing so until all problem areas are removed.

The winter has been a productive time, but the itch to get back out mowing has definitely set in. Spring is right around the corner and the crew and I are looking forward to it!

The Bar area will remain open one hour after dusk!

Winter has arrived and we are longing for the warmth of the spring to bring back the lush green of summertime. During these long winter days, the golf shop will be preparing for the upcoming season. I will be traveling to the annual PGA merchandise show at the end of January to check out the latest trends in fashion and the newest technology in golf.

The tournament calendar has been finalized for the 2010 season. It will be available soon to help you plan your season well in advance. There will be a few changes in the schedule for this year. We will be the host for The “Big I” Junior National Tournament in July. This event is one of the major junior tournaments in the nation. In previous years, our members have been generous by volunteering their time and homes to the junior participants. Volunteer information for this year will soon be available.

For the vigorous and hearty golfers that enjoy a brisk round of golf, remember that we will continue our weekend shotguns at 10:30 am through March. Please call the golf shop to let us know that you are playing so that we can be prepared to better serve you.

And for those of you who prefer the warmer temperatures to venture out to play, let us all hope for a mild winter and early spring. Hope to see you all around the club soon!

I want to wish everyone a Happy New Year; hopefully, your 2010 will be even better than the last year. This year was filled with great memories here in the clubhouse. You can take a look back at those great memories by logging onto our website or right here in the Traditions. We invite you to be part of the club by attending our special events and coming out for dinner. We will capture those cherished moments by photograph and continue to create traditions that will last a lifetime.

Last year, the winter months got off to a fantastic start in the restaurants when our executive chef really showed his creativity with his dishes. The members who experienced either of our two wine dinners last year were truly blown away, as was I.

Our wine dinner guests were greeted with a bubbling glass of sparkling wine and ended the evening in the intimate atmosphere of the Olde York room. The host sipped the first glass of wine, along with the members, and dished out a few ice breaker “wine jokes.” As everyone enjoyed the laughter, the meals came from the kitchen course by course. The food was perfectly and artistically paired with each wine selection.

February came in with the bitter cold, but the clubhouse stayed warm as the cozy fire warmed the winter nights. When the fourteenth arrived, many of our couples enjoyed a romantic Valentine’s Day dinner here at the club.

Love was in the air as we sat our guests at their tables decorated with white cloths, rose petals and delicious fare. It was a four course meal and picture perfect night here at Olde York Country Club.

We hope you will join us again this winter for our themed events, wine dinners and, of course, Valentine’s Day.

Please enjoy our Winter menu. This being one of my favorite seasons, you will see menu items and specials that boast exquisite seasonal ingredients, such as Blood oranges from Italy, which is the one of the main ingredients in this recipe. We promise a variety of preparations to ensure pleasurable dining experiences during these winter months. You may even smell some of these cooking as you arrive to the club or as you sit by the fire. It’s hard to believe that we will soon be rolling out our Spring/Summer menu. Our culinary staff is looking forward to another great year in 2010!

Blood Orange Roasted Pork LoinRoasted fingerling potatoes would be great with this colorful dish. Ask the butcher to roll and tie the pork loin for you.

Ingredients

Blood oranges 1 3-pound boneless pork loin, rolled and tied 3 tablespoons extra-virgin olive oil, divided 1 large onion, cut into 8 wedges 2 fresh rosemary sprigs, leaves stripped from stems, plus additional sprigs for garnish 1/2 cup dry white wine 1/2 cup low-salt chicken broth 1 large garlic clove, pressed Blood orange slices

Preparation

Position rack in center of oven; preheat to 450°F. using vegetable peeler, remove peel (orange part only) in strips from 3 blood oranges. Place pork in large roasting pan. Rub with 2 tablespoons olive oil; sprinkle with salt and pepper. Toss onion, orange peel, and rosemary leaves with remaining 1 tablespoon oil in medium bowl; sprinkle with salt and pepper. Arrange onion mixture around pork. Roast until pork and onion are beginning to brown, about 25 minutes.

Meanwhile, squeeze enough juice from oranges to measure 3/4 cup; pour juice into small saucepan. Add wine, broth, and garlic. Boil until reduced to 1 1/4 cups, about 7 minutes.

Add 1/2 cup orange juice mixture to roasting pan. Baste pork with pan juices. Reduce oven temperature to 350°F; continue roasting pork until thermometer inserted into thickest part of pork registers 150°F, basting often and adding more orange juice mixture as needed, about 30 minutes longer.

Place pork on platter and cover loosely with foil. Place roasting pan over medium-high heat; add remaining 3/4 cup orange juice mixture to pan. Boil until slightly thickened, about 3 minutes. Remove strings from roast. Slice pork; place on platter. Pour sauce and onion mixture over and around pork. Garnish with rosemary sprigs and orange slices.
