    This oven complies with all current local and national safetyrequirements. However, inappropriate use can lead to personalinjury and damage to property.

    Read the operating and installation instructions carefully before usingthe oven for the first time. They contain important information onsafety, installation, use and maintenance of the appliance. Thisprevents both personal injury and damage to the oven.

    In accordance with standard IEC 60335-1, Miele expressly andstrongly advises that you read and follow the instructions in“Installation”, as well as in the “Warning and Safety instructions”.

    Miele cannot be held liable for injury or damage caused by non-compliance with these instructions.

    Keep these instructions in a safe place and pass them on to anyfuture owner.

    Correct application

    This oven is designed for domestic use and for use in similarenvironments by guests in hotel or motel rooms, bed & breakfastsand other typical living quarters. This does not include common/shared facilities or commercial facilities within hotels, motels or bed& breakfasts.

    The oven is not suitable for outdoor use. The oven is intended for domestic use only to bake, roast, grill,cook, defrost, preserve, and dry food.Any other use is not permitted.

    This oven is not intended for use by persons (including children)with reduced physical, sensory or mental capabilities, or lack ofexperience and knowledge, unless they are supervised whilst usingit.They may only use the oven unsupervised if they have been shownhow to use it in a safe manner. They must be able to recognise andunderstand the dangers of misuse.

    The oven compartment is equipped with special lamps to copewith particular conditions (e.g. temperature, moisture, chemicalresistance, abrasion resistance and vibration). These special lampsmust only be used for the purpose for which they are intended. Theyare not suitable for room lighting.

    Safety with children

    Young children must not be allowed to use this appliance. Older children may only use the oven if its operation has beenclearly explained to them and they are able to use it safely. Theymust be able to understand and recognise the possible dangerscaused by incorrect operation.

    Cleaning work may only be carried out by older children under thesupervision of an adult.

    Children should be supervised in the vicinity of the oven. Neverallow children to play with the oven.

    Risk of suffocation from packaging material. Whilst playing,children may become entangled in packaging material (such asplastic wrapping) or pull it over their head with the risk of suffocation.Keep packaging material away from children.

    Risk of injury caused by hot surfaces. Children's skin is far moresensitive to high temperatures than that of adults. External parts ofthe oven such as the door glass, control panel and the vent becomequite hot.Do not let children touch the oven when it is in operation. Risk of injury caused by hot surfaces. Children's skin is far moresensitive to high temperatures than that of adults. The oven getsmuch hotter during pyrolytic cleaning than during normal use.Do not let children touch the oven during pyrolytic cleaning.

    Risk of injury from the open door. The oven door can support amaximum weight of 15 kg. Children could injure themselves on anopen door.Do not let children sit on the open door, lean against it or swing on it.

    Technical safety

    Unauthorised installation, maintenance and repairs (includingremoval of any cover) can cause considerable danger for the user.Installation, maintenance and repairs must only be carried out by aMiele authorised technician. Damage to the oven can compromise your safety. Check the ovenfor visible signs of damage. Do not use a damaged oven. Reliable and safe operation of this oven can only be assured if ithas been connected to the mains electricity supply. The electrical safety of this appliance can only be guaranteedwhen continuity is complete between it and an effective earthingsystem. It is essential that this basic safety requirement is presentand tested regularly. If in doubt, the electrical installation should bechecked by a qualified electrician. The connection data (voltage and frequency) on the data plate ofthe oven must match the mains electricity supply in order to avoidthe risk of damage to the oven. Compare this before connecting theappliance to the mains electricity. If in any doubt, consult a qualifiedelectrician. Multi-socket adapters and extension leads do not guarantee therequired safety of the appliance. Do not use these to connect theoven to the mains electricity supply. For safety reasons, the oven may only be used when it has beenfully installed. This oven must not be installed and operated in mobileinstallations (e.g. on a ship). Risk of injury due to electric shock. Any contact with liveconnections or tampering with the electrical or mechanicalcomponents of the oven will endanger your safety and may lead toappliance malfunctions.Do not open the oven housing under any circumstances. The manufacturer's warranty will be invalidated if the appliance isnot repaired by a Miele approved service technician.

    Miele can only guarantee the safety of the appliance when originalMiele spare parts are used. Faulty components must only bereplaced by original spare parts. If the oven is delivered without a mains connection cable, aspecial cable must be installed by a suitably qualified and competentperson (see “Installation - Electrical connection”). If the mains connection cable is damaged, it must be replaced with aspecial connection cable by a suitably qualified and competent person(see “Installation - Electrical connection”). During installation, maintenance and repair work, e.g. if the ovenlighting is faulty, the oven must be completely disconnected from theelectricity supply (see “Problem solving guide”). To ensure this:– Switch off the mains circuit breaker, or– switch off at the wall socket and withdraw the plug. To do this,

    pull the plug and not the mains connection cable. The oven requires a sufficient supply of cool air for efficientoperation. Make sure that the supply of cool air is not hindered inany way (e.g. by heat insulation strips fitted in the housing unit).Furthermore, the required supply of cool air must not be excessivelyheated by other heat sources (e.g. solid fuel stoves). If the oven is built in behind a furniture front (e.g. a door), do notclose the furniture door while the oven is in use. Heat and moisturecan build up behind the closed furniture door. This can result indamage to the oven, housing unit and floor. Leave the furniture dooropen until the oven has cooled down completely.

    Correct use

    Risk of injury caused by hot surfaces. The oven gets hot duringoperation. You could burn yourself on the heating elements, ovencompartment, accessories or food.Wear oven gloves when placing food in the oven or removing it, andwhen adjusting oven shelves etc. in a hot oven.

    Due to the high temperatures radiated, objects left near the ovencould catch fire. Do not use the oven to heat up the room.

    Oils and fats can ignite if allowed to overheat. Never leave theoven unattended when cooking with oil or fats. Never attempt to putout oil or fat fires with water. Switch the oven off and extinguish theflames by leaving the door closed.

    Grilling food for excessively long cooking durations can cause it todry out with the risk of catching fire. Do not exceed therecommended cooking durations. Certain foods dry out quickly and may catch fire due to high grillingtemperatures.Never use a grill function to finish baking bake-off rolls or bread, or to dryflowers or herbs. Instead, use the Fan Plus  or Conventional Heat function and always ensure this type of procedure is supervised. If using alcohol in your recipes, please be aware that hightemperatures can cause the alcohol to evaporate. The vapour cancatch fire on hot heating elements.

    When using residual heat to keep food warm, corrosion from highair humidity and condensation can occur in the oven. This can alsocause damage to the control panel, worktop and surroundingkitchen furniture. Keep the oven on and select the lowesttemperature available for the selected function. The cooling fan willthen continue to run and dissipate the moisture.

    Food which is stored in the oven compartment or left in it to be keptwarm can dry out and the moisture released can lead to corrosion damagein the oven. Always cover food that is left in the oven to keep warm.

    An accumulation of heat can cause the enamel on the floor of theoven to crack or flake off.Never line the floor of the oven compartment with aluminium foil oroven liners.If you wish to place crockery on the oven floor during cooking, orplace crockery on the oven floor to heat it up, you can do so, butonly with the Fan Plus  or Eco Fan Heat  function.

    The oven compartment floor can become damaged by itemsbeing pushed around on it. When placing pots, pans or crockery onthe oven compartment floor, ensure that you avoid pushing themaround.

    Danger of injury caused by steam. Pouring a cold liquid onto a hotsurface creates steam, which can cause severe scalding. Thesudden temperature change can also cause damage to hot surfaces.Never pour cold liquids directly onto hot surfaces.

    It is important that the temperature in the food being cooked isevenly distributed and sufficiently high. This can be achieved bystirring or turning the food.

    Plastic dishes that are not suitable for use in an oven will melt andmay ignite at high temperatures and damage the oven.Use only plastic containers that are suitable for use in an oven.Follow the manufacturer’s instructions.

    Preserving and heating food in sealed tins will result in an increasein pressure, which can cause them to explode. Do not use tins forpreserving or heating food.

    Risk of injury from the open door. You could bang into the opendoor or trip over it. Avoid leaving the door open unnecessarily.

    The door can support a maximum load of 15 kg. Do not lean or siton an open door, or place heavy items on it. Make sure that nothinggets trapped between the door and the oven compartment. Thiscould damage the oven.

    The following applies for stainless steel surfaces:

    The coated stainless steel surface can be damaged by adhesivesand will lose its dirt-repelling properties. Do not use sticky notes,adhesive tape or other types of adhesive on the stainless steelsurface.

    Magnets can cause scratches. Do not use the stainless steelsurface as a magnetic notice board.

    Cleaning and care

    Risk of injury due to electric shock. The steam from a steamcleaning appliance could reach electrical components and cause ashort circuit. Never use a steam cleaner for cleaning.

    Scratches on the door glass can cause the glass to break. Do notuse abrasive cleaners, hard sponges, brushes or sharp metal tools toclean the door glass.

    The shelf runners can be removed (see “Cleaning and care –Removing the shelf runners with FlexiClip telescopic runners”). Refitthe shelf runners correctly.

    Coarse soiling in the oven compartment can cause thick smoke todevelop. Coarse soiling should be removed from the ovencompartment before running the pyrolytic cleaning programme.

    In warm, moist environments, there is a higher probability ofvermin infestations (e.g. cockroaches). Ensure the oven and the areasurrounding it are always kept clean.Damage caused by vermin is not covered by the warranty.

    Accessories

    Only use original Miele accessories. If other parts are used,warranty, performance and product liability claims will be invalidated.

    The Miele gourmet oven dish HUB 5000/HUB 5001 (if available)must not be inserted on shelf level 1. This will damage the oven floor.The lack of clearance will create an accumulation of heat which cancause the enamel to crack or flake off. Never place a Miele oven dishon the upper support of shelf level 1 either as it will not be securedby the non-tip safety notches. As a general rule, use shelf level 2.

    The high temperatures used during pyrolytic cleaning will damageaccessories that are not designed for cleaning in the Pyrolyticcleaning programme.Please remove these accessories from the oven interior beforestarting the Pyrolytic cleaning programme. This also applies to non-pyrolytic accessories purchased separately to the oven.

    Disposal of the packingmaterialThe transport and protective packaginghas been selected from materials whichare environmentally friendly fordisposal, and can normally be recycled.

    Recycling the packaging reduces theuse of raw materials in themanufacturing process and alsoreduces the amount of waste in landfillsites. Ensure that any plasticwrappings, bags etc. are disposed ofsafely and kept out of the reach ofbabies and young children. Danger ofsuffocation.

    Disposing of your oldapplianceElectrical and electronic appliancesoften contain valuable materials. Theyalso contain specific materials,compounds and components, whichwere essential for their correct functionand safety. These could be hazardousto human health and to the environmentif disposed of with your domestic wasteor if handled incorrectly. Please do not,therefore, dispose of your old appliancewith your household waste.

    Please dispose of it at your localcommunity waste collection / recyclingcentre for electrical and electronicappliances. You are also responsible fordeleting any personal data that may bestored on the appliance prior todisposal. Please ensure that your oldappliance poses no risk to childrenwhile being stored prior to disposal.

    Function selectorThe function selector is used to selectoven functions and to switch on theoven lighting separately.

    The function selector can be turnedclockwise or anti-clockwise.When the function selector is in the0 position, it can be retracted bypushing it in.

    Temperature selector When a function is selected, therecommended temperatures and the symbol will appear in the display. Usethe temperature selector  to changethe temperature for cooking processesin 5-degree increments.

    The temperature selector  can beturned clockwise or anti-clockwise. Itcan be retracted in any position bypressing it in.

    Clock/TimerThe clock/timer is operated via thedisplay and the , OK and  sensorcontrols.

    Display

    The display shows the time of day oryour settings.

    It goes dark if settings are not beingentered.

    Please refer to “Clock/Timer” for moreinformation.

    Sensor controls

    The sensor controls respond to thetouch of a fingertip. Every touch on thesensors is confirmed by an audibletone.The keypad tone can be switched off bychanging setting   to status   (see“Clock/Timer - Changing settings”).

    Data plateThe data plate located on the frontframe of the oven is visible when thedoor is open.

    The data plate states the modelnumber, the serial number as well asconnection data (voltage, frequencyand maximum rated load).

    Have this information available if youneed to contact Miele so that anyissues can be rectified as quickly aspossible.

    The shelf runners, universal tray andwire rack (or “rack” for short) aresupplied as standard with the oven.

    Depending on the model, your ovenmay also come supplied with some ofthe accessories listed here.

    All accessories and cleaning and careproducts listed in these instructions aredesigned for Miele ovens.

    These are available to order via theMiele online shop or directly from Miele(see the end of this booklet for contactdetails).

    When ordering, please quote the modelnumber of your oven and the referencenumber of the accessories required.

    Shelf runners

    Shelf runners for accessories are fittedon either side of the oven cavity forshelf levels .

    The shelf level numbers are marked onthe front of the oven frame.

    Each level consists of 2 rails, one abovethe other.

    Accessories (e.g. the rack) are pushedinto the oven between the two rails.

    The shelf runners can be removed (see“Cleaning and care – Removing theshelf runners with FlexiClip telescopicrunners”).

    Baking tray, universal tray and rackwith non-tip safety notches

    Baking tray HBB 71:

    Universal tray HUBB 71:

    Rack HBBR 71:

    Insert these accessories into the shelfrunners between the two rails of a shelflevel.

    Always place the rack with the loadingsurface in the lower position and the non-tip safety notches towards the back.

    Non-tip safety notches are located onaccessories to prevent the trays beingpulled out completely when you onlywish to pull them out partially. They alsoprevent trays from tipping.

    – The non-tip safety notches are locatedin the middle of the short sides of thebaking tray and universal tray.

    – The non-tip safety notches arelocated towards the back of the shortsides of the rack.

    If you are using the universal tray withthe rack on top, insert the tray betweenthe rails of a shelf runner and the rackwill sit on top of it.

    FlexiClip telescopic runners HFC 70-C

    FlexiClip telescopic runners can only befitted on levels 1, 2 and 3.

    The FlexiClip telescopic runners can bedrawn right out of the oven to give agood overview of the cooking inprogress.

    Push the FlexiClip telescopic runnersright into the oven compartmentbefore placing accessories on them.

    To prevent the risk of accessoriessliding off the telescopic runners:

    – Make sure that they are sittingsecurely on their runners in betweenthe stoppers at either end of eachrunner.

    – Always slide the rack onto theFlexiClip telescopic runners with theloading surface facing downwards.

    The FlexiClip telescopic runners cansupport a maximum load of 15 kg.

    Because the FlexiClip telescopicrunners sit on the top rail of the shelfrunners, the gap between the levelthat the FlexiClip telescopic runnersare on and the one above is smallerthan if, for instance, racks were fittedon each level. Cooking results will beaffected if the gap is too small.

    If you need to use more than onebaking tray, universal tray or rack at atime:

    Place the baking tray, universal trayor rack on the FlexiClip telescopicrunners.

    Leave at least one shelf level freebetween it and any baking tray,universal tray or rack on the FlexiCliptelescopic runners above it.

    You can use the universal tray togetherwith the rack on the FlexiClip telescopicrunners.

    Place the universal tray together withthe rack on the FlexiClip telescopicrunners. The rack will automaticallyslide between the rails of the shelflevel above the FlexiClip telescopicrunners.

    Leave at least one shelf level freebetween it and any baking tray,universal tray or rack on the FlexiCliptelescopic runners above it.

    Fitting the FlexiClip telescopicrunners

    Risk of injury caused by hotsurfaces.The oven gets hot during operation.You could burn yourself on theheating elements, the ovencompartment, or accessories.Allow the heating elements, ovencompartment and the accessories tocool down before fitting or removingthe FlexiClip telescopic runners.

    Preferably fit the FlexiClip telescopicrunners onto level 1. You can then usethem for food which should be cookedon level 2.

    Each level of the shelf runners consistsof two rails. The FlexiClip telescopicrunners are fitted on the upper rail ofthe two rails that make up a shelf level.

    The FlexiClip telescopic runner with theMiele logo is fitted on the right.

    When fitting or removing the FlexiCliptelescopic runners, do not extendthem.

    Hook the FlexiClip telescopic runneronto the front of the top rail of a shelfrunner (1.).

    Then hold the FlexiClip telescopicrunner at an angle in towards themiddle of the oven compartment (2.).

    Slide the FlexiClip telescopic runnerat an angle along the top rail as far asit will go (3).

    Then swing the FlexiClip telescopicrunner back to the side and secure itto the top rail with an audible click (4).

    If the FlexiClip telescopic runners aredifficult to pull out after fitting, youmay need to pull firmly on them onceto release them.

    Removing the FlexiClip telescopicrunners

    Risk of injury caused by hotsurfaces.The oven gets hot during operation.You could burn yourself on theheating elements, the ovencompartment, or accessories.Allow the heating elements, ovencompartment and the accessories tocool down before fitting or removingthe FlexiClip telescopic runners.

    Push the FlexiClip telescopic runnerin all the way.

    Push down on the tab at the front ofthe FlexiClip telescopic runner (1.).

    Swing the FlexiClip telescopic runnertowards the middle of the ovencompartment (2.), then pull itforwards along the top rail (3.).

    Lift the FlexiClip telescopic runner offthe rail and take it out of the oven.

    FlexiClip telescopic runners HFC 7x

    You can use the FlexiClip telescopicrunners on shelf levels 1–4.

    Push the FlexiClip telescopic runnersright into the oven cavity beforeplacing accessories on them.

    The accessories will thenautomatically sit securely between thestoppers at either end of each runnerand be prevented from sliding off.

    The FlexiClip telescopic runners cansupport a maximum load of 15 kg.

    Fitting and removing the FlexiCliptelescopic runners

    Risk of injury caused by hotsurfaces.The oven gets hot during operation.You could burn yourself on theheating elements, the ovencompartment, or accessories.Allow the heating elements, ovencompartment and the accessories tocool down before fitting or removingthe FlexiClip telescopic runners.

    The FlexiClip telescopic runners arefitted in between the two rails that makeup a shelf level.

    The FlexiClip telescopic runner with theMiele logo is fitted on the right.

    Remove any protective foil andstickers except the data plate fromthe oven and accessories.

    Cooking programmes– Remove any accessories from the

    oven that are not required for acooking programme.

    – In general, if a range of temperaturesis given in a recipe or chart, it is bestto select the lower temperature andto check the food after the shortestduration.

    – Pre-heat the oven only if instructed todo so in the recipe or the cookingchart.

    – Avoid opening the door during acooking process.

    – It is best to use dark bakeware andcooking containers with a mattefinish made of non-reflectivematerials (enamelled steel, heat-resistant glass, non-stick coated castaluminium). Shiny materials such asstainless steel or aluminium reflectthe heat, preventing it from reachingthe food efficiently. Do not cover theoven floor or the rack with heat-reflective aluminium foil.

    – Monitor cooking durations to avoidwasting energy when cooking food.Set the cooking duration or use afood probe if you have one.

    – The Fan Plus  function can beused for cooking many types of food.Because the fan distributes the heatin the oven compartment straightaway, it allows you to use a lowertemperature than you would withConventional Heat . It also enablesyou to cook on several shelf levels atthe same time.

    – Eco Fan Heat  is an innovativefunction which is suitable for smallamounts of food, e.g. frozen pizzas,bake-off rolls, biscuits and for meatdishes and roasts. The cookingprocess is energy-efficient thanks tooptimal utilisation of heat. Whencooking on a single level, up to 30 %less energy is used withcomparatively good cooking results.Do not open the door during thecooking programme.

    – Fan Grill  is the best function forgrilled dishes. With Fan Grill you canuse lower temperatures than withother grill functions which use themaximum temperature setting.

    – Whenever possible you should cookseveral dishes at the same time.Place them next to each other in theoven or on different shelf levels.

    – Dishes which you are unable toprepare at the same time should, ifpossible, be cooked one after theother in order to make use of existingheat in the oven.

    Using residual heat– The temperature in cooking

    programmes using temperaturesabove 140 °C which take longer than30 minutes to cook can be turneddown to the lowest possibletemperature about 5 minutes beforethe end of cooking. The residual heatin the oven is sufficient for cookingthe food. However, do not switch theoven off (see “Warning and safetyinstructions”).

    – It is best to start the pyrolyticcleaning programme immediatelyafter a cooking programme. Theresidual heat in the oven will helpreduce the amount of energyrequired.

    Energy saving modeThe oven will switch itself offautomatically to save energy if aprogramme is not being run and nocontrols have been operated. The timeof day will appear in the display or thedisplay will remain dark (see “Clock/Timer - Changing settings”).

    We recommend switching on and offautomatically when roasting.When baking, the oven should not beset to start a long time off. Otherwisethe cake mixture or dough will dry out,and the raising agents will lose theireffectiveness.

    Handling food carefully will helpprotect your health.Cakes, pizzas and chips should becooked until golden, not dark brown.

    Tips on baking– Set a cooking duration. When baking,

    the oven should not be set to start along time off. Otherwise the cakemixture or dough will dry out, and theraising agents will lose theireffectiveness.

    – Generally, you can use the rack,baking tray, universal tray and anytype of baking tray made of heat-resistant material.

    – Avoid using bright, thin-walled tins asthey give an uneven or poor browningresult. In certain unfavourableconditions, the food will not cookproperly.

    – Place cakes in rectangular tins on therack with the longer side across thewidth of the oven for optimum heatdistribution and even results.

    – Always place bakeware on the rack.

    – Bake cakes with fruit toppings ordeep cakes on the universal tray.

    Using baking paper

    Miele accessories, e.g. the universaltray, are treated with PerfectCleanenamel (see “Features”). Surfacestreated with PerfectClean enamelgenerally do not need to be greased orcovered with baking paper.

    Use baking paper when baking lyepastries (e.g. pretzels) because thesodium hydroxide can damage thePerfectClean treated surface.

    Use baking paper when bakingsponge, meringue, macaroons orsimilar items. These are more likely tostick due to their high egg whitecontent.

    Use baking paper when cookingfrozen food on the rack.

    Unless otherwise stated, the cookingdurations given in the cooking chartsare for an oven compartment which hasnot been pre-heated. With a pre-heatedoven compartment, shorten durationsby around 10 minutes.

    As a general rule, check whether thefood is cooked after the shortestduration. Stick a wooden skewer intothe food.

    If it comes out clean without any batter/dough on it, the food is done.

    Using Fan Plus

    Because the fan distributes the heataround the oven compartment straightaway, you can use a lower temperaturethan you would with the ConventionalHeat  function.

    Use this function if you are baking onmultiple shelf levels at the same time. 1 shelf: Place the food on shelf

    level 2. 2 shelves: Place the food on shelf

    levels 1+3 or 2+4. 3 shelves: Place the food on shelf

    levels 1+3+5.

    – If you are cooking on multiple shelflevels at the same time, slide theuniversal tray in on the lowest level.

    Tips for roasting– You can use any crockery made from

    temperature-resistant materials, e.g.oven dishes, roasting pans with lid,ovenproof glass dishes, roastingbags, dishes made from earthenwareor cast iron, the universal tray, rackand/or grilling and roasting insert (ifpresent) on top of the universal tray.

    – Pre-heating the oven compartmentis only required when roasting beefsirloin joints and fillet. Pre-heating isgenerally not necessary.

    – Use a closed roasting dish forroasting meat, such as an oven dish.The meat stays succulent. The ovencompartment will also stay cleanerthan when roasting on the rack. Itensures that sufficient stock remainsfor making gravy.

    – If you are using a roasting bag,follow the instructions on thepackaging.

    – If you are using the rack or an openroasting dish for roasting, you canadd a little fat or oil to very lean meator place a few strips of streaky baconon the top.

    – Season the meat and place in theroasting dish. Dot with butter ormargarine or brush with oil or cookingfat if necessary. For large lean cuts ofmeat (2–3 kg) and fatty poultry, addabout 1/8 l of water to the dish.

    – Do not add too much liquid duringcooking as this will hinder thebrowning of the meat. Browning onlyoccurs towards the end of thecooking duration. Remove the lidabout halfway through the cookingduration if a more intensive browningresult is desired.

    – At the end of the programme, takethe food out of the ovencompartment, cover it and leave tostand for about 10 minutes. Thishelps retain juices when the meat iscarved.

    – For a crisp finish, baste poultry10 minutes before the end of thecooking duration with slightly saltedwater.

    Selecting the  temperature

    As a general rule, select the lowertemperature given in the chart. Ifhigher temperatures are used thanthose specified, the meat will brownon the outside, but will not beproperly cooked through.

    When cooking with Fan Plus ,select a temperature 20 °C lower thanwhen using Conventional Heat .

    For cuts which weigh more than 3 kg,select a temperature approx. 10 °Clower than that given in the cookingchart. The roasting process will takelonger, but the meat will cook evenlythrough and the skin or crackling willnot be too thick.

    When roasting on the rack, set atemperature approx. 10 °C lower thanfor roasting in a covered oven dish.

    Determine the cooking duration bymultiplying the thickness of the roast[cm] with the time per cm [min./cm]stated below, depending on the typeof meat:

    – Beef/Venison: 15–18 min./cm

    – Pork/Veal/Lamb: 12–15 min./cm

    – Sirloin joints/Fillets: 8–10 min./cm

    As a general rule, check whether thefood is cooked after the shortestduration.

    Risk of injury caused by hotsurfaces.If you grill with the door open, hot airwill escape from the oven instead ofbeing cooled by the cooling fan. Thecontrol elements will get hot.Grill with the oven door closed.

    Tips for grilling– Pre-heating is necessary when

    grilling. Pre-heat the top heat/grillelement for approx. 5 minutes withthe door closed.

    – Trim the meat if necessary. Seasonmeat 10-15 minutes before cooking.

    – Add a little oil to lean meat ifnecessary. Do not use other types offat as they can easily burn and causesmoke.

    – Clean fish in the normal way. Toenhance the flavour, season with alittle salt. Fish can also be drizzledwith lemon juice.

    – Use the universal tray with the rack orthe grilling and roasting insert (ifpresent) placed on top. The trayunder the insert will collect the meatjuices and stop them from burning sothat they can be used for makinggravy and sauces. To grill, brush therack or the grilling and roasting insertwith oil and then place the food onthe rack.

    – Well-doneIf there is great resistance, it iscooked through.

    Useful tip: If the surface of a thicker cutof meat is browned but the centre is stillraw, move the food to a lower level orreduce the temperature and continuegrilling. This will stop the surface frombecoming excessively charred.

    Using Full Grill

    Use this function to grill flat thin cuts inlarge quantities and for browning largebaked dishes.

    The entire top heat/grill element will gethot and glow red.

    A temperature setting of 220 °C isgenerally recommended for thinnertypes of food, while 180–200 °C isrecommended for thicker cuts.

    – Always pre-heat for at least 5 minutes before Fan Grilling.

    – It is not necessary to turn food when Fan Grilling . Only one side of the food,however, will become brown.

    – When using red meat, pat the meat dry before Fan Grilling as this encourages aricher colour.

    Air is circulated throughout the ovencompartment to gently defrost thefrozen food.

    Risk of infection from bacteria.Bacteria such as salmonella cancause life-threatening foodpoisoning.It is particularly important to observefood hygiene rules when defrostingfish and meat, and in particular whendefrosting poultry.Do not use the liquid producedduring defrosting.Process the food as required as soonas it has been defrosted.

    Useful tips

    – Remove the packaging and place thefrozen goods on the universal tray orin a suitable bowl or dish.

    – Use the universal tray with the rackplaced on top of it for defrostingpoultry. This way the frozen food willnot be lying in the defrosting liquid.

    – Meat and poultry need to be fullydefrosted before cooking. Fish, onthe other hand, can be partiallydefrosted before cooking. Defrost sothat the surface is sufficiently soft totake herbs and seasoning.

    Low temperature cookingLow temperature cooking is ideal forcooking delicate cuts of beef, pork, vealor lamb when a tender result is desired.

    First briefly sear the meat all over at ahigh temperature on the cooktop inorder to seal it.

    Then place the meat in the pre-heatedoven where the low temperature andlong cooking duration will cook it toperfection and ensure it is very tender.

    The meat will relax. The juices insidewill start to circulate evenly throughoutthe meat to reach the outer layers.This gives very tender and succulentresults.

    Use lean meat which has beencorrectly hung and trimmed. Bonesshould be removed before cooking.

    For searing, use a suitable cooking oilor fat that can withstand hightemperatures (e.g. clarified butter,vegetable oil).

    Do not cover meat during cooking.

    The cooking duration takes approx.2–4 hours depending on the weightand size of the meat and how well youwant it cooked.

    As soon as the cooking programmehas finished, you can carve the meatstraight from the oven. It does notneed to rest.

    The meat can be left in the ovencompartment to keep warm until youserve it. This will not affect results inany way.

    Serve on pre-heated plates with veryhot sauce or gravy to prevent itcooling down too quickly. The meat isat the ideal temperature for eatingstraight away.

    Using Conventional Heat

    Refer to the information in the cookingcharts at the end of this booklet.

    Use the universal tray with the rackplaced on top of it.Do not use the Booster  function topre-heat the oven.

    Place the rack together with theuniversal tray on shelf level 2.

    Select the Conventional Heat function and a temperature of 120 °C.

    Pre-heat the oven together with theuniversal tray and rack for approx.15 minutes.

    While the oven is pre-heating, searthe meat on all sides on the cooktop.

    Risk of burning due to hotsurfaces!The oven gets hot during operation.You could burn yourself on theheating elements, the ovencompartment, food or accessories.Wear oven gloves when placing foodin the oven or removing it, and whenadjusting oven shelves etc. in a hotoven.

    Place the seared meat on the ovenrack.

    Reduce the temperature to 100 °C(see “Cooking charts”).

    Continue cooking until the end of theprogramme.

    Bottling

    Risk of infection from bacteria.The spores of the botulinumbacterium are not sufficiently killedby bottling pulses and meat onlyonce. Toxins may form which canlead to serious poisoning. Thesespores are only destroyed byreheating the food within 2 days afterpreserving.After they have cooled down, alwaysreheat pulses and meat a secondtime within 2 days.

    Risk of injury from increasedpressure in sealed tins.Preserving and heating food insealed tins will result in an increasein pressure, which can cause them toexplode.Do not use tins for preserving orheating food.

    Preparing fruit and vegetables

    The instructions are for 6 jars with acapacity of 1 litre each.

    Only use special jars for preserving(preserving jars or jars with a screwcap). Only use undamaged jars andrubber rings.

    Rinse the jars with hot water beforebottling and fill them up to amaximum of 2 cm below the rim.

    Place the universal tray on shelflevel 2 and place the closed jars onthe tray.

    Select the Fan Plus  function and atemperature of 160–170 °C.

    Wait until bubbles evenly rise in thejars.

    Reduce the temperature in time toprevent the contents from boiling over.

    Removing the jars after bottling

    After they have cooled down, alwaysreheat pulses and meat a secondtime within 2 days.

    Remove the fasteners from the jarsand make sure all jars are closedproperly when storing them.

    Either boil open jars again or storethem in a cool place and consume thepreserved fruit or vegetablesimmediately.

    Check the jars during storage. If jarshave opened during storage or if thescrew cap is bulging and does notmake a popping noise when opened,destroy the contents.

    Tips for cakes, pizza and baguettes

    – Bake cakes, pizza and baguettes onbaking paper on the rack.Do not use the baking tray or theuniversal tray for frozen foods with alarge surface area. The tray couldbecome warped and difficult, or evenimpossible, to remove from the ovencompartment when hot. Additionaluse will make the warping worse.

    – Use the lowest temperaturerecommended on the packaging.

    Tips for oven chips, croquettes andsimilar items

    – These frozen items can be cooked onthe baking tray or universal tray.Place baking paper on the tray sothat they cook gently.

    – Use the lowest temperaturerecommended on the packaging.

    – Turn food several times duringcooking.

    Preparing frozen food/ready meals

    Handling food carefully will helpprotect your health.Cakes, pizzas and chips should becooked until golden, not dark brown.

    Select the function and temperaturerecommended on the manufacturer'spackaging.

    Pre-heat the oven. Place the food in the pre-heated oven

    on the shelf level recommended onthe packaging.

    Check the food at the end of theshortest cooking durationrecommended on the packaging.

    Heat crockeryUse the Fan Plus function for pre-heating crockery.

    Only pre-heat heat-resistant dishes.

    The use of unsuitable cleaningagents can cause the surfaces todiscolour or alter. The oven front isparticularly susceptible to damagefrom oven cleaners or descalingagents.All surfaces of this appliance aresusceptible to scratching. Scratcheson glass surfaces could cause abreakage in certain circumstances.Remove all cleaning agent residuesimmediately.

    Unsuitable cleaning agentsTo avoid damaging the surfaces of yourappliance, do not use:

  • Cleaning and care

    If soiling is left on for any length oftime, it may become impossible toremove. Continued use withoutregular cleaning will make the ovenmuch harder to clean. Failure tomaintain the oven in a cleancondition could lead to deteriorationof the surfaces that could adverselyaffect the life of the appliance andresult in a hazardous situation.Remove any soiling immediately.

    The accessories are not dishwasher-safe.

    Useful tip: Soiling caused by spilledfruit juices and cake mixtures is bestremoved while the oven is still warm.Exercise caution and make sure theoven is not too hot.

    To make it easier to clean the oven:

    Remove the door. You can remove the shelf runners

    together with the FlexiClip telescopicrunners (if present).

    Lower the top heat/grill element.

    Removing normal soiling

    The fibreglass seal around the frontof the oven should be handledcarefully. Do not rub and scour it.Ideally, you should avoid cleaning it.

    It is best to remove normal so
