A HISTORY OF BOURBON

Like much of America, the history of bourbon is soaked (pun intended) in enigmas, legends, and back wood tall tales.

Was it Jacob Spears or Elijah Craig who first distilled it? Was it purposely distilled or a fortuitous accident?

Was it named for Bourbon County Kentucky or Bourbon Street in New Orleans? The history of bourbon as “America’s Native Spirit”

depends on the person telling the story.

The technique used to make whiskey has been practiced in Scotland for centuries. The Scottish felt so strongly about this elixir that the Gaelic word “uisge”

translates as “Water of Life.” The descendants of these Irish/Scot distillers made their way to the New World and settled in areas

like Virginia, Kentucky, and Tennessee and began making whiskey as they had done before.

Sometime in the early 1800’s in Kentucky, whiskey distillers

came upon three naturally occurring phenomena that came to distinguish the difference between whiskey and bourbon.

The first natural observation was the limestone shelf that lies under the vast majority of Kentucky and Tennessee.

The water used to create Kentucky bourbon was and is iron-free and pure after filtering through layers of limestone rock. The second observation was the barrels being made out

of aged American White Oak. This wood is unique because it can be charred and eventually releases the vanilla and

caramel characteristics and adds the amber color to the bourbon. Because bourbon “breathes” up to a quarter of inch in a one-inch barrel,

only new American White Oak can be used to store bourbon.

The final observation was the vast differences in Kentucky’s climate. The hot summers and cold winters force the bourbon

through the charred inside of the barrels. Because of these temperature changes,

as much as 3% per year that it is aged is lost to evaporation. This loss is known as “The Angel’s Share.”
