Oven-Fried Pulled Pork Flautaswith Taco Sauce & Cheddar

Flautas are a traditional Mexican dish consisting of rolled-up tortillas filled withmeat, cheese, or veggies. They are then fried until crunchy. Here, we fill flourtortillas with pulled pork and cheddar, and then oven-fry them to get that satisfyingcrunch in each bite. The flautas are served with tomatoey-taco spiced dippingsauce, sour cream, and fresh cilantro.

Preheat oven to 425°F with a rack in theupper third. Finely chop onion. Halvepoblano pepper, discard stem andseeds, then finely chop. Finely chop 2teaspoons garlic. Generously oil arimmed baking sheet. Using your fingers,break pulled pork up into bite-sizedpieces. Coarsely grate or chop cheddar,if necessary.

Heat 1 tablespoon oil in medium skilletover medium-high. Add peppers and allbut 2 tablespoons of the onions; cookuntil softened and golden brown, 5minutes. Add pulled pork and half of thechopped garlic; cook, breaking up porkwith a spoon. Stir in ½ cup water;simmer, scraping up any browned bitsfrom bottom of skillet, 1 minute. Seasonwith salt and pepper.

Place tortillas on a work surface. Spoonabout ⅓ cup of the pork filling onto onehalf of each tortilla, spreading into a 4-x1-inch rectangle. Top with some of thecheese, then roll tightly, starting at thefilled side of the tortilla. Place flautas onprepared baking sheet, seam side down.Wipe out skillet and reserve for step 5.

Generously brush tops and sides offlautas with oil. Bake on upper oven rackuntil golden brown and crispy, 15–20minutes (watch closely as ovens vary).

Heat 1 tablespoon oil in reserved skilletover medium-high. Add all of the tacoseasoning and remaining choppedgarlic; cook, stirring, until garlic issizzling, about 1 minute. Stir in tomatosauce and ½ cup water, and bring to aboil. Simmer over medium heat untilsauce is slightly thickened, about 5minutes. Season to taste with salt andpepper.

Coarsely chop cilantro leaves andstems. In a small bowl, thin all of the sourcream by adding 1 teaspoon water asneeded. Season to taste with salt andpepper. Serve flautas topped with someof the taco sauce, sour cream,remaining chopped onions, andcilantro. Serve remaining taco sauce onthe side for dipping. Enjoy!
