5 Themes for Change in Wine, 2013

    SF Chronicle, 01/11/2013

    By: Jon Bonne

The importance of old vines: California's boom since the late 1980s has

largely been built around new planngs and fashionable clones. With anoth-

er replanng wave set to wash over the state, young vines are driving much

    of the industry.

That's all the more reason for mature planngs to get their due. These

aren't just historically important; they can oer a more complex expression

of wine than the exuberant fruit of young plants - a truism that was accept-

ed for centuries unl the young-vine obsession of recent years.

It is perhaps inconvenient that old vines give a parcular depth of avor,

although it helps that fruit from many of California's old vineyards remain a

relave bargain, certainly compared with the modern costs of replanng,

    oen $50,000 per acre.

Perhaps this will be the year when the industry acknowledges that sustaina-

bility, in its true sense, means planning for the full life span of a perennial

plant that can survive 50 years or more. That long view is long overdue.

MARTIN ESTATE encompasses roughly twelve acres. Eight of these acres wereplanted in 1996 with 17,000 vines. Seven acres of ghtly spaced CabernetSauvignon, Clones 4, 6 and 337 surround the winery and, at the south end ofthe property, one acre of Merlot. Split redwood stakes and non-galvanized wire were used as the trellising sys-tem to avoid the reecon of new metal, retaining the feel of a 19th centuryvineyard.

The soils of the property are Pleasanton Loam and Yolo Loam. Both of theseare well drained soils on alluvial fans, allowing the roots of the vines to godeep into the ground in search of water, thus requiring lile irrigaon. Therootstocks chosen are especially well suited for the terrain. The Estate's vine-yard is farmed using organic methods.

"What you will taste is the essence of the vineyard."-Greg Martin

As the Estate's terroir changes within the vineyard f rom 100 percent loam inthe eastern secon to a more gravelly soil towards the west, an individualizeddrip irrigaon system allows select watering according to the vines' needs.

Being located in the heart of the Rutherford appellaon, the sun exposure of

the vineyard has a higher radiant value than other parts of Napa Valley. This-

    - combined with cool evenings and the dusng of fog in the early mornings --allows the fruit to ripen at a steady pace.

Come harvest me, the grapes are carefully hand picked in small lots and seg-regated according to clones and soils, as well as their specic maturity. As thevines are only a few feet away from the Estate Winery, it is possible to get thegrapes within minutes aer picking onto a sorng table, where de -stemmedwhole berries are hand sorted to remove all inferior material.

MARTIN ESTATE Cabernet Sauvignon is limited to what the vineyard yields,

and the wine's intensity mirrors its terroir.

San Francisco Chronicle Wine Compeon.Winemakers notes- Very similar to the previous vintage, the wine is garnet

in color with peppery spice and raspberry aromas. Blackberries and raspber-ries are pronounced on the palate with a touch of spice. The alcohol is bal-

anced with the fruit and acidity. Tannins are very so. The purity of fruit

begs for grilled beef or pork.

Greek selers in Sicily and Southern parts of Italy found the moderate Italian climate

conducive to grape culvaon and winemaking. They termed the place Enotria i.e. aland of wines and introduced winemaking techniques around 800 B.C. Etruscans from

Asia Minor who seled mostly in central Italy also produced wine. Spaniards intro-duced wine into Sardinia. Italian wine producon ourished around second centuryB.C. aer the Carthaginians were defeated by the Romans.Romans improved the techniques previously introduced and perfected the art ofwinemaking. They contributed to the spread of organized culvaon of vineyards, mass manufacture of wine, and storage of wine in barrels and boles. Between 300B.C. to the beginning of the Chrisan era the populaon of Rome crossed one millionand there was a sudden spurt in the demand for wine.Famous Roman poets like Horace and Virgil menon the names of wines like Faler-num, Caecubum, and Mamernum. Romans considered the Falernian region near

    Naples as their best wine-

growing region. White wine produced in this region wastreasured and most renowned. Honey was mixed with white wine to produce anaperif called Mulsum.Romans produced both red and white wines and the alcoholic content was high. Thismade the wine unpalatable due to a strong acidic taste and therefore they mixedlarge amount of water. Romans preferred sweet wine and drank it with almost everymeal. They mixed addives like herbs, spices, chalk, and salt water with the wine.Romans made immense contribuon to viniculture by classifying grapes and describ-ing the climate that best suits culvaon of each variety. They introduced props andtrellises that increased yield. They improvised the presses used to extract juice fromgrapes that were introduced by the Greeks. Romans were the rst to store wines inghtly closed wooden barrels. They recognized the importance of aging wines to

improve avor and taste. They preferred wines that matured for ten to twenty veyears.Romans are believed to have introduced the use of glass jars and corks. Their exper-se was passed on to other parts of Europe and remained unchanged for centuries.Demand for wine decreased with the decline and fall of the Roman Empire. Chrisanmonks of the Roman Catholic Church documented their grape culvaon and winemaking techniques during the Dark Ages. Wine regained its popularity from the fourteenth century. During the nineteenth andearly part of tweneth century Italian wine was cricized for its inferior quality andthe government stepped in to introduce regulaon and stringent quality controlmeasures. These measures bore fruit and Italy today accounts for twenty percent ofthe worlds total wine producon.

Wine is one of man's greatest creaons, and without a doubt, an amazing achievement. Wine isa drink that has been through much of our history. T he ancient Egypans made and consumedwine, Jesus was a wine drinker, and Christopher Columbus and his crew drank wine on their

boats as they found the Americas. History traces Spain as one the oldest wine producing coun-tries, with the rst grape vines being planted around 1100 B.C. in the region of Andaluca. How-ever there have been some studies that believe that grape seeds were planted in Spain between4000 and 3000 B.C. Either way, we know that Spain has at least been making wine for the past3000 years, and has a rich history on the development of wine and what is has become today. When Spain was conquered by the Phoenicians around 1100 B.C., they planted what is consid-ered the rst grape vines in Cadiz and started the producon of wine. When the Romans con-quered Spain around 210 B.C. wine producon expanded throughout the country and it becamea main source of work and income for the people. The quality of the wine varied from region toregion, but it can said that the province of Tarragona and the Region of Andaluca produced andexported most of the best wine throughout the Roman empire. When the Roman Empire fell, the Moors conquered most of Spain (A.D. 711) and forbid the useof alcohol, which was their religious belief. Though wine was sll produced during the Moorishrule, most grapes where used for "food and wine was no longer a major trade in Spain. Howev-

er, the Moors did keep some vineyards for wine and started the producon of fored wine, which was the birth of "Sherry", Spain's sweet fored wine. To this date, Sherry is sll beingproduced in the region of Andaluca and is one of Spain's most popular exported items.Spaniards fought bale aer bale to re -gain control of Spain, and nally ejected the moors in

1492 to take back control of their country. At that me, wine producon came back to life. Many new vineyards were planted and the country was ready to open its market to the rest ofEurope. Aer Christopher Columbus found the Americas, it opened the door for the Spaniards toexport much of its wine to Lan America and once again, wine became a big part of Spain'seconomy. Through much of Spain's wine history (and the rest of the worlds), Spanish wine waslight in color, had herbal fragrances, and made to be consumed right aer it was made. Let'sfast forward to around 1850. The country of France, known as the kings of wine at the me, hada bug called the "phylloxera", it destroyed most of the v ineyards in France. At that me, manyFrench winemakers moved to neighboring Spain as the bug had not aacked Spain. When theFrench arrived, they brought many new wine making styles and techniques that the Spaniardsdid not know, around that me is when Spanish wine really started to get more color, beerfragrance, more fruit, and giving it a longer shelve life. In the past, wineries in Spain usuallypicked grapes well before they were mature or even ripened, and would somemes mix red andwhite grapes together. The wine would usually stay in wine barrels for a long period of me(10+ years) so the wine would become smoother and not rancid. At some point during the1960's new wine techniques started evolving in La Rioja. Most wine makers started to leave thegrapes on the vine for a longer period before harvesng them, and le t he wines on the barrelsfor a shorter amount of me. This method oered fruiter wines with a smoother nish and afuller body, which has evolved to what Spanish wine is today.Around 1900 is when Spain's Cava (Spain's version of Champagne) started in the region of Cata-lonia. Cava rivaled Champagne from the start, as the quality was in par with Champagne, butthe price was much lower. To this date, Cava is one of t he most popular sparkling wines in theworld, providing that "Champagne" taste, for a fracon of the price. Not to say that Cava isbeer than Champagne, with respect to the French, Champagne will always be King, but theprice for a bole can be out of most peoples reach. Thanks to the sparkling wines from Cava,

the rest of us can open a bole and celebrate the good mes.

    2008 Chateau Goudichaud Rouge:

This wine has an intense dark-inky color with garnet reecons. Round tan-nins, so yet powerful, evolve within, with great persistence. It also presentsa generous feel on the palate, fruity and balanced. Aromas of black licorice, blackberry and cocoa, are noced as well as discreet notes of oak and spiceon the nish. Lots of freshness! To be consumed with poultry and red meats, but also with cheese, (mimolee as an example)

The soils of Chteau Goudichaud display great diversity from one side of theestate to the other. The vineyard can be divided into three parts: a central

plateau which is composed of clay and limestone, the gravel is about threefeet deep; then on each side of this plateau, gravely slopes enjoy opmalexposure. These gravelly soils, common to the Graves de Vayres, are clayey, deep and generous. Graves de Vayres AOC is considered to give more con-sistent quality of both red and white wines.

Winemaking philosophy: Terroir, time and passion make great wine!

    89

With a population of 65 million, wine is the dominant preferred drink and

has a much greater wine consumption rate than US, per capita.

The French traditions of winemaking originated in the 6th BC century and

evolved over hundreds of years. Winemaking in a French Chteau is a tradi-tional workmanship that has developed over many years of experience and

is handed down from generation to generation.

It is not through scientific methodology, advanced studies and technology

that wine is ordinarily made in France. Although, this has been changing

over the past decade. French consumers (since childhood) grow accustomed

to wine drinking. Wine is almost always served with meals, lunch and dinner.

France is the largest producer of wine in the world. In France, wine is drunk

either socially or mainly paired with food. Red wines from the Bordeaux re-

gion are produced with the intention to be drunk within 15 -20 years of aging

    when they reach complete maturity.

The French consumer palate is accustomed to wines that are well balanced

with less alcohol, good acidity, subtle fruit and therefore will age well.

Dionysus Wineryis a bouque winery in the heart of the Sonoma Valley. Wespecialize in small lots of handmade wines. For the me being, we are lim-ing our varietals to a Russian River Valley Pinot Noir and a Sonoma ValleyCabernet Sauvignon. We have a simple philosophy; wine making is an artand rather than mass producing above average wines; we would rather

    strive for perfecon.

You should be on the lookout however for a new signature varietal that Dio-

nysus Wineryplans to introduce in 2012. We wont tell you what it is but if

you read more about Cecilia, you shouldnt have a problem guring out what

    that is.

coang; earthy, intense, loads of cherry fruit. A classic vintage not to bemissed. The Brunello di Sonoma is our agship wine made from 100% San-giovese Grosso grapes, which is widely considered the Sangiovese clone parexcellence. The wine is produced completely from our low -yielding, organicestate vineyard "Poggio alla Pietra" located in the west Mayacamas Moun-tains which overlook the Sonoma Valley. Excellent sun exposure and op-mum climate ensure the slow ripening of the grapes, which in turn, makeswine of great depth and complexity.
