    Paleo Chocolate Chip Cookies

    Ingredients:

    2/3 cup gluten free coconut flour

    1/2 cup almond butter in natural oils

    1 cup unsweetened coconut milk (beverage)1 egg

    1 cup enjoy life chocolate chips

    1/2 tsp gluten free baking soda

    1/2 tsp vanilla

    1/2 tbs cinnamon (after thought, not pictured)

    1/2 tbs honey (also an after thought, not pictured)

    5 medjool dates, pitted

    Directions:

    1. Preheat to 350 degrees F.2. In food processor, combine flour, almond butter, coconut milk, egg, baking soda, cinnamon, honey, vanilla and dates.

    3. Process until a semi-thick, semi-cream batter forms.

    4. Add more flour, if desired, but the batter is not meant to be as thick as regular cookie dough.

    5. Remove blades and stir in chocolate chips.

    6. With a spoon, scoop cookie dough onto a baking sheet. I made 12.

    7. Bake for 18-20 minutes, or until golden brown.

    Ingredients2 cups blanched almond flour

    2 tablespoons coconut flour

    1/2 teaspoon Celtic sea salt

    1/2 teaspoon baking soda

    1 tablespoon vanilla extract (I use double strength)

    1/2 cup ghee or coconut oi l (or butter), melted

    1/2 cup coconut nectar (maple syrup works well too)

    3/4 cup dark chocolate chips**

    Instructions1. Preheat oven to 350 degrees F.

    2. Combine dry ingredients in a large bowl.

    3. Combine wet ingredients in a small bowl.

    4. Mix wet ingredients into dry ingredients.

    5. Use a small cookie dough scoop* or form into 1/2 inch balls and place on a parchment paper lined cookie sheet. (I used a

    Silpat.)

    6. Press dough down onto pan to form round disks. (The dough does not automatically melt and spread out as with regular

    flour.)

    7. Bake 10 minutes. (a little longer if you like a crunchier cookie)

    8. Remove to a wire rack to cool.

    Ingredients1 1/2 C Almond Flour

    3/4 C Coconut Flour

    1/4 C Arrowroot Powder

    1 tsp Baking Soda

    3 Eggs

    1/2 C Honey

    1 tsp Vanilla Extract

    1/4 C Coconut Oil-melted

    2/3 C Enjoy Life Chocolate Chips

    Preheat oven to 375. In large bowl, combine dry ingredients (first 4).

    In separate bowl, combine eggs, honey and vanilla. Stir wet ingredients into dry to combine.

    Add melted coconut oil and then add in chocolate chips.Place on parchment paper or Silpat Baking Mat. Bake in oven 12-15

    minutes.This recipe will make about 3 dozen sm/md cookies.

    1/2 cup raw honey

    2 large eggs

    1 tsp baking soda

    1 tsp sea salt

    1 tsp vanilla extract

    1 1/2 cups Enjoy Life Semi-Sweet Chocolate Chips

    Instructions1. Preheat oven to 375.

    2. Line a baking sheet with parchment paper.

    3. In a small mixing bowl, combine dry ingredients. Set aside.

    4. In a medium mixing bowl, beat the eggs, honey, and vanilla extract with a hand mixer, or wire whisk.

    5. Pour wet ingredients slowly into dry ingredients and beat with mixer or fork until combined.

    6. Add the melted coconut oil and continue to blend until combined. Stir in chocolate chips.

    7. Drop Tablespoon size balls of cookie dough onto prepared baking sheet.

    8. Bake for approximately 8-10 minutes.
