PeopleMatter

I have worked in the foodservice sector since 1984. I began my professional chef career in 1986. Having spent some time in London I returned to GMIT to complete my formal culinary qualifications, graduating in 1990. Working through the chef de partie system I went on to hold head chef roles in Norfolk in the United Kingdom, Jersey, The Channel Islands and Dublin. I joined Pallas Foods in 2007. I now serve Pallas Foods customers in the West Dublin Area where I live with my wife and two children.

What is a typical day with Pallas Foods?Typically I would structure my day around four to five pre planned visits or appointments with customers but would always factor in time to be proactive to opportunities that may present themselves.

What is the biggest challenge you face in your day?As an Area Sales Manager I work in a very competitive and fast moving environment where each day brings new challenges. My goal and that of Pallas Foods is to continuously provide our customers with service solutions to help them succeed in their business. We do this by providing the most comprehensive range of products and solutions to the market, backed by an expert support team throughout the Pallas Foods network.

Has your customer’s outlook changed over the last 12 months?I have definitely noticed a new confidence over the last twelve months. Many of my customers struggled in recent years but now find themselves in a stronger, leaner position with a renewed vigour for the opportunities that lie ahead.

How would your customers describe you?I would hope my customers see me as being professional and trustworthy, hardworking, diligent and attentive to their needs.

What do you like to do in your down time?I have a great love of cooking and really enjoy cooking at home for my family. It is important to me that my children learn to enjoy cooking; after all they say the heart of the home is the kitchen! I also enjoy a round of golf, surfing when I can travel to the West of Ireland and also enjoy sea angling.

What is the most rewarding aspect of your job?Having spent over twenty years working as a chef I have great empathy with many of my customers and get real satisfaction in being able to offer my knowledge and experience to assist them in any way I can. Seeing my customers succeed brings the ultimate reward.
