The history of the petit four A fancy biscuit, pastry or small cake

placed in a paper case [caisse or cuvette].

The name petit four goes back to the 18th century when people still made brick ovens and used aromatic faggots to kindle them. When the loaves had been taken out of the extremely hot oven and its temperature had dropped, cake mixtures for the patisserie were put in and baked. The mixture for the petit fours was baked on tins and at a very low temperature. This cake then formed the basis for the popular, small cakes.

After the era of chocolates, dragèes, marzipan, bon-bons and crystallised fruits, en vogue during the Renaissance and during the reign of Louis XIV, other small delicacies were created. The pastry cooks had to be imaginative and dispose of special skills to reproduce elaborate decorations as miniatures on a tiny cake. Originally, the term petit four is a French expression. Petit four literally means ‘small oven’. It indicates that a low burning oven was used to bake pastry at low temperatures.

The expression petit four first appeared in the New York Times of 28 January 1894, as part of a menu for a dinner given by the lawyer Randolph Guggenheim. The guests were delighted with the small, delicate cakes and the petit fours started on their road of success. Petit fours are still very popular but, on account of the high costs of labour, there are only few confectioners that still produce handmade petit fours.

Our Petit Fours Our traditional, square petit fours are small cakes in fresh, fruity colours. They are also available in white milk and dark chocolate. They consist of two layers of cake, with a filling of vanilla butter cream or a tasty Bavarian cream. To provide a contrasting flavour, we use a raspberry or apricot preserve. A distinguishing feature of our petit fours to make them stand out is their topping of almond marzipan. Our petit fours are exclusively made of natural ingredients and are free from substances that come under the E-number system.

Vanilla butter cream is a standard flavour and will appeal to most people.Our petit fours are also available with fruity flavoured fillings, such as Bavarian cream. There are petit fours to please every taste.Their sizes differ and range from 45x45 mm for the bigger types, to 28x28 mm for the smallest cakes. Their heights, too, may differ from 30 mm to 40 mm. It all depends on the occasion on which they are to be served, e.g. as a mini-cake at a high tea, or as part of the in-flight catering. In the latter case they may not be higher than 30 mm. This has to do with the very limited space available in the trays of the aircraft trolleys.

Traditionally Petit Fours are small, colourfully finished pastries that mainly consist of layers of cake, interspersed with butter cream or Bavarian cream. Nowadays the concept of Petit Fours has been broadened. These tasty little gateaux enjoy an increasing popularity and make a welcome treat at receptions, business lunches and meetings. Petit Fours are easy to eat. They remain exciting treats as they appear in so many different varieties. At home, too, these mini-cakes are more and more taking over from the larger types of pastry. Surely, your assortment cannot do without these delicacies.
