Preheat oven 170ºC/160ºC fan forced. 2. With an electric mixer, cream butter and icing sugar until very pale and fluffy. Add vanilla and beat briefly. Stir in plain flour, corn flour and salt. Drop teaspoons of mixture into chopped nuts and roll briefly before placing on a baking tray lined with parchment. Leave a 2 cm space between them and bake for about 10 - 15 minutes or until a pale golden. 3. Cool on a wire rack. When cool, lightly dust with extra icing sugar. Handle gently when storing as they are very short and crumble easily. Ingredients Serves makes approx 40 250g soft unsalted butter 1/3 cup icing sugar 1 teaspoon vanilla essence 1! cups plain flour ! cup corn flour " teaspoons salt ! cup salted, roasted pistachios, chopped
