For many years they have produced Reading, a Raclette-style cheese, and the robust Tarentaise, which is inspired by Abondance. But have you met Springbrook’s new kid on the block?

Ashbrook is inspired by classic French Morbier. The grass fed, raw cow’s milk beautifully expresses seasonality and terroir, and the signature vein of vegetable ash running through the center of the cheese offers a striking profile. The wheels are washed with brine and aged for 2-3 months, developing the rich paste, aromas of toasted peanuts, and a long lasting buttery/grassy finish.
