Dear Friend,

I want to give credit where credit is due. So, perhaps a confession

can help clear the air so there’s no misunderstanding. Before I talk about my confession, though, let me say a few other things � rst.

Let me start by explaining the photo in this letter. You know, when I meet people in town they usually say, “Oh, yeah, I know you, you’re Dr. Rick. I’ve seen your ad with that picture of you and your family.” Well, I’m the guy on the right.

Twenty years ago something happened to me that changed my life forever. I was a junior in high school and I started getting migraines. I had su� ered from intense headaches since childhood. Over the years, I consulted many medical doctors, and specialists. I went through all kinds of tests, MRIs, and treatments. I tried every drug in the market; our medicine cabinet looked like a hospital’s in� rmary. And still, nothing helped. But there’s more…

A friend of mine convinced me to give a chiropractor a try. � e chiropractor examined me, took X-rays, and then “adjusted” my spine. � e adjustment did not hurt; it actually felt good. And guess what…I started feeling so much better! From daily migraines, I went down to three a week, and then to once in a great while. � at’s when I realized that I wanted to become a chiropractor and help others. � at’s how it happened!

It’s strange how life is, because now people come to see me with their migraines. � ey also come to me with their chronic pain, neck pain, shoulder/arm pain, whiplash from car accidents, backaches, ear infections, asthma, allergies, numbness in limbs, athletic injuries, carpal tunnel syndrome, just to name a few.

R esidents recently dusted off their “gently used” and new hand-bags and gave them to the City of Miramar for its annual fundraising effort. The City sold the merchandise at two public sales events and donated the

proceeds to the Leukemia and Lymphoma Society.This is the second year that the City of Miramar has consolidated its fundraising

efforts into one charity. Last year the City raised funds for the United Way. This year, five charities requested help and the City randomly selected the Leukemia and Lymphoma Society. Next year, it will focus its efforts on a different charity. “There are so many organizations that need volunteers to donate their time and money,” said

Paul Bennett, senior human resources analyst. “I am happy to be part of an effort that raises money to help find a cure for leukemia and lymphoma.”

The City collected more than 330 bags, which ranged from generic to designer labels like Louis Vuitton, Gucci, Coach and Chanel. City employees volunteered their time for the sale, along with volunteers from the Leukemia and Lymphoma Society. They cleaned and stuffed the handbags with paper and then added a price sticker that ranged from $2 to $25. On May 18, Mayor Lori C. Moseley presented a check for $1,000 to the Leukemia and Lymphoma Society at the City Commission meeting.

A s thousands packed the streets of London to celebrate the wedding of Britain’s Prince William and Kate Middleton on April

29, millions around the world celebrated the event with royal-themed parties. A group of Pembroke Pines residents joined in the fun at the Pembroke Pines Community Center. Tickets for the Royal Tea sold out quickly.

Dressed in their finest hats and gloves, the women sat at tables set with flowers, laced cloths and fine china. As the Royal Wedding played on a large television, royal servers wearing tiaras served steaming pots of tea, pastries and delicious tea sandwiches. Teachers Christian and Nancy Schneider took the day off to celebrate and treated the group to a very special moment. Christian wore his Black Watch tartan with a primitive style Kilt, and his wife Nancy wore white lace. As the couple stood in front of a photo of the Royal couple kissing, they gave each other their own “royal kiss” while guests sang God Save the Queen. Four lucky guests at each table received an antique lace hankie or chocolate covered teaspoon. Everyone had a chance to win one of two donated tea baskets. 

The Royal Tea is just one of the many trips and special events offered on a regular basis at the Pembroke Pines Community Center. There are quarterly breakfasts, self improvement classes, educational classes, health classes and support programs presented by area professionals and more. The Center offers adults 18 and older an opportunity to meet new people, build a support network, find information, read a book or shoot some pool. The 2011 Hispanic Women of Distinction have been named and the list includes three residents of Pembroke Pines – Tatiana Eyzaguirre, Doris R. Muscarella and Diana C. Ortiz. They will join nine other women from Broward,

Dade and Palm Beach County who will be honored at the 10th annual charity luncheon at Signature Grand in Davie. A sell-out crowd of more than 1,000 guests is expected to attend the event held on August 12, during Hispanic Heritage month. Proceeds from the luncheon will benefit the Light of the World Clinic, a free healthcare facility for the poor founded by the late Dr. Erwin M. Vasquez. The prestigious award recognizes Hispanic woman who have made a significant contribution to the community while maintaining their culture and traditions. They have paved the way for other Latinas to achieve their goals. The 2011 Honorees were selected from more than 90 applicants who were nominated by former Hispanic Women of Distinction honorees and com-munity leaders.

Peruvian Tatiana Eyzaguirre is Vice President of Regions Bank in Weston and has more than 20 years of experience in the financial industry. She is Treasurer and on the Board of Directors of the Latin Chamber of Commerce of Broward County and on the Board of Directors of the Americas Community Center. She is also a mentor for the Hispanic Youth program in Broward County, providing guidance and support to less fortunate trouble teenagers, as well as for the Youth Co-AP program, helping professional immigrants to find their way in the business world.

Puerto Rican Doris R. Muscarella is president and founder of the Women of the Roundtable, an exclusive networking group. She has over 30 years of experience as a legal assistant/paralegal in the areas of insurance defense, personal injury, and medical malpractice. She is actively involved in the community raising funds for charitable causes

including Gilda’s Club, American Heart Association, Juvenile Diabetes Association, Multiple Sclerosis Association and more. She was also nominated as one of the 100 Outstanding Women of Broward County 2010.

Venezuelan Diana C. Ortiz is an accountant for Lakeview Health Systems, LLC. She has brought happiness to abandoned children during Christmas through the His House Fun Day event. She found people to volunteer at His House Children’s Home in 2010 when 200 Haitian children arrived from an orphanage after the earthquake. She is a member of the Prestige Club; encouraged the Prestige Club and Hope Church to work together in adopting a street in Cooper City and mentors teenage girls.

In this month’s article, I have decided to write about a cause that I feel personally very strong about. You may have seen the newspaper article regarding the Pantry

of Broward, the agency that provides food for those in need, specifically among the senior population. Last year I was invited to a fundraiser for the Pantry that helped raise money for its food program with a huge production of “Dancing with the Stars.”

The Pantry of Broward provides food for the elderly in need. You can imagine how concerned I was when I received an email

this year from the Pantry saying that the shelves were bare. All the effects of a bad economy have placed a heavy burden on this food program upon which many needy seniors depend. These are seniors who have to decide every day whether to take their medication or purchase food to survive. No one should have to make those kinds of decisions, least of all those who are supposed to be in their golden years.

I understand that the economy has been tough on all of us. However, what makes the City of Pembroke Pines an All American City is our enthusiasm to help those whose needs are greater than our own. I have issued a challenge to all of the elected officials in Broward County to match the volume of non-perishable food that we collect. I am encouraged by the children in our charter schools whose enthusiastic response is truly valuable to this food drive challenge.

Here’s how it works, we will have food pantry boxes all over the City coordinating the pick up of food from you. Simply drop off canned goods; and non-perishable food items and we will make sure that the shelves are no longer empty. Donations can also include supermarket gift cards. Please be as generous as you can.

When the economy began to negatively impact governments, many felt that there was only one way to go: cut back and scale down services. Miramar decided to take a different and novel approach. Instead of reacting to the economy, we decided to be pro-active and address the issues head on. We knew we couldn’t change the economy, but we could change how we reacted to it. We decided that it would not define us as a city. It is our belief that the best of intentions does not matter unless it is followed by action. Quantum International Corp. Celebrates One Year Anniversary

The Fort Lauderdale Chapter of ASIS International (formerly known as the American Society for Industrial Security) held its annual Law Enforcement Appreciation Banquet

on May 7 and Pembroke Pines came out on top. Thirty-four Broward County police officers were nominated for Community Oriented Policing Officer, Officer of the Year or the Valor Award and a member of the City of Pembroke Pines Police Department was the winner in each category. This is the first time in the his-tory of the ASIS Awards (established in 1977) that one agency has won in all three categories.

“We are extremely honored to have our officers be recognized by the ASIS,” said Pembroke Pines Police Chief Dan Giustino at the awards ceremony. “These awards are humbling. We all know that every officer in this room has worked very hard and is dedicated to public safety. We thank you for this recognition.”

Sergeant James Henry, PPPD Community Affairs Unit was named ASIS Broward County Community Oriented Policing Officer of the Year as a result of his many new initia-tives which served to improve upon public engagement with the PPPD. Some of these include coordinating the Community Emergency Response Team, the Citizens Police Academy, and the ongoing outreach to the community through various other programs,

as well as his contributions as the Team Leader of the Crisis Response Team.Officer Scott Kushi, PPPD Crime Suppression Team, was named ASIS Broward

County Officer of the Year for his commitment to proactive law enforcement activities. Officer Kushi also received this award in 2008. Officer Kushi made 568 arrests in 2010 and wrote over 1,000 traffic citations. He chased down an armed robber with an AK-47, first by car into Miami-Dade County and then on foot through backyards and over fences, ultimately arresting the individual, identifying his accomplice, and recovering the assault rifle. 

Officer Michael Silver, PPPD Road Patrol, won the ASIS Valor Award. Officer Silver was placed in a life and death situation when he responded to a residence and encountered a domestic disturbance regarding a male armed with a pistol. While Officer Silver and the couple were inside the residence and Officer Silver was attempting to disarm the male, the male shot and killed his girlfriend and turned the firearm on Officer Silver, forcing Officer Silver to take the man’s life. Officer Silver acted with great valor, courage, and skill in resolving this tragedy.

Dog bite cases really hit home, especially when a cherished pet dog bites a child. According to the Centers for Disease and Control, 4.5 million Americans are bitten

by dogs each year. And, of that, one in five dog bites results in injuries that require medical attention. Unfortunately, children ages 5 to 9 years rate highest for dog bite related injuries.

As a personal injury attorney, I have had my share of unfortunate dog bite cases. In almost every case, it was the first time that the dog bit a person. In almost every single case, the dog owner was

surprised that the dog bit a human being because it had no aggressive history and had never bitten anyone else in the past.

This topic is especially personal to me because I am a father who is very protective of my children. Most parents don’t know the dangers associated with dogs. Unfortunately, I see it all the time. Many times, when families are walking in the neighborhood or at a park, parents permit their kids to walk up to dogs and pet them. I don’t allow that because I know first hand what a first bite can do. I have witnessed injuries that still resonate in my mind.

I am asking that all Moms and Dads in South Florida be extremely cautious with your children around dogs. Even if the dog’s owner tells you that his/her dog is great with kids and has never bitten anyone before, do not let your children pet dogs that they do not know.

The Centers for Disease and Control has offered safety tips specifically geared towards parents and children to prevent them from being bitten by dogs. Please share them with your kids. They are as follows:

▸ Do not approach an unfamiliar dog. ▸ Do not run from a dog or scream. ▸ Remain motionless when approached by an unfamiliar dog. ▸ If knocked over by a dog, roll into a ball and lie still. ▸ Do not play with a dog unless supervised by an adult. ▸ Immediately report stray dogs or dogs displaying unusual behavior. ▸ Avoid direct eye contact with a dog. ▸ Do not disturb a dog that is sleeping, eating, or caring for puppies. ▸ Do not pet a dog without allowing it to see and sniff you first. ▸ If bitten, immediately report the bite to the police and/or animal control .

Chapel Trail Elementary is always looking for ways to enrich the lives of its students. In May,

teachers and students spent several weeks working on an event to support the arts that included an Author’s Visit, Literary Fair and Multicultural Show.

The event kicked off with a visit from John Becker, author of non-fiction books like Wild Cats Past & Present, Frenemies for Life and Mugambi’s Journey. Becker conducted several assemblies so that all of the school’s students could participate. He showed a video of his adventures during an African safari and taught the students about different kinds of wildlife. He explained how some Anatolian Shepherd Dogs are helping to save cheetahs in the wild - the premise for Frenemies for Life. He also talked about his unusual career path and reminded the students that anyone can become an author. “Reading opens so many doors for the students and allows their imaginations to run wild,” said Liz Grafe, media specialist who coordinated the event.

Becker returned later that night for the Literary Fair so parents and students could purchase autographed copies of his books. They also had an opportunity to see the literature projects on display in the media center. Kindergarteners read Flat Stanley by Jeff Brown and kept journals about the travels of their own Flat Sanleys. First grade students read Princess Hyacinth (The Surprising Tale of a Girl Who Floated) by Florence

Parry Heide and made kites with the Princess on them. In second grade, students researched animal habitats and created dioramas. Third graders read Charlotte’s Web by E. B. White and built barns with the animals and characters. Fourth graders made 3D models of books they read; developed story circles and wrote about famous African Americans. In fifth grade, students linked subjects like math and science to literature with a variety of projects.

The event continued a few days later when hundreds of families visited the school to watch 450 students display their talents in the Multicultural show. They wore cos-tumes and presented songs and dances from countries throughout the world, including China, Mexico, Egypt, Italy, Colombia, India, Cuba and many others. “During the performance, the kids had an opportunity to embrace cultural differences,” said Grafe.

A s terrible as it may seem to lose your home through a foreclosure, most people believe that after the foreclosure, their biggest financial headache is behind them. However, former homeowners may still be on the hook if

there’s a difference between what they owed on the mortgage and what the bank sold the house at the foreclosure auction. This is called a “deficiency judgment.” Deficiency judgments are ticking time bombs that can explode years after borrowers lose their homes.

A lender also has the right to seek a deficiency judgment against homeowners who convinced their bank to approve a short sale and even in cases where the bank takes back the property through a deed in lieu of foreclosure. Releasing title to the bank does not always wipe out the debt. A mortgage has two parts: a pledge of collateral (represented by the home), and a promise to pay the loan under the promissory note. Lenders may release property liens to facilitate short sales without releasing borrowers from their obligations to pay.

Lenders or collec-tion agencies may wait until debtors have recov-ered financially before seeking a deficiency judgment. In Florida, the bank can wait up to 5 years to seek a deficiency judgment. Once the court grants a deficiency judgment, the lender has 20 years to collect it! Moreover, the lender can request

your financial records, garnish your wages, repossess your vehicles, and even freeze your bank accounts.

In order to short-circuit lenders’ attempts to seek a deficiency judgment in the future, it is imperative that after the home is sold at foreclosure auction, the former homeowner immediately file for bankruptcy protection. Since the deficiency judg-ment would be considered an unsecured debt, it will be forever discharged through the bankruptcy proceeding and the bank could never collect it. In “short sale” or deed in lieu scenarios, most lenders are willing to release the deficiency judgment amount. However, many borrowers may not be aware that they have to ask for such a release. If you are pursuing a short sale or a deed in lieu of foreclosure, be sure to ask the bank to release you from any further obligation or deficiency under the mortgage. If the bank refuses, bankruptcy proceedings can also avoid any liability after a short sale or return of your property to the bank through a deed in lieu.

P embroke Pines FSU Charter Elementary School student Davontae Reid was arrested, finger printed, photographed, and taken to jail. A few minutes later he

was released. It was all part of a Kids and the Power of Work (KAPOW) field trip to the Pembroke Pines Police Department.

The KAPOW program has been educating the children of Pembroke Pines with real life, hands-on experiences since 2001. The program introduces students to career awareness through seven one-hour professionally developed lessons taught by business volunteers in the classroom and culminates with a visit to the workplace. Volunteers reinforce the relevance of subjects like reading and math by explaining how they play a role in their jobs every day. “When students hear about the importance of school from someone special, it takes on a whole new meaning,” said John Casbarro, President of Learning for Success, Inc. who coordinates the KAPOW program in South Florida. “It gives them a better understanding of why they need to learn and motivates them to want to work harder.”

Throughout the school year, volunteers from the City of Pembroke Pines’ Police, Fire, Public Services, Administrative Services, and Parks and Recreation Departments have been meeting with 2nd and 5th graders from the Pembroke Pines FSU Charter School to teach them about the importance of community involvement, leadership, communication and teamwork. They learned a variety of skills that will

help them become successful in the workplace, as well as in life in general.

Last month, the students had an opportunity to visit several City departments for some on-the-job training. They met the people who work there, learned about their jobs, and gained a better understanding of what they need to learn in school to do those jobs. `They toured the Pembroke Pines Police Department, where they met law enforcement officers and staff; learned about S.W.A.T. trucks, gear and equipment and discussed gun safety. They went to the Public and Environmental Services Center, where they saw how waste water is treated and learned about the equipment, chemicals and engineering necessary to operate the plant, as well as how utility bills are sent. Students also visited the Fire Department, where they learned training methods and practiced using equipment, as well as the Pines Recreation Center, where they learned how to teach tennis. “The students got exposure to the inner work-ings of the City,” said Casbarro. “Each City service represents hundreds of different jobs and careers that these students never knew existed. They are now career possibilities for these young people as they progress toward graduation.”

Students in the Pembroke Pines Charter School System believe that two of their teachers stand out from the rest. Science teacher Kimberly Scarola at the PPCMS Central Campus and fourth grade gifted/high achiever

teacher Keren Surowitz at the PPCES West Campus were named local winners in the Barnes and Noble “My Favorite Teacher Contest.” Both teachers received ten Sterling children’s books, as well as some planning materials. Scarola was also selected as a regional winner and received a NOOK and $500 gift card compliments of Barnes and Noble.

Students nominated their favorite teacher by writing essays, poems or thank you letters that express how their teacher has influenced their life or why they appreciate and admire their teacher. Entries were judged on the compelling nature of the teacher’s qualities, the sincerity of the student’s appreciation and the quality of expression and writing. The teachers were recognized at Barnes and Noble stores on April 15th.

Scarola was honored that she won at both the store and regional level. “The bookstore gift cer-tificate and Nook will come in very handy with my continuing university studies,” said Scarola. Sixth grade student Shreeya Singh was excited that her essay was selected. “I wrote an essay about Mrs. Scarola explaining why she is my favorite teacher and she won!” Scarola’s efforts have been recog-

nized many times in the past. In 2005, she received the Outstanding Graduate Student of the Year award from FAU’s College of Education and the Outstanding Graduate Student of the Year award from the FAU COE Teacher Education Department. The next year, she received the 2006 FAU Outstanding Secondary Reading Teacher Award. During the 2007-2008 school year, she was named Teacher of the Year for the Central Middle School.

Why do some cases seem to settle so effortlessly and others seem to be a constant battle? There are a number of reasons why this seems to occur. The most

common reason is that either one or both of the parties have entered the negotiations with unrealistic expectations. They think that they are entitled to more than the law will provide. This is especially dif-ficult for someone to accept when they feel they have been wronged by the other party and there should be some punishment handed

down to compensate him or her. This however is a no fault state and as such, for the most part, someone’s wrongdoing or perceived wrongdoing is never taken into consideration.

Why do people have unrealistic expectations? It could be based upon a number of different factors. The most common reason is that some people are thinking emotion-ally. It becomes difficult to grasp certain legal concepts when someone is either very mad or very angry. The law as it is explained to them doesn’t seem fair and so they want to continue the battle. Sometimes they are correct, the law is not always fair. It is however the law and you can for the most part be assured that a judge will in fact follow the law in ruling in your case.

Sometimes a person can be influenced by either friends or family members who don’t understand the law but attempts to advise a person nonetheless. I am often amazed how some individuals will give more credibility to advice given by a neighbor down the street than an attorney they are paying money to for his/her advice. Sometimes, unfortunately, people want to hear only what they want to hear.

Individuals who are contemplating a divorce often research the internet and sud-denly become “experts.” There are many on line sites that are educational and can assist in understanding the process. There are however many sites that have incorrect information and can distort a persons expectations. It is also important to remember that each state has different laws and therefore if you are researching laws in North Carolina it may not have anything to do with what you can anticipate in Florida.

The most important thing to remember is that negotiations to reach a successful settlement require some “give and take.” Nobody will settle for “their worst day in court.” That certainly how attorneys weigh the value of a settlement offer. If the offer is worse than what you might expect form a judge, then there is really no reason to settle. If however, both parties understand that a settlement means giving up something to receive something, and they can put aside their emotions, a settlement should be able to be reached. It is important to remember, just like it takes two to tango, it takes two reasonable people to settle a case.

A re nonresident aliens (NRA) able to open their own business in the U.S.? Absolutely; there are different ways to register businesses and one of them is known as a

Limited Liability Company (similar a Sociedad de Responsabilidad Limitada). Upon registration of a new Limited Liability Company (LLC) and being named as a member of the company, foreigners are allowed by the IRS to register the business and the LLC is assigned an employer identification number. You obtain an employer identi-

fication number by completing the form SS-4 (Application for employer identification number). The form requires you to disclose the number of LLC members, business address, type of entity, reason for applying, date business started, and principal activ-ity of your business. Depending on the number of members, the IRS may follow the default filing requirements for annual tax returns unless a classification election is filed in a timely manner.

If there is only one LLC member, the nonresident alien (NRA) will be allowed to request an individual taxpayer identification number (Itin). The Itin will be used to report the business activity in the United States with a Nonresident Income Tax Return (form 1040NR) or U.S. Individual Income Tax Return (form 1040).

If there are more than two LLC members, each NRA will be allowed to request their own Itin. The Itin will be disclosed in the company tax return form 1065. The Itin will be used to report their participation in business activities based on the member’s percentage of ownership in the LLC. As with a single LLC member, in a multiple-member LLC each member is required to file an individual tax return based on the share of tax liability as reported in the K-1 schedule of the company tax return.

The Itin is acquired by filing the application for IRS Individual Taxpayer Identification number (form W-7) along with basic information such as the reason you are submitting the form, current name and name at birth (if different), applicant’s mailing address, foreign address, birth information, and other information related to citizenship, U.S. visa number and expiration, and passport number and expiration. In addition to the application, you must submit supporting documents to establish foreign status and Identity. The instructions on the W-7 form allow you to submit a notarized or certified copy of a valid passport, in which case no further documentation needs to be sent as this provides foreign status and Identity.

In the case of a single LLC member, it is advisable that the NRA filing form 1040NR also files estimated tax payments on a quarterly-basis by mailing form 1040-ES (NR) along with the Itin to the Internal Revenue Service, P.O. Box 1300, Charlotte, NC, 28201-1300. In the case of two or more NRA members, the LLC is in effect the with-holding agent in charge of backing up withholdings for each member and required to send this information to the IRS by the given due date.

As long as the NRAs comply with IRS codes and regulations they are free to do business in the United States regardless of their status.

Tucked away in an office and retail shopping center in Davie, away from the hustle and bustle of everyday life, sits a new eatery that promises to give diners a taste of French and international cuisines at its finest. On The Menu, a

Gourmet European Cafe and Bistro, offers something never before seen in Davie. “We

are a bistro, cafe, pastry shop and coffeehouse,” said Pascal Sanchez-Santini, who co-owns On The Menu Café & Bistro with his wife Victoria Williamson.

The idea for the concept behind On The Menu is due in large part to Pascal Sanchez-Santini, who was born and raised in Paris, France and is of Italian and Spanish descent. It was his idea to combine a café with a bistro along with a pastry shop. He and Victoria saw a real lack of French restaurants in Broward, they can point to just a few. They decided that Davie and the surrounding cities, with its melting pot of cultures, was ready for a taste of quality French and international food at affordable prices.

Located at 4801 S. University Drive in the Atrium Center, On The Menu offers breakfast, lunch and dinner, along with mouth-watering breads, pastries and coffees.

“We have great food, quick friendly service, and an impeccably clean kitchen under the guidance of Master Chef Giuseppe,” said Williamson, who many food lovers will remember from Churchill’s, the upscale fine dining restaurant she built and ran in Cooper City for many years.

Newcomers to On The Menu may first be happily distracted by the rows of tempting authentic French pastries delivered fresh daily from Croissan’Time that beckons when they first walk in the door. There is an array of fruit tarts, Napoleons, éclairs, gorgeous cakes, mousse cakes, cookies, petit fours, baked tarts and special occa-sion cakes. Many guests settle down into the white sofas near the entrance to relax and enjoy their treat while relaxing or meeting clients.

On the Menu has free Wi-Fi, an array

of hot and cold drinks including espresso, macchiato, cappuccino, cafe latte, cafe frappe, breakfast tea, herbal and green teas, sodas and more. The casual space is done in a modern style, with vibrant hues and colorful prints on the walls. Soft French music plays in the background to complete the setting.

But for those looking for a meal, On The Menu is a true gem. They offer mostly natural foods with a focus on being as organic as possible, all made from scratch in their 75-seat eatery. The menu is French bistro, with a nod to Mediterranean cuisine. The kitchen is under the command of Italian-born chef Giuseppe DeRobertis, a Master Chef who studied French cuisine in France and then was a chef in Montreal in French restaurants for years.

On the Menu Café & Bistro opens at 8 a.m. every day except Sunday (they are hop-ing to open soon on Sunday), and diners can find themselves sitting down to specialties such as French toast made with croissants, Liege sugar waffles, egg dishes, baked goods, crepes or a croque madame sandwich, a blend of ham, Swiss, béchamel sauce and a sunny side-up egg. Freshly squeezed orange juice, coffees and teas complete the meal.

For lunch they offer a tantalizing menu of panini’s, sandwiches, burgers, salads and soups, including authentic French Onion soup that is available every day. There is also a full array of salads, which are made entirely from scratch. “The food is made when the customer orders it. Nothing is pre-made,” said Williamson.

Their dinners are a true experience into international cuisines. Guests can start with an appetizer of Mozzarella Caprese, or Coquille St. Jacques Gratin, which features scallops and shrimp baked in a béchamel sauce, with bake mashed potatoes covered with cheese. For a traditional taste of French cuisine, try the escargot, duck confit or beef bourguignon served with tagliatelle or rack of lamb. There are also poultry, pork, and seafood dishes to choose from, as well as domestic and imported wines and beer.

Both Victoria and Pascal invite South Floridians to come check out On The Menu and enjoy the ambiance of their European Cafe & Bistro. It is a great place to meet friends for any meal of the day, or for an afternoon treat of a scrumptious pastry with a specialty coffee. Miramar’s American Top Team Offers Programs for the Whole Family

M iramar’s American Top Team (ATT) offers programs for kids, men and women of all ages that want to get in shape and learn how to defend themselves. With over 1,000 members, it is one of the largest and most active Mixed Martial

Arts (MMA) teams in the world. More than 50 of its members compete professionally in MMA, Boxing, Brazilian Jiu Jitsu, Submission Grappling, Wrestling, and Muay Thai events all over the world.

Owner David Moyal began training in Jiu Jitsu four years ago. He loved it so much that he decided to turn his passion into a business. He partnered with Head Instructor and Pro Fighter Wilson Gouveia and opened an ATT training facility in Pembroke Pines. “The level of training our students receive is unlike anywhere in the country,” said Moyal. “There are few places where students have an opportunity to train with someone as well known as Wilson Gouveia.” Word spread quickly and it was not long before they needed more space, so they moved to their current location at 12180 Miramar Parkway, in the Miramar Square Shopping Center. The 8,000 sq. ft. facility has brand new mats, heavy bags and equipment, as well as a cage and boxing ring. All of the students are instructed by a team of Olympic and World Champion Athletes who still actively compete.

ATT Miramar offers a variety of martial arts programs designed to help children build confidence, boost self-esteem, as well as increase fitness levels and overall happiness. Gouveia enrolled in martial arts when he was 7-years-old and has tried almost every style of the sport.

“Martial Arts have played such a big role in my life by helping me achieve my goals and keeping my life on the right track,” said Gouveia. “Martial Arts make and keep kids strong physically and mentally. All of our programs have been proven to positively influence attitude and behavior. We help teach students how to make healthy and positive choices for themselves by setting goals, providing role models, and implementing systems of discipline and authority.” Gouveia says that parents are often shocked when they see how quickly their children learn to bow on the mat, address adults and give a firm handshake. They also learn to listen, treat others with respect, and deal with bullies they might encounter in school. “We teach them that fighting is not answer and that what they learn in class should only be used as a last resort to solving problems,” continued Gouveia.

Brazilian Jiu Jitsu/ No-Gi Jiu Jitsu is one of ATT Miramar’s core training programs. Brazilian Jiu-Jitsu is a martial art, combat sport and a form of self-defense that focuses on grappling and especially ground fighting. It is taught using the Gi/Kimono. Miramar BJJ students train live with Gouveia, who is a Brazilian Jiu Jitsu Black Belt. ATT Miramar also offers Muay Thai/ Striking classes, which teach techniques such as kicks, knees, elbows, punches, and clinch work. These classes incorporate elements of boxing, kickboxing and Muay Thai to train the student in mental as well as physical conditioning. Many of the top Muay Thai and Boxing athletes train at ATT Miramar. For those interested in learning a little of everything, Mixed Martial Arts classes utilize a wide variety of disciplines techniques, including striking and grappling. This program blends the key elements of Brazilian Jiu-Jitsu, Wrestling, Muay Thai, Boxing and Physical Conditioning. It teaches students how to defend themselves in any situation.

ATT Miramar also offers after school programs, as well as camps during summer, spring and winter break and early release days. This summer, kids ages 5 to 12 can beat the heat, Mon. to Fri., from 7:30 a.m. to 6 p.m. Every day, campers participate in games and activities, as well as an hour of martial arts. Three days a week, they take field trips to parks, museums, movies and more. During the school year, ATT Miramar picks up students from several elementary schools, including Dolphin Bay, Coconut Palm, Coral Cove and Somerset East. After the staff helps the kids with homework, they participate in a variety of activities, as well as one hour of martial arts.

ATT Miramar also has many students who participate in the ATT FIT program to get in shape. “Many of our students used to belong to traditional gyms or worked out on their own,” said Moyal. “They found it difficult to stay motivated and ultimately fell back into their regular routines. Our classes are diversified and challenging and help them achieve the results they want. It is like they have their own personal trainer.” The classes combine Boxing, Kickboxing, Boot Camp and Weight Training for a total body workout that produces results. They are designed to leave students, from beginner to advanced, feeling stronger, empowered, and motivated.

Prices are for a group of 20 or more and include all of the paper goods, as well as a side item like salad, rice and beans, French fries, potato salad and more. People often ask Emilio what makes his barbeque taste so good. “We start by select-ing fresh, high quality meat and then marinating it with the perfect blend of seasonings, using recipes that have been passed down through the generations,” said Emilio. “We also cook it the old fashioned way using charcoal, which create a distinctive taste that is difficult to achieve with gas. Everything is barbequed at the event, not prepared in advance.” Emilio says that some of the biggest challenges are determining the right moment to put the food on the grill, when to turn it and how long to cook it. “It takes a lot of patience and experience to achieve the perfect barbeque meal,” said Emilio.

Parents often want their children to feel safe, comfortable, and unrestricted with concerns about money, perhaps wanting to correct for a struggle that they once

experienced in their own teenage years. There is a slippery slope, however, for many parents who indiscriminately dole out funds to their teens. Parents expect that their teens will be grateful, respon-sible, and will reciprocate by making good use of what is given to them. The opposite often occurs. Teens often become entitled and may then become resentful and demanding when they are not

immediately gratified. This, in addition to the boredom that results from not having to work for what they want or need, can help set the stage for substance abuse.

In a survey conducted by the National Center on Addiction and Substance Abuse (CASA) at Columbia University, measuring the impact of extra money, boredom, and stress on substance abuse in the teen population, researchers found that teens who receive $25 or more per week in allowance are nearly twice as likely to drink, smoke, and use illegal drugs. The survey also found that teens who are bored are 50 percent more likely to turn to these substances. A teen equates “getting high” with belonging to a group, being “cool” and daring, filling up empty time, socializing, easing painful self-consciousness, and escaping from problems. Alcohol, drugs, and accompanying high-risk behaviors like skipping school and shoplifting often provide immediate, temporary relief from problems for many teens.

The course is predictable. The user is curious and asks for or is offered a free serving of alcohol or drugs. If this results in a pleasurable experience, the user will move to recreational use on weekends, then to daily use. Teens with more money often have more access to a wider variety, higher potency, and larger quantity of substances. Once they have developed an addiction, they will stop at nothing and spare no expense to get what they need. Unfortunately, well meaning parents may be funding their addiction.

As parents come into an awareness of a substance abuse problem, they may ask how it is possible that their teen could have slipped so far into trouble. What would drive anyone to such dangerous and criminal activity when everything, every material thing, has been provided? Research has proven that the teenage brain is not fully developed, particularly the portion of the brain that discriminates between what is an unsafe or safe decision. Teens tend to think that they are immortal and invulnerable, that they are immune from consequences, or that they will be miraculously rescued at the eleventh hour from disaster. The answer is, then, that these troubled teens do not think ahead at all. They are living in the moment and attempting to fill an inner emptiness. Adrenalin flows freely when stealing, sneaking, breaking laws, out-smarting authority, dealing with large amounts of money and getting high.
