for all, not just selected, countries and ethnic groups. Although other cook-

books are available, and recipes can be found on the Internet, no in-print set

or series matches this resource in scope, depth, or authority.

Volumes are organized alphabetically by country name; if separate groups or

regions are covered within the country, the material is under the group/region

name alphabetically. Each country includes a brief introduction and gives an

overview of the type of foodstuffs, cuisine, and style of eating in a simple bul-

leted list. For each country/ethnic group, approximately five recipes are given

for typical dishes and holiday fare. Recipes total approximately 1,500. Each is

introduced and contextualized. Short glossary sidebars are interspersed.

Additional benefits include thumbnail maps and illustrations, an introduction

to the set, an annotated select bibliography citing both print and online

resources, an appendix with a list of recipes by region/country/group, and a
