Potatoes Ann If you’re a fan of eating potatoes, you will enjoy this new way of preparing it. You will be happy preparing this 45-minute dish because you will get to enjoy your favourite dish easily. This recipe for Potatoes Ann was adapted from LaVarenne’s Basic French Cookery by Anne Willan. For this recipe, you will need to prepare medium potatoes, olive oil, butter, salt, and ground pepper. Ingredients 3 to 4 medium potatoes, peeled and sliced 1/8 in. thick 2 tablespoons olive oil 5 to 6 tablespoons butter Salt Freshly ground pepper 1. The oven is preheated to 400 ⁰ F. 2. In a large, ovenproof skillet, heat 2 tablespoons butter and oil. Remove the skillet from heat and tilt so that the entire bottom of the pan is coated with the melted butter and oil. 3. Place potato slices in skillet. Create a spiral effect on the potatoes by overlapping them. Add another layer of potatoes on top of the first layer. You don’t need to do it in a spiral pattern. Make sure to season potatoes with salt and pepper. Blot butter on the potatoes. Continue adding layers of potatoes on the skillet. Make sure to season them and blot butter on every layer, just until the skillet is full.

1. The oven is preheated to 400 ⁰ F.

4. On medium heat, place skillet and let the potatoes cook for 10 to 15 minutes. You can test doneness by slipping a small spatula over potato layers. If they have browned on the bottom, they are already done. If your desired result of this dish is a crisp bottom layer, uncover the potatoes. On the other hand, if you want a soft bottom layer, cover the skillet with aluminum foil.

5. Place skillet in preheated oven. Bake for 25 to 30 minutes, or just until they have turned tender when pierced with the use of a toothpick. Loosen edges of the potatoes from the skillet to serve the dish. Invert skillet over platter, with the overlapping layer on top.
